    Mini-me's Pizza

    This is just the simplest, fastest, cheapest pizza on the planet. This is our standby when we eat something mini-me is not a fan of. She does not eat chicken or turkey. Also some pastas. So occasionally I make these if I know she is not on board with our fancy meals. You've probably all made these at some point in your lives. You can make the a zillion different ways. Mini-me likes her loaded with Parmesan, I like mine with mozzarella. They make a quick lunch on weekends.

    Mini-me's Pizza:

    Ingredients:

    English muffins
    Pizza sauce (you can buy pre-made. I tend to use pasta sauce and add a bit of sugar.)
    Ham, thin sliced
    Parmesan cheese

    Directions:

    Cut English muffins in half. Lay on a cookie sheet cut side up.

    Spoon on pizza sauce.

    Cut up and lay on ham.

    Sprinkle a generous helping of Parmesan cheese.

    Put in a 400 degree oven for about 6- 8 minutes.

    Serve.

    See, I really wasn't kidding when I said how easy, fast and cheap these are. LOL! She loves them. I like mine amped up a bit. Some pepperoni, some moz cheese, maybe green peppers. But they are good simple or loaded up. Enjoy!
