Hi folks. I have something fun for you all today. Isn’t this pretty? You will love this meal. I know we did!

Well I did promise some healthier meals for you and this is a nice start to that I think. I made a Hawaiian inspired meal the other day. If you are a regular reader then you know me and hubs went to Hawaii many moons ago on our honeymoon. I fell in love with Hawaii and did not want to leave. When we had mini-me we named her a beautiful Hawaiian name I fell in love with while there. Hawaii holds a special place in my heart. So when I made the decision to begin my quest to lose some pounds and strive for a healthier lifestyle I finagled a deal with the hubster to make going back there on a family trip my reward at the end of it. I have no clue how I managed to convince him but that document has been signed, sealed and notarized so there’s no going back on it. This gal doesn’t do pinky swears, she hires lawyers. I want that in writing with witnesses. I’ve been married a long time. You learn some stuff.

So today you can find me over at Samantha’s beautiful blog, The Little Ferraro Kitchen. Sam is such a sweetheart and helped me with a past project with Hawaiian cuisine. So when I foisted myself on her to guest post I knew my meal would be Hawaiian themed. Sam also has ties to Hawaii so we are kindred spirits.       The food there is some fresh and full of flavour. I wish I could move there. The atmosphere is just so wonderful there.

    Looks light and delicious!! I love that you added sesame seeds on the rice… it gives a nice nutty flavor too. 🙂 Beautifully done. PS… I believe you have a Westie…. we are on the look out for one very soon to be a part of our family…. hopefully sooner than later. 🙂

      The sesame seeds were totally Sam’s idea when we discussed Hawaiian cuisine months ago. It stuck in my head and took me months to find them. But I finally scored some last week.

      I do have a westie. Don’t do it man! They are cute but omg they are also so incredibly stubborn. She is so hard to train. I’ve never met a dog so vindictive in all my life. If you yell at her she will come and try to bite you. She terrorizes my cats. She barks at everything that moves. She pees on the floor every time someone comes to the door. I swear she’s the devil. Don’t do it man!

    This is beautiful! I love mahi mahi but I’ve never tried it with pineapple. You have me laughing about lawyers with your hubs – I make mine shake hands and say, “I promise.” I need to start getting stuff in writing! Heading over to Ferraro Kitchen to check out the recipe now.

      Thanks. I thought about papaya or mango but pineapple just screams Hawaii to me. You gotta get things in writing, and witnessed. Saves headaches later. Lol.

    Pineapple + mahi mahi is one of my favorite flavor combinations…first discovered in Baja years ago.

    I’ve never had pineapple salsa before, but sounds like it would go really well with mahi mahi. Very pretty plate!

    I love Mahi-Mahi, Dorado, Dolphin..whatever you want to call it. When Mellis and I go to SXM to work or vaca we always get it. They usually cook it over charcoal and brush the fish with butter and garlic.

    This is great but I am waiting for a Poutine post!

    Wow, the photos of this recipe look delicious! I’m HUGE on fish…I don’t have many reservations about fish whatsoever and mahi mahi is always so good! I love fish and fruit together so the pineapple salsa sounds amazing as well!
