    Mixed Berry Parfait

    I'd like to welcome you to the start of Whipping Cream Week. I'm participating in a contest involving real cream which got me to thinking. I buy a big thing of real cream, aka heavy cream, aka whipping cream, at the store and it costs a good pile of dough. Then I use a little bit of it and then forget I have it. I use it up like mad in summer when I am constantly making ice cream. Yet winter months I tend to buy it and forget it is in the fridge. So I decided if I do this, there must be lots of other people who do this as well. Then it occurred to me that giving you some recipes to use up your whipping cream would be a good thing. 

    I love a good thing.

    Good things make me happy. It makes me happy to help folks out. That's me, I'm a giver. Except when it comes to Turtles. Then you need to get your own!

    So this week is devoted to whipping cream. You will see posts involving it today, Thursday, Friday and if all goes well Saturday too. You're welcome.

    And just for the record if anyone gets the notion to pull a Varsity Blues please exit to the rear of the building. There are children here people. Seriously!

    Mixed Berry Parfaits

    Great recipe for parfaits with mousse and mixed berry whipping cream.
    Prep Time 15 minutes
    Total Time 15 minutes
    Servings 2 huge parfaits or 4 small

    Ingredients

    For the Mixed Berry Whipped Cream:

    • 1 cup heavy cream
    • ½ cup mixed frozen berries OR 1 tablespoon Summer Berry Fruit Dip Mix

    For the Mousse Portion:

    • 1 cup heavy cream
    • 1 package of chocolate mousse you could make your own, I cheated
    • 1 ½ to 2 cups Frozen Mixed Berries thawed and divided

    Instructions

    For the Mixed Berry Whipped Cream:

    • In a stand mixer, or hand mixer, whisk the heavy cream on low till it stops splashing around, takes about a minute or so.
    • Then turn it up to high gradually and let it whip until fluffy.
    • Set aside a little bit of plain whipping cream for garnish if desired.
    • Add either berries or fruit dip mix. Fold in by hand or whip in mixer on low until just incorporated.
    • Transfer to a piping bag. You can also spoon in it but it will be messier.

    For the Mousse Portion:

    • Add the heavy cream and mousse mix together. Whip until light and fluffy.
    • Transfer to a piping bag.

    Putting it together:

    • Pipe in half the mousse into each glass.
    • Add ½ of the berries.
    • Add ½ the mixed berry whipping cream.
    • Pipe in remaining mousse.
    • Add another â…“ of the berries.
    • Pipe in the remaining mixed berry whipping cream.
    • Top with plain whipping cream if desired.
    • Top with the rest of the fruit.
    • Pop them in the fridge for at least 4 hours.
    • Serve with a big old berry smile!

    Notes

    I bought a jar of Victorian Epicure Summer Berry Fruit Dip Mix at a Farmers Market and just love the stuff. I've also done these parfaits with mixed berries from the freezer. Either works beautifully.

    These take about 15 minutes to make tops but you would think they took all day long. They are that good. I love adding unusual things to perk up whipped cream. Hope this inspires you to do the same.

      Those look great! And for the record I love heavy cream. It is dangerous in my fridge. Just a splash makes the ordinary cereal breakfast bowl heavenly. And then I have it for pasta, desserts, and a very quick hot fudge, raid the refigerator ,sauce. (Just stir chocolate chips into warm heavy cream.) Honestly, I try not to buy it because I like it too much!

      Wow, those look delicious. I'm guilty of throwing out cartons of whipping cream that have gotten themselves shoved to the back of the fridge. I try to plan creamy soups or the like, but I definitely like your idea of something sweet and creamy instead.

      Thanks for being a giver Kim! Cause I definitely have a forgotten, just about to expire but still good for a few more days container of heavy cream in my refrigerator right now. I do this constantly and waste so much cream so I can't wait to see all the recipes you'll give us this week. I'm already loving these parfaits! Now I'm headed over to check out that black forest parfait because I loooove anything chocolate and cherries. Mmm!

      Parfaits were such a popular dessert when I was a kid, but they've really fallen off in popularity. Too bad, because as you show they can be wonderful. Great way to showcase berries.       I have been a great lover of cream ever since small living on the farm though my mother says it made me cranky when I ate too much. Well, I can assure her it makes me happy now. Fortunately cream does not seem to be an issue in my digestive life, which is just as well. Love the berries too.

      I am with you-- I have some whipping cream in the fridge now and haven't used even half of it. What's wrong with me?? Thanks for the reminder to find other ways to use it up. I'll pretend there aren't any calories in it and I am doing my best not to waste food!
