I'm admit it to anyone, while I'm not a big fan of Valentine's Day I sure do love the desserts that go along with the holiday. I adore making cute little desserts and jump at any excuse to make them. Case in point, these delectable no bake passionfruit and chocolate cheesecakes. I may have made that annoying noise we all love to hate when I saw how cute these turned out to be, you know the noise I mean, "squee"! I know, it's annoying, but I really could not help myself.
I was chatting with Lisa from Produce Made Simple about what kind of recipe they would like me to make. They feature recipes using all the best fruit known to man. It's such a great source for recipes, some super healthy, others slightly indulgent. I've contributed to their website before. You may remember I made a Cantaloupe Breakfast Bowl last summer for them. It was a delightful recipes perfect for busy families who still love a great breakfast in the morning.
We chatted about passionfruit possibilities, there are so many great recipes you can make with it. The possibilities are endless. I knew the combination of chocolate and passionfruit was something that would work well for Valentine's Day, and beyond. The subtle exotic flavour of the passionfruit mixes so well with chocolate. It really pairs beautifully together. Since their website likes to focus on easy recipes using produce I opted for no bake cheesecakes.

This is a recipe anyone can make. I'm a busy mom so my speciality really is easy recipes. I have two kids and when they were in grade school and high school I ran ragged getting them to sports and activities. We live in a small town that is located in the middle of farm country. They call our town the hub of the county, and it really is. While I love small town life it meant my kids had to go to school in another town for French Immersion classes.
Needless to say I've put a ton of miles on my SUV, driving here, there, and everywhere over the years. Between sports, and spending time at the barn, I had little time to cook step heavy recipes. So I've always gravitated towards easy recipes. It's the best of both worlds. You get a home cooked meal as quickly as possible. Over the years I've learned you can have your cake and eat it too. Just make easy cake.
If you love cheesecakes as much as I do I highly recommend making this recipe. You will love it. You can adjust the ingredients to your own taste. Cutting back on the confectioners' sugar will make it less sweet but not as thick. It will not ruin the recipe to decrease that if you like. It's a recipe that can be adapted and modified quite easily. If you have any questions when making it just shoot me an email.
I hope you love these as much as we do. The thing I love about tiny desserts is you can trick yourself into thinking you're eating less. Even when you eat more than your fair share. Not that I've ever done that or anything. I mean, I would never eat more than my fair share. Okay, I'm totally lying. I eat more than my fair share far too often. It's okay though. I'm a big believer in living life and enjoying every single bite of it.

It has it's good points, and bad points for sure. I tend to have days where I find it easier to shop in the city so I don't have to run into too many people I know. Ha. But on the plus side it's very comforting knowing the people around you.
