Peppermint Marshmallows are easy to make for the holidays. This marshmallow recipe tastes like peppermint candy canes.
Welcome to day 2 of Christmas Week. So excited to show you today's treat. I made marshmallows, seriously, homemade marshmallows. They are super easy to make and fun to eat. You can do so many varieties of marshmallows. I made peppermint ones for Christmas. Not only are they adorable but the taste fabulous. They also make wonderful gifts.
I love making homemade gifts. I make everything from fudge to hot fudge sauce to vanilla for friends and family. I also love making people vanilla sugar, vanilla brown sugar, and vanilla salt. There's something about going into the kitchen knowing you are making something sweet for someone special in your life. For me I like to turn on the Christmas music and get into the groove of it all. Holiday baking is like my Christmas kick off. We tend to start later than most people when it comes to decorating. As of right now I don't have my tree up or house decorated. We've always done real trees and I find if you put them up too early they dry out and look like crud by Christmas day. So we hold off and usually put the tree up about a week before Christmas.
This year we'll probably put one tree up next week then the other tree up when B-Dude comes down to visit. Our upstairs tree is usually decorated with store-bought ornaments and ornaments my kids and family members have bought me over the years. The downstairs tree is usually decorated with homemade ornaments. We do tons of gingerbread men and use them on the tree. It always looks and smells fabulous. It is one of our many family traditions. We have a day we decorate cookies, a day we make a huge gingerbread village and we always take a day to go pick out a tree or two. I have to tell you upholding family traditions is extra special in this house. Years ago we bought my folks home after my father passed away. So we now spend holidays celebrating with our kids in the same house I celebrated holidays with my own folks. It means the world to me.
I encourage you to start your own traditions. It's fun to see the family get excited each year when they smell gingerbread or see the candy come out for the villages. Makes my heart happy! Hope you get to make your heart happy too!
Peppermint Marshmallows
Ingredients
- Non-stick spray
- 2 cups sugar
- 1 tablespoon corn syrup
- ¾ cup water
- 4 packages of unflavoured gelatin
- Another ¾ cup water
- ½ teaspoon peppermint extract
- 2 large egg whites
- 2 teaspoons red food colouring
Instructions
- Prep an 8 inch square pan by spraying it with non stick spray. Then line the pan with parchment. Set aside.
- In a small saucepan combine sugar, corn syrup and water and cook over medium heat, stirring until the sugar dissolves. Stop stirring and let it come to a boil over medium high heat until it reaches 260 degrees.
- In the meantime put ¾ cup of water in a heat proof bowl and sprinkle the gelatin over it. Let stand for 5 minutes while it softens. Now set the bowl of gelatin over a pot of simmering water and whisk it constantly until the gelatin dissolves. Remove from the heat and add the peppernint extract. Set aside.
- Now beat the eggs whites in a stand mixer with the whisk attachment until they get a bit stiff.
- Take your gelatin mixture and add it to the sugar mixture. Give it a stir then gradually add this to the mixer with the egg white mixture. Mix until it thickens a lot, takes about 12 to 15 minutes.
- Pour this into the pan you prepared earlier and smooth out. Work fast and add drops of red food colouring to the pan. Take a toothpick and drag it back and forth through the pan to swirl the red into the white.
- Let the marshmallows set for about 3 hours, or overnight.
- Cut into squares.
- Use in hot chocolate, or put into tins or plastic bags to give as gifts.
- Serve with a big old pepperminty smile!
I have to say it's reason like these marshmallows that make me love Martha Stewart for too much. I found this recipe online and loved it immediately. Martha rocks. She always has such cool ideas for holidays. The woman is a domestic goddess. I just wonder if she swears as much as the rest of us domestic goddesses. I bet she does. I'd love to have a swear off with this woman. I bet she could kick my butt.

I have never made marshmallows. Admitting that obviously puts me out of the domestic goddess category. I guess I will have to settle for domestic demigoddess.
Kim Bee
Lol Kristen, I've seen and tasted your baking so I know you still qualify. Marshmallows be damned.
Renee
I wish I could eat peppermint. It is one of the very few things that does not do well with my system. I am inspired by this recipe though. I'm thinking cinnamon or another flavor for the marshmallows.
Kim Bee
That is such a bummer Renee. I started using it more when I found out how good it is in calming my IBS, You should totally try these with cinnamon or strawberry.
Liz
I love the marbling effect...so cool! And I think I might own those same cookie cutters 🙂
Kim Bee
Thanks Liz. I could not do it on those stupid cookies but for some reason a big pan of marshmallows was easy. I freaking love those cutters.
Jen @ Juanita's Cocina
Now that I've made plain mallows, I MUST try these! Happy day #2!
Kim Bee
You must. Like now. Like right now. Like immediately. You will love them.
Rachel @ My Naturally Frugal Family
Those are so cool looking Kim! Well done...I would love to be on your Christmas list and get some of your homemade treats.
I think they are always more special since the giver put thought and time into the gift instead of just going to the store.
Kim Bee
Thanks so much Rachel. I had fun with this. And lol, I love Christmas and tend to go a little nuts.
Ramona
I always think it's so cool when someone can make something I always buy at the store like marshmallows. It makes me think you are a culinary whiz kid!! I love these holiday marshmallows.. of course I would eat them all year around. 🙂 Happy Day #2!
Kim Bee
I am so not a whiz kid, trust me. They are actually really simple. I had no idea. Happy Day 2 Ramona. So happy you joined us.
Vicki Bensinger
Oh I've been so busy lately I haven't had time to stop by. So many cute treats and this one is darling. Who wouldn't love a swirled peppermint marshmallow to put in your cocoa or just eat alone. Fun idea - very creative!
Kim Bee
SO happy to see you Vicki. I've been the same way. I'll stop by your site tomorrow. I miss ya.
Love making fun treats like this. It was a riot to experiment with.
Holly
I haven't made marshmallows before but this recipe could do it. How festive and fun!
Kim Bee
You should try Holly. It is way more simple than I thought. And yummy!
Erin @ The Spiffy Cookie
Love how you cut them into shapes
Kim Bee
Thanks, I just had to have some fun with them.
Isabelle @ Crumb
I've been meaning to make marshmallows at home for ages, and these are just so gosh darned purty that I might just have to bite the bullet... I can just see packing these up with a pretty much and some gourmet hot chocolate as a kick-ass hostess gift!
Kim Bee
You must. They are so much fun to make. And you're right, these would make a kick ass hostess girt.
Kayle (The Cooking Actress)
That's so nice that you get to be in your childhood home for Christmas!
These marshmallows look wonderful, I'd love one in a big mug of hot cocoa!
Kim Bee
It really is. I have such fond memories here. Now I get to carry on those traditions and make my own memories.
So good in hot cocoa.
Choc Chip Uru
These marbelled marshmallows are too stunning my friend I love them 😀

kitchenriffs
So nice to have family traditions like that! And I'd say that making these peppermint marshmallows should certainly become a tradition! I can never resist a marshmallow, and definitely can't resist peppermint at this time of the year. 😉 Fun recipe - thanks.
Kim Bee
Thanks, it really is. We really try to make the holidays special. Even as the kids get older we still love doing stuff as a family.
Heather @girlichef
I love the red streaks! And I love homemade marshmallows...can't believe you had the patience to use a cookie cutter on them ;P Your Christmas traditions sound lovely!
Kim Bee
Thanks Heather. I had so much fun making these. And lol, I think being tired actually helped me. I was low moving and half asleep so they turned out great.
Thank you. We love doing stuff with the kids. They are older now but we still make time to do fun stuff.
Meghan
I love all your traditions!! I love these marshmallows too! I'm hoping to make some marshmallows myself if time allows! Such great gifts!
Kim Bee
Thanks so much Meghan. You should, they are so fun to make.
Nami | Just One Cookbook
I've never seen marbled marshmallows! These are so pretty, and perfect holiday gifts. My son loves marshmallows too. 🙂 Thanks for your suggestion on making family tradition. As a young (sort of) family, we haven't really created a holiday tradition, and your suggestion was just wonderful! I have to think about that! 🙂
Lyn @LovelyPantry
Family and family traditons are so important. Its wonderful that you are continuing. I don't have family where I am, so I need to start some traditions of my own with my kids. Hahaha! Martha is awesome!!!! And so are these marshmallows!
Kim Bee
They just look so cute with the marbling. I am so happy with how they turned out.
You are so welcome Nami. I wish I had done what a friend of mine did. She buys her kids an ornament each year and puts them in a memory box. I also have a friend who writes her children a letter on their birthday each year and puts them away for when the kids are older. So many things you can do to preserve childhood memories.
