    Hi folks!

    Welcome to another edition of ICE CREAM SUNDAYS. It is my fave day of the week. I mean who doesn't love ice cream. Any day you get to eat ice cream is a great day in my book. I wanted to give you a recipe that you don't need an ice cream maker for. I know most of mine require you to use one. So I want to start throwing in some that don't for those of you who do not own one yet. If you are on the fence about getting one I say jump off and run to the store. It's so amazing to make your own ice cream. If you can't afford to buy one or just don't want the hassle of owning one this is for you. It's easy and quick, plus it tastes amazing.

    I found the idea for this one in Paula Deen's Chocolate Celebration magazine. I am telling you this magazine is chock full of great ideas and wonderful recipes. This is one of those techniques most moms have in their arsenal of ideas. It's basically a homemade pudding pop. Paula puts a different spin on it by layering the flavours and adding nuts. I did change out the kind of nuts of course. Any time I'm given a chance to use pistachios I'm all over it. I also swapped out white chocolate pudding for pistachio. Yup, that's how I roll. Pistachios are the love of my life. It's a girl thing.

    An easy and quick way to make homemade ice cream treats without using an ice cream maker!

    Ingredients

    • 1 99g box of instant pistachio pudding mix
    • 1 99g box of instant chocolate pudding mix
    • 2 cups heavy cream divided
    • 2 cups milk divided
    • 2 cups pistachios shelled and chopped
    • Garnish- chopped pistachios chocolate sauce
    • Also needed: 8 7 ounce paper cups

    Instructions

    • In a stand mixer (or medium bowl with hand mixer) combine pistachio pudding mix with 1 cup cream and 1 cup of milk. Whisk until fluffy but thick.
    • You can either transfer this to another bowl or load the pudding into a piping bag to make it easier to fill the cups. Set aside in the fridge until needed.
    • Now clean your mixing bowl and then mix your chocolate pudding mix with 1 cup cream and 1 cup milk. Whisk until fluffy but thick.
    • You can either spoon out of this bowl or load the pudding into another piping bag to make it easier to fill the cups. Either way, set it aside in the fridge until needed.
    • Shell your pistachios and then chop or crush them. I do mine by shelling them first, then I put them in a ziploc bag, seal it almost all the way up (I leave a touch open so it doesn't explode) and then whack it with a rolling pin. If you use the flat end of the rolling pin it works fantastic on pistachios. It does them so they resemble coarsely chopped ones which I like.
    • Now set the pistachios aside in a bowl with a spoon handy.
    • Now take 8 paper cups and line them up.
    • Either pipe or spoon about 2 tablespoons worth of pistachio pudding in the bottom of each cup.
    • Now add a layer of chopped pistachios.
    • Pipe or spoon about 2 tablespoons worth of chocolate pudding in the cups.
    • Add another layer of pistachios.
    • Pipe or spoon about 2 tablespoons worth of pistachio pudding in the cups.
    • Add another layer of pistachios.
    • Pipe or spoon about 2 tablespoons worth of chocolate pudding in the cups.
    • Cover with plastic wrap or tinfoil.
    • Place the cups in your freezer for about 6 to 8 hours.
    • Remove and peel away the paper cups. Place ice cream on plates.
    • Garnish with chocolate sauce and more pistachios.
    • Serve with a big old pistachio and chocolate smile!

    Notes

    The possibilities with this one are endless. You can do tons of different combinations.
    You could add a stick and make them pudding pops.

    Now who wouldn't want to enjoy this on a nice Sunday evening. Or a Monday. Or a Tuesday. I mean it's seriously good any day of the week. Or every day of the week. It's simple and tasty, perfect for busy moms. Sure we all like to make things from scratch whenever possible but some days you just need to make your life easier. Like days where you spend 6 and a half hours driving your hooligans around. Yup, been there, done that. This is how I problem solve when there's not enough time in the day but I still want a treat.

    Just fyi for you loyal readers, sorry I've been M.I.A. the last few days. I caught some weird flu bug and was quite sick. At first I thought it was my IBS being difficult but after getting sick at the movie theatre and the grocery store the next day it became apparent I've managed to catch a virus of some sort. Feeling a lot better now, just tired. So sorry for the lack of posts and socializing. Hopefully this makes up for it. Tomorrow is the caketastrophe you've been waiting for. I finally kicked its butt. It took a ton of tweaking and thinking outside the box but I think I finally nailed it. It's the recipe that drove a Lunatic to madness. Cannot wait to share the story with you.
