    Pizza Night Again! Garlic & Shallot Pizza as well as Pepper Strip Pizza

    Hi folks. I am back with a couple of pizza creations for you. I did not take very good pictures though so forgive me. Apparently all this time off has your Lunatic discombobulated and off kilter. I seem to be having a problem with files not be visible as well. I take the pics but when I put them on my laptop the file is empty. Yah, the joy of being technologically challenged. Hi my name is Kim and I am geek, just not in a good way.

    I'll make this snappy as I have other things going on in the kitchen today. So time is limited as usual these days. Too many balls in the air, and I am not a good juggler these days.

    For personal reasons I have backed off of going up to the hospital to see my Aunt. I'll explain another time but long story short is while I love sitting up there with her for endless hours talking and helping, if I am not treated with respect by others (not my aunt to be clear) I have to draw the line. Minor incident caused me to open my eyes and rethink things. It's pulled up a lot of feelings regarding how people treated my father during his illness and was causing me alot of sleepless nights and distress. So for the time being I am backing off and trying to get caught up with my life.

    So now on to happier thoughts, I am back in the kitchen sort of. I am still balancing a few too many things. But I'm managing okay. Horsey was moved to her new digs and is quite happy. I'll post some pics later this week. We're out helping at another barn for a friend who's away. That's been fun. Mini-me used to ride one of my friend's arabians for about 2 years so we've enjoyed spending time with him and his brothers this week while she's up with her mare at the Arabian Nationals. So nice to see them again and get to play with them all. The house was in a moving around state when I disappeared to the hospital so I'm now back to trying to get it all reorganized. Who knew making a spare room a blog room/studio would affect every other room in the house. It's total chaos but hopefully we'll be done all the tweaking within a week or two. Then I'll post pics of my new digs. It's not huge or fancy but happy to have my office back. Hubby took it over the two years he was in school. So now that he's done I've nicely forcibly removed him and reclaimed it.

    Today I am having dinner out. My Auntie who helped me take care of my Dad for part of his illness is here. She's been helping out with my Aunt who's in hospital. She has to head back to Quebec tomorrow for a surgery of her own. So since we have not had any time solo while she's here I thought I'd pick her up and go out for dinner. Catch up and gab. We went through alot together during my Dad's illness. So there's a bond there that remains. She also helped care for my grandmother during her last years. She is a caregiver at heart that one. No idea where we're going yet but certain it will be good.

    So was that snappy? Rofl, okay it's my version of snappy so it's all good.

    Now on to the pizza. These were cooked with the Killer Spicy Pizza Dough I made last week. I did these up really quick and was super limited as there was no food in the house. So this is what I did with what was here. Normally if I used garlic I would either roast it prior or pan fry it but limited time meant I just chopped slices and piled it on top. Same with the shallots, I would caramelize them first if I had oodles of time. This time I just sliced them up small and tossed them on. Turned out good. I'll be making the garlic and shallot one again soon. Darn good. Okay hope you enjoy. I sure did.

    Garlic and Shallot Pizza with Killer Spicy Pizza Dough:

    Ingredients:


    Killer Spicy Pizza Dough- use half of it per pizza (or divide into thirds if you like super thin crust)
    3 cloves of garlic, sliced thinly
    3 shallots, cut thinly
    Pizza Sauce, use your own judgement on how much (we like alot so use about ½ cup to ¾ cup on each)
    1 cup mozzarella cheese

    Directions:


    Preheat oven to 450 degrees.

    Roll out your dough (or hand stretch if you know how) and lay it on a pizza sheet or stone.

    Poke it with a fork a couple times. I find this helps keep it from getting wonky.

    Spread on your sauce evenly.

    Toss on your mozzarella cheese evenly.

    Now lay on your garlic and shallots.

    Pop it in your oven for 10-14 minutes. All ovens cook a little differently so adjust your time accordingly. I also like my cheese to brown a bit so adjust time down if you don't. Use lowest or second lowest rack of oven if you want a nice crispy bottom.

    Remove and cut up.

    Serve with a smile.

     

    Pepper Strip Pizza with Killer Spicy Pizza Dough:


    Ingredients:


    Killer Spicy Pizza Dough (use half of the dough per pizza or one third if you like really thin crust)
    ½ yellow pepper, cut into thin strips
    ½ read pepper, cut into thin strips
    Pizza Sauce, use your judgement on amount (we like tons so ½ to ¾ cup per pizza)
    1 cup mozzarella cheese


    Directions:

    Preheat oven to 450 degrees.

    Poke it with a fork a couple times. I find this helps keep it from getting wonky.

    Spread on your sauce evenly.

    Toss on your mozzarella cheese evenly.

    Now lay on your pepper strips.

    Like I said, craptastic pictures this time. I'm sure I'll be back in the swing of things soon. Sure was good pizza though. Love them both but was partial to the garlic and shallot one myself. We make pizza way too much.

A couple of slow cooker recipes and the launch of slow cooker saturdays this week. And a big surprise in about a week that you will love. Yup, back with a vengeance, man I've missed my kitchen. Just wish my stove would have magically been cleaned. The stove cleaning fairies must be on strike.

      I have to ask if you ever get bad side effects when eating garlic in chunks like that. I have seriously weird dreams, ergo, no garlic at night. Bummer! Otherwise, the pizza looks great.
