Hi folks. Sorry for the extended disappearance. Been some personal stuff going on in the Beaulieu household. So although I have been cooking, I have not been taking pictures or documenting things. Hopefully I shall return to normal tomorrow. We did do a huge meal tonight for Easter. We had company though so did not want to stop the meal to take pics. Here's a list of what we had for Easter din-din: spiral glazed ham(bought at Honey Bee Ham Co), roast chicken, roast potatoes, mashed potatoes, roasted baby carrots, corn, stuffing, chalet sauce and home made dinner rolls. For dessert I made pineapple upside down cake. My mother in law brought a lovely pumpkin pie. So needless to say we had WAY too much food. Was so delicious if I do say so myself. Been a long time since I cooked for a big group. So was a lot of fun.
So this week brought a court appointed mediation in a pain in my butt case I've been dealing with. Long story and for now I can not speak about it. It has to be signed, sealed and stamped before I can discuss anything regarding it. Let's just say legal matters are a giant inconvenience. Especially when you have some other heavy stuff going on in your life. If I have learned anything it`s that people are really dishonest and out for themselves. Seems money rules and ethics are a thing of the past. I hold fast that I refuse to live my life by today's rules. To me right is right.
We had some heart ache this week. We had to put our dog to sleep which just devastated us. He was 14 years old so we knew one day we would have to deal with this. But knowing something and doing something are two very different things . On Wednesday night he was acting odd, very disoriented and imbalanced. So Thursday morning I called the vet to say I may need to have him looked at. While I was at court, my hubby had tried to get in touch with me. Dakota had started yelping and collapsed. After that he could not seem to get up. He could move his body and head but his legs were weak. I checked in after court, I had stopped at Costco for some Easter supplies. So I called to double check some things and the guys were frantic. Hubby filled me in on what was going on. So I rushed home and called the vet on the way telling them what was going on. Our vet was not in but agreed to come back to the office if we needed him. So once I got home and checked on Dakota I called the vet again and booked him in. Then I got hubby and son off to school. I then had some quality time to spend with Dakota until the appointment. I sat on the floor with him petting him, then brushed him. Just hung out until it was time to go. Turns out it was a terminal stroke. He was in heart failure so I made the hard decision to have him euthanized. I stayed with him until the end. Was so incredibly hard but glad I did it. After losing our cat in January and now our dog the household is very different. Dakota will be missed by all who knew him. He really was the best dog in the world. So well behaved, easy going, and lovable. He leaves a huge void in the Beaulieu household.
So that was my week in a nutshell. Am hoping this week is quiet and I can get some spring cleaning done. And let's be honest, I want to get back to my normal baking and cooking craziness. We ordered out 3 times last week which for one we cannot afford, and two I do not feel well if I do it more than once a week. It`s back to normal now so check in tomorrow. I will take some pics of the pie I am making and post my fave pie recipe. I may take some pics and post a recipe for my stuffing as well. I made it tonight but I sure I can warm it and take some good pics.
