    Recipe 3 of 5 - Debikim's Granola Apple Muffins

    So this one was a total surprise. Had my sister's apple oatmeal muffin recipe and decided granola was just laying around so thought it would be fun to try. Yummy goodness for certain. Do not be afraid to experiment. What's the worst that can happen? You can always run to the store and buy muffins if they fail. Get in there, make a mess. Then have one of kids do the dishes afterwards. This may be the most fun part of cooking. Paybacks!Debikim's Granola Apple Muffins:


    Ingredients:1 cup rolled oats
    1 cup milk or buttermilk (I used buttermilk cuz Deb told me they would be richer and it's true)
    1 cup apple sauce
    1 cup granola (I used homemade, but store bought is fine)
    ½ cup brown sugar
    1 large egg, lightly beaten
    1 cup flour
    ½ tsp salt
    1 tsp baking powder
    ½ tsp baking soda
    ½ tsp cinnamon

    Options- Deb uses â…“ cup raisins. I didn't as we aren't fans. She suggest currants as well. Or nuts. Or raisins. Or any combination of these things.

    Directions:

    Combine the oats and milk and granola in a bowl and let soak for about ½ hour or so. When time's up, mix the apple sauce, brown sugar, and egg into the oat mixture. In another bowl, mix the rest of the ingredients together and then add into wet mixture. Divide into muffin tins.

    Bake at 350 degrees for about 20 minutes.

    Side note- me and my sis both love sprinkling demerara sugar on the top. When buying this some places use what looks like dark brown sparkly sugar as demerara. I prefer the lighter kind that looks like tiny beige glass crystals. My sis can find it in BC easily enough, I however have trouble finding the right kind here.
