I have been on such a cheesecake kick the last couple of weeks. I have eaten more cheesecake recently than I have in my whole life. I did these a couple of weeks ago for this guest post. It's the first time I've dabbled in bars. The inspiration to do a bar came from the wonderful lady I am guest posting for today. None other than Lizzy from That Skinny Chick Can Bake. Lizzy makes the most delectable bars I've ever seen. One day when I perusing her site I realized I don't really have any bars on mine. I have no idea why I don't do them more often. I really do love them. So in honour of the lovely and talented Lizzy I decided to branch out and try my hand at bars.
I had to find a recipe as I was not quite sure what I was doing when it came to making bars. So I found these in an old Kraft Kitchens What's Cooking Magazine. Remember they used to come for free in your newspaper. Remember the days where companies did things for free. Ah, the good old days. Anyhow, you can also find these on their website. I usually just wing my cheesecakes as almost all start out the same way then you add stuff in. It's pretty easy peasy to make a no bake cheesecake. Honestly if cheesecake intimidates you I think this is the way to go. It was simple and easy to make. Sets up like a dream. Tastes like heaven.
You can use frozen berries like the recipe calls for. That is kind of nice to know in case you're craving cheesecake and it's not berry season. Honestly the frozen berries were fab in this. I don't buy them frozen too often but this made me rethink that. They'd be perfect for a morning smoothie.

Well now...one of my favorite lunatics (yes I know several unbalanced people) guest posting for my favorite skinny chick (I have no other favorites in that arena)! When it comes to cheesecake you can put it in bar form, cake form, jar form or just ladle it into a trough and I'm fine with it. As for how Liz stays so skinny, I'm convinced she tosses all her baked goods out the window the minute the photos are taken. Check her neighborhood for a lot of really fat stray cats!
