    Trix Ice Cream Cake

    This Trix Ice Cream Cake is easy to make and tastes amazing. It features Trix cereal for a bright, colourful cake to celebrate any occasion!

    I have a confession to make. Are you ready for it?

    Okay, here goes....

    I made this cake WAY back in August. For my son's birthday.

    Apparently I'm a giant slacker when it comes to posting recipes.

    You can peek through my instagram account back in the summer to see how I ground up the Trix cereal for the base. I think that was back in August. I know right. Slacker.

    Life just got away with me. I had to dial back work for a few months to deal with some pretty serious health issues. So, this got put on hold. For eons!

    I'm back to normal life now, and the health crisis is far behind me. Which is awesome because this girl is not a happy camper when she's too sick to cook, and bake.

    I get super cranky when I am not in the kitchen. Cooking makes me happy. I'm either in the kitchen rocking out to some tunes while I cook old classics, or I'm in the zone while focusing on developing new recipes.

    Whether I'm in quiet "recipe development" mode or rocking "been there done that" mode, one thing is for certain, I am happy as a clam when I'm in the kitchen. It's my "special place". I just wish it was bigger. I need to win one of those kitchen makeovers.

    Until then I make due in my small, comfy kitchen. I'm sure the neighbours think I'm nuts while I prance around with the music blaring. Luckily I don't really care what my neighbours think. I'm cool like that. I live in my own little world!

    Clearly there are no calendars in Kim's world. I cannot believe I'm just posting this now. Honestly, this year has kicked my ass. I look forward to 2015.

    But for now 2014 is awesome. Especially today, December 21. It's my daughter's birthday today, she turns 21. So a big old Happy Birthday to my very special young hooligan.

    I thought this was a fun way for the hooligans to share a cake. Make it for one birthday, post it for the other. See, it was in my master plan all along. I'm cool like that.

    Trix Ice Cream Cake

    This Trix Ice Cream Cake is easy to make and tastes amazing. It features Trix cereal for a bright, colourful cake to celebrate any occasion!

    Equipment

    • Food Processor
    • Springform Pan
    • Stand Mixer

    Ingredients

    For the base:

    • 2 cups Trix cereal
    • 2 tablespoons butter melted

    For the ice cream layer:

    • 1 cup whole milk
    • 1 cup granulated sugar
    • ¼ teaspoon salt
    • 2 cups heavy cream
    • 1 ½ teaspoons vanilla extract
    • 1 cup Trix cereal

    For the topping:

    • 1 ½ cups heavy cream
    • 1 heaping tablespoon granulated sugar

    For the garnish:

    • ½ to 1 cup of Trix cereal

    Instructions

    For the base:

    • Pour the Trix into a food processor, pulse until it resembles fine crumbs. Pour in the melted butter, pulse again until combined.
    • Spray a 9 or 10 inch springform pan with non-stick spray. Then press the Trix crumbs into the bottom of the pan. Press down. Set aside.

    For the ice cream layer:

    • In a stand mixer combine the whole milk, granulated sugar, and salt. Whisk until sugar dissolves, about 3 to 5 minutes at most.
    • Add the heavy cream and vanilla extract to the bowl. Mix until it thickens and becomes fluffy.
    • Transfer to an ice cream machine and churn until it begins to thicken considerably and starts to harden a bit. Wait as long as possible to add the Trix so it does not become soggy while this sets up. Once the ice cream is almost set add the Trix and mix just enough to incorporate. Pour into pan over top of the Trix base. Cover the pan with plastic wrap and place in freezer for at least 4 hours, preferably overnight.

    For the topping:

    • In a stand mixer combine the heavy cream and sugar. Mix on low for the first couple of minutes, then increase speed to high, mix until it forms peaks. Remove ice cream from freezer and pour this whipped cream over top of it. Smooth out.

    For the garnish:

    • Place Trix cereal on top of whipped cream portion. You can make any kind of pattern you like.
    • You can cover with plastic wrap and place the cake back in the freezer, or serve immediately.
    • When serving always remove from the freezer about 10 minutes prior so it's easy to cut.
    • Serve with a big old Trix loving smile!

    Please note that prep time does not include freezing time. This is something I typically make at least a day ahead so it has time to freeze properly.
    For this particular cake I would suggest doing the final layers right before serving so the cereal does not have time to get soggy.
    You can leave the cereal out of the ice cream portion if you like. We really liked it inside the cake. It's a personal choice kind of thing.
    You can cheat for this and just mix store-bought ice cream for the ice cream filling portion. No judgement here.

      What an inventive use for Trix cereal! I love that stuff and I've never thought to use it in this way. Now, I have to make it and what perfect timing this is because my oldest's birthday is coming up next week and guess what? She really love Trix. She's going to love this!
