Toasted coconut meets ice cream, this recipe is going to knock your socks off. Plus it's vegan, so you can eat more of it because it's healthy. Right?

Excuse me while I stare at ice cream....

    Are you doing it too?

    Of course you are.

I mean look at this stuff. It's gorgeous.

My lovely friend Wendy of Around My Family Table asked me to guest post for her. I was so super excited. I adore Wendy, she is such a wonderful blogger. I admire her greatly.

Once the excitement settled a bit I realized I had to make vegan ice cream. If you're a regular reader you know I am not vegan. However my daughter's bestie is, and my daughter used to be vegetarian so I have a wee bit of experience. I was nervous though. I wanted to get it right. I hope I did.

Make sure you swing by Wendy's blog, Around My Family Table to get the recipe for this Vegan Toasted Coconut Ice Cream. I really hope you all love it. I know we did. I'm a coconut fanatic. I can't get enough of the stuff.

Feel free to offer feedback and ideas on how you make your own vegan ice cream. I'd love to hear what everyone's else's experiences were like with it. It's certainly harder to get that creamy consistency. It's doable, you just need to be creative.

When you swing by Wendy's site, make sure you follow her on social media. You will love her so stalk her everywhere. You can find her on Facebook, Twitter, Pinterest and Instagram.

If you are a food blogger be sure to check out Wendy's blogging conference, called Blended. It's from October 3 to 5, in Phoenix, Arizona. She partnered with Wendy of Choosing Love to come up with a conference where we can all learn and grow. Sounds awesome right! You should go. If you want to know more, read the about section. It will make you want to go for sure.

Thanks to Wendy for your trust in me to make this recipe. And for your continued friendship.

Heads up to all you ice cream lovers out there, Ice Cream Week 2014 kicks off on Monday. Tune into my blog on Sunday to learn a little more about what we're up to this year. I love Ice Cream Week. It's so much fun. And fattening.

Adding "Join a Gym" to my to do list. Immediately! Or sometime before Ice Cream Week 2015! Whatever. Fluffy people rock!

    Toodles and smoochies! xx

I loved this challenge. My daughter's friend is vegan so it's nice to have some recipes I can make when she visits. Plus it was such a fun challenge for me to think outside the box. I adore coconut, could eat it every day, and often do.

Me either Crystal, I did this one for a vegan blogger friend. But it was so much fun, plus my daughter's bestie if vegan so huge bonus when she visits. It's so good you'd never realize there isn't traditional milk. Coconut milk rules.
