She makes such tempting treats that are not only delicious but made in a healthy way. I find this fascinating and would love to learn more from Kristina about how to do this. Everything on her site makes your heart skip a beat, but in a good way. She makes sweets that look like they are loaded with sugar but they are made with healthy and waistline friendly  ingredients instead. It boggles my mind and I am continually in awe of her fabulous baking. Please help me give a warm welcome to Kristina.

Hi everyone! My name is Kristina and I'm the blogger behind Whipped. I am SO excited to be guest posting for Kim today! She is one of my absolute favorite blogs to drool over, Trix Krispies?? Snickers Snack Cake?? Turtle Ice Cream Pie...?? She puts my box of Oreo cookies to shame and makes me want to dip them in chocolate, drizzle in caramel, and blend them into a shake! This lady is the master of creative combos!
So when Kim asked me to guest post for her I knew it had to be something sweet! Like Kim, I love to bake. I get excited over a new can of baking powder and  drool over rotting bananas, ripe for banana bread.... totally normal.
But I also know that a diet of pound cake and brownies probably isn't going to keep me zipped into my skinny jeans. That's why one of my favorite things to do is come up with lighter recipes that keep my sweet tooth happy and my bikini top tied!
So please meet....my Very Berry Cheesecake Pie Bites! These babies are oozing with warm sugared fresh blueberries and raspberries, rich cheesecake and sprinkled in a buttery cinnamon crumble. And they're bit sized!
I wanted to come up with a dessert recipe that would be perfect for summer parties. I was inspired by this week's Memorial Day! How cute would it be to have easy little individual pies that your guests could just pick up with their hands and eat while walking around? No mess, no fuss! I'm going to make these again for the 4th of July, I love the blue and red berries for color.
These are also super simple to make. I used refrigerated pie crust to save time (you can't definitely make your own if you'd like!). The cheesecake layer, berries, and crumble topping all take just a few minutes each to mix up. Then all you have to do it pop them in the oven for 20 minutes.. and viola! Adorable little pie bites in no time! These look sophisticated with none of the sophistication 🙂

Ingredients
Ingredients:
- • 1 package refrigerated pie crust 2 pie crusts
For the streusel
- • ½ cup plus 2 tablespoons all-purpose flour
- • 3 tablespoons chilled butter cut into small pieces
- • ¼ cup granulated sugar
- • 1 teaspoon ground cinnamon
For the Berry Filling
- • 2 tablespoons sugar
- • 2 tablespoons corn starch
- • 2 cups fresh blueberries
- • 2 cups fresh raspberries
- • 1 teaspoon grated lemon peel
- • 1 tablespoon fresh lemon juice
For the Cream Cheese Filling
- • 1 package 8oz. reduced-fat cream cheese, softened
- • ¼ cup sugar
- • ¼ cup egg substitute or 1 egg
Instructions
- Preheat oven to 350 degrees.
- For the streusel - combine flour, sugar, and cinnamon in a medium bowl. Cut butter into dry ingredients with a pastry blender until the mixture resembles coarse meal. Set aside.
- For the berry filling- In a medium bowl, gently stir together the sugar, corn starch, berries, lemon zest, and lemon juice. Set aside.
- For the cream cheese filling- In another medium bowl, stir together cream cheese, sugar, and egg substitute until smooth.
- Roll out refrigerated pie crust onto a lightly floured surface. Using a 4-inch circle cutter (or one of similar size), cut circles of pie dough and gently press into a standard size muffin tin (do not grease tins). Gently roll out remaining scraps of dough with a lightly floured rolling pin and continue cutting even circles of dough.
- Spoon about a tablespoon of cheesecake layer into the bottom of each pie crust. Top with another 1-2 tablespoons of berry filling. Lastly, evenly sprinkle crumble over berry filling. With your fingers, gently press together some of the crumble to create additional texture.
- Bake for 20 minutes, or until golden.
