Great recipe for Fried Apples with Apple Caramel Sauce! My family actually liked this dessert more than apple pie. Which is saying something since we are huge pie lovers in our household. This dessert is beyond amazing!

a crashed computer….
and life just sort of spiraling out of control momentarily.
I’ve had to put posts on hold while we deal with my ‘puter. All my photos were locked up inside. So no new blog posts while we tried to free them.
The good news is its hitting the service department tomorrow.
The bad news is I’m using mini-me’s and she doesn’t have photo editing software on hers. So it may be a bumpy 10 days till we get mine sorted out.
But fear not, I shall find a way to bring your recipes, with photos, one way or another.
Also I’m fine. I had a stomach issue that reduced me to tears so I had to go on meds for pain and to stop the spasms. I’m a-okay now.
So never fear, I haven’t stopped blogging (gasps in horror). I just had to deal with life.
You know…pesky life stuff. Luckily I have these fried apples with apple caramel sauce to soften the blow.

In the meantime I made this fabulous recipe for Fried Apples with Apple Caramel Sauce. It was part of a contest for the Everyday Magic site. The recipe is amazing. It’s quick, delicious and better than apple pie. Swear on my life.
Places to stalk Cravings of a Lunatic!
- 3 tablespoons of butter
- 3 granny smith apples, peeled and cut into very small pieces
- 3 gala apples, peeled and cut into very small pieces
- ½ cup of white granulated sugar
- ½ cup of light brown sugar
- 1 cup of walnuts (these are optional, leave out if you have nut allergies)
- 1½ teaspoons of cinnamon (roasted saigon cinnamon is amazing in this)
- ½ teaspoon of nutmeg
- 1½ cups of sugar
- ¼ cup water
- 2 tbsp of butter
- ½ cup of heavy cream
- ½ teaspoons of good quality vanilla
- 2 tablespoons of sauce drained from your fried apple pan (this adds so much flavour)
- 1 cup of heavy cream
- 2 tablespoons of confectioner’s sugar
- Garnish with chopped walnuts if desired!
- Spray a large frying pan with non-stick spray.
- Add your butter to the pan, and warm over medium low heat.
- Add the apples plus both sugars. Cook, stirring occasionally for about 25 minutes, or so. You want the apples to become soft and golden. If you need to you can turn heat down a touch to keep it from cooking too quickly.
- Add the walnuts, cinnamon and nutmeg and cook for about 5 to 10 minutes more over low heat until everything starts to thicken up.
- Turn off the heat, and just leave the cover on to keep it warm while you get your other elements prepared.
- In a medium saucepan combine sugar and water, then cook over medium heat. Cook while stirring until sugar dissolves completely.
- Now cook over medium low heat until the mixture goes an amber colour. This will take about 5 or more minutes depending on your heat. Do not stir. If you need to you can swirl gently, but stirring is a no-no.
- You can also either cover the pot to keep crystals from forming, or brush the inside of the pan with water occasionally to keep it from happening.
- Once it’s a beautiful light amber colour, remove from heat and add butter. Swirl it around. It will bubble up, so do not panic, it is supposed to do that.
- Now add cream and whisk until smooth.
- Add vanilla and drippings from your fried apples and whisk until combined and smooth.
- Pour into a jar and allow to cool for about 10 to 15 minutes.
- In a stand mixer, (or a hand mixer) whip the heavy cream and confectioner’s sugar until fluffy. You want nice soft peaks.
- Transfer to a piping bag if desired.
- Keep cold till needed.
- Scoop your apples into small jars, or bowls.
- Top with about 1 to 2 tablespoons of apple caramel sauce.
- Pipe whipping cream over top.
- Add walnuts if desired.
- Top with more apple caramel sauce.
- Serve with a big apple caramel smile!
If you don’t want to add the fried apple drippings to the caramel sauce that is totally okay.
You could also substitute applesauce for the drippings in the caramel sauce if desired.
This would make a sweet Mother’s Day dessert. Just sayin’.
