I have to tell you there are just some recipes that photograph beautifully. Caramel just happens to be something that looks gorgeous when it is photographed.
That little fact worked out well for me today. I’ve been whipping up lots of small bite recipes for the blog recently. I have a serious obsession with small food.
There is just something about tiny bites of food that makes me happy. The smaller, and cuter, the better. I just cannot get enough of them. I’ve been whipping up both sweet and savoury bites.
Today I’m sharing my recipe for Caramel Apple Triscuit Bites. This is a recipe I’ve made countless times. It’s simple to make yet jammed packed with flavour. These little bites pack a punch.
These little bites of happiness remind me of my childhood. We grew up eating lots of cheese & crackers. My Mom loved cheese & crackers. She would whip them up as a night-time snack while we watched TV. Sometimes she would make them as a bedtime snack.
I never knew you could use other kinds of cheese on crackers. I grew up only eating them one way. My Mom was not very adventurous in the kitchen so I had a pretty limited taste spectrum.
My Mom passed away when I was 15. We were all heartbroken. She was the glue that held the family together. We were left with sorrow and no clue how to care for ourselves. My Mom was old school, she did everything.
We all started to learn to cook. Begrudgingly at first. Then after a short time I fell in love with baking and cooking. It was a way to lose myself in something and shut the world out.
It was also such a great creative outlet. I was always artsy and loved getting my hands dirty as a kid. So this quickly became a way to let my creative juices flow.

- 24 Triscuit Crackers
- 1 cup of ricotta cheese
- 1 granny smith apple, diced or thinly sliced
- ½ cup caramel dip
- Place 24 Triscuit Crackers on a platter.
- Spread a dollop of ricotta on each Triscuit cracker. I used a heaping teaspoon teaspoon of ricotta on each cracker. You can use more, or less, to taste.
- Place apple pieces on top of each and press lightly into the cheese.
- Heat up the caramel dip for about 20 to 30 seconds to make it easier to use. Then drop about a teaspoon of caramel on top of the apple piece.
- These are best served right away. If you are prepping them an hour or so before you can toss the apple pieces in lemon juice to keep them from browning.
- Serve with a big old caramel apple loving smile.
You can also make these with goat cheese and cream cheese. They all taste amazing. I did a batch of each recently.
If you want to keep the apples from browning toss them in lemon juice before adding them to the crackers.
We also do these with caramelized apples. It's divine.

My mind immediately jumped to memories of my Mom. Then to memories of me playing with flavour spectrum with own kids when they were young.
One tradition that has passed down through generations of our family is piling everyone in the car to take a trip to Colasanti’s. It’s a local greenhouse, that also has a restaurant. They make the best donuts in the world. People drive from all over for their donuts.
I’m a rebel, while I love their donuts, I’m sort of partial to their candy and caramel apples. My kids have grown up going out there for treat a few times a year. Our trips out there are legendary. We always come home with more treats than any family should ever consume.
One day when the hooligans were young we were all chatting about marvels of caramel apples. The kids loved them but were talking about how hard they are to eat. Wouldn’t it be cool if they were bite sized and didn’t make you look like you were at a fair when eating them.
That is when the lunch size Caramel Apple Triscuit Bites were dreamed up. They could take these to school and not look like giant doofuses trying to eat a caramel apple during lunch hour.
I hope you dig these. You can use ricotta, goat cheese or cream cheese. I’ve even made them with whipped cream. Whatever we had on hand we used. That’s how most families cook. Use what you have, use what you love.
