My husband is a HUGE coffee fanatic. He cannot get enough of it. Until I became a Bulletproof ambassador I barely saw the guy. No joke. He spent so much time at the coffee shop that I joked they should charge him rent.
Since hubs is the coffee fiend in the family and I'm a food blogger of course I'm going to make recipes with coffee. It's what I do. For real. I spend 16 hours a day creating, cooking, photographing, editing, and eating.
It's a pretty easy leap for me to incorporate any product into more recipes. I love playing around with new ideas and recipe testing. This was an absolute riot to make. It's so easy to make, plus it's just so darn pretty.
We're huge chocolate lovers in this household. Coffee goes great with chocolate. They work so well together and coffee just enhances chocolate's natural flavour so beautifully. They are the perfect pair, like Lucy and Ethel.
Immediately upon getting this month's package from Bulletproof I knew I wanted to make chocolate bark. Since I love coconut and pistachios I knew I wanted to incorporate them into the recipe. That way I win too.
This recipe whips up in a flash. Seriously, it's ready in under 10 minutes. One bowl to wash and 1 spoon. You cannot use clean up as an excuse not to make this. It's simple. It's delicious. It's gone in under 10 minutes too.
I thought about using bacon in this recipe. Honestly, I still might so keep your eyes peeled in case I get a burst of energy over the weekend and need more bark in my life. The only reason I didn't is because the bacon in the freezer.
Yes, I'm that lazy. We've been trying to get our act together, health-wise since fall. Many of you know I broke my leg in November so I was off my feet for about 8 weeks. Then Christmas hit. Then we all caught that plague that's going around.
Finally, we're all feeling well again. It's back to the grind next week. Routine is everything when it comes to getting back on track with your health. We decided as a family to start eating better, getting more sleep, and working out daily.
Bulletproof is the perfect way to kick off a focused routine. Morning jolt then hit the gym. After that it's off to work with energy and a skip in your step. We're determined to get back to normal around here. Life just kicked our butts.
Now it's time to get off those butts and make some positive changes. Without sacrificing taste and treats. I'm a food blogger. Food is my life. So I will always be whipping up delicious treats. It's just part of the gig.
That doesn't mean every recipe has to be bad for you. This bark can made with dark chocolate, which has lots of health benefits. Pistachios are high protein. Coconut is high in fibre and minerals. Bulletproof coffee is amazeballs.
So, basically this is like eating a salad. If a salad was made of chocolate, coconut, pistachios, and coffee. Okay, that's a stretch but i it is good for you if you make it with dark chocolate and eat it in moderation. I promise.
For me the road to be healthy has to be delicious and it absolutely has to include chocolate. I never want to sacrifice what I love. Making recipes like this mean I can have my bark and eat it too. That makes me happy.

Chocolate Bark with Coconut Chips, Pistachios, and Coffee
Ingredients
- 4 oz good quality chocolate or almond bark
- â…“ c coconut chips
- â…“ c shelled pistachios chopped
- â…“ c finely ground coffee
Instructions
- Line a loaf pan with parchment paper. Set aside.
- Chop chocolate into pieces. Place in a microwave safe bowl. Place bowl of chocolate in the microwave for 1 to 2 minutes, pausing every 30 seconds to stir and check consistency. It should be smooth when finished. Every microwave is different so be careful after the 1 minute mark.
- Remove bowl from microwave carefully. Stir until smooth. Pour into prepared loaf pan. Smooth out.
- Immediately top with coconut chips, pistachios, and coffee.
- Place pan in fridge for 30 minutes to an hour to harden.
- Remove and chop into pieces.
- Serve with a big old chocolate and coffee loving smile!
