So dinner was late tonight. I have to admit I got a tad waylaid by baking. Or a lot waylaid is more accurate. I had a recipe I'd wanted to try for awhile now so since we're having a freakish cold spell here I knew I could turn the oven on without melting down the house. So I got a bit off track but it was so worth it. Dessert was so delicious! I will be popping it up in a post later. So be patient with that one. I won't go on and on about how good this dessert was, how melt in your mouth delicious it was, how it rocks your socks completely. That would just be mean if I did that to you. I would never do that. Oh okay I would. I'm evil like that, but an evil baker so hopefully you can forgive me.
Now on to dinner. This ended up being more prep than I had anticipated. Lots of cutting and decided to marinate at the last minute. Needed to soak the skewers. I should really learn to start earlier. Or not bake when I should be cooking. Now I used an ingredient I did not care for with the kebabs so I will leave it off the recipe. It was too overwhelming of a taste so next time I will not use it. I had added a little red wine vinegar but it was not a good decision. Live and learn.
I did a simple rice recipe with it. Usually I like a spicier rice but this was mild and quite yummy. This was one of those recipes I just winged as I went along. Sometimes I follow recipes, sometimes I do not. Today was a do not kind of day. Except that dessert. Oops, I wasn't suppose to mention the dessert was I?

Steak and Pepper Kebabs:
Ingredients:
1 and ½ pounds of boneless top sirloin, cubed
2 green peppers, cut up and cubed
2 orange peppers, cut up and cubed
½ cup VH teriyaki stir fry sauce (for brushing on during cooking)
Marinade for the beef:
â…“ cup VH teriyaki stir fry sauce
â…“ cup olive oil
Salt to taste
Pepper to taste
Garlic powder to taste
Directions:
If you are using wood skewers soak them in water for at least 30 minutes.
Cut up your steak into cubes. Set aside.
Combine all your marinade ingredients in a container and mix well.
Add the steak and marinate in fridge for at least 30 minutes.
While skewers are soaking and steak is marinating start cutting up your peppers into cubes.
Turn your BBQ on high for a few minutes then turn down to medium/low heat. I find it helpful to start the grill ahead, kind of like preheating your oven.
Once everything is ready start stacking your kebabs. I did some with more peppers than steak. Then I did some with more steak than peppers. Fill them but make sure you leave space at the end to hold them while flipping and eating. Once all put together pour remaining marinade over them.
Take them out to your grill and set them on the lower rack. Coat them well with teriyaki sauce. Cook for about 6-8 minutes on that side. Then flip them and cook them on the other side, coat with teriyaki again and let them cook for about 6-8 minutes.
Remove from grill.
Let stand for a few minutes then serve.
Simple Basmati Rice:
Ingredients:
2 cups basmati rice
2 tablespoons olive oil
2 tablespoons butter
1 shallot, diced
¾ cup diced green pepper
¾ cup diced orange pepper
2 cups beef broth
2 cups water
Salt to taste
Pepper to taste
Garlic powder to taste
Parsley- use a little or a lot depending on how much you like it. I used about 1 tablespoon.
Directions:
In a large saute pan add rice, olive oil, butter, shallot, and peppers.
Cook over medium heat until the rice absorbs the oil and butter.
Add beef broth and water and bring to a hard boil for about 4-5 minutes.
Turn down to simmer, cover and cook for about 15 minutes or so. Once the liquid is absorbed and the rice is fluffy.
Now add your spices and stir well.
Serve with your kebabs.
I did the plates a few different ways to experiment with pics. I just have to share this one with you as I thought it was so hilarious. I thought it was a really cool idea but once I took the pic and saw it I made a remarkable discovery. It reminded me WAY too much of the blair witch movie. See below and let me know what you think.
