Hi folks. Today is Secret Recipe Club day. The first Monday of every month we get to reveal what we each made from our assigned blog. Each month we get a different blog to make a dish from then post on our sites. It is a lot of fun. I am all for promoting other bloggers so this type of thing is right up my alley.
This month I was assigned The Lean Green Bean. This is one great site folks. She does oodles of fun recipes that are not only delicious but healthy too. She shares workout information as well. Lindsay is a Dietetic Technician so she knows her stuff. Lindsay is also an animal lover so I adore her already. Totally cute pets on her site. Lindsay also runs a fun program called Foodie Penpals which I fully intend to join. She assigns people to each other and you send foodie packages, how cool is that! I am super happy to have been assigned Lindsay's blog this month and look forward to getting to know her now that I don't have to stalk her on the sly.
I fell in love with so many of her recipes. I have about 5 bookmarked to try another time. She really does healthy and mouth-watering well. But I have to admit I was drawn to her Banana Bites immediately. I have done bananas in fondue but never frozen them. I have seen them done like popsicles elsewhere and have one flagged in a cookbook. So when I saw Lindsay's version I knew it was the one. I changed them up a bit. What I like about this one is the possibilities are endless. You can add any little old thing your heart desires. I love recipes like that. So I took Lindsay's healthy version and Lunatic'd it. Sorry Lindsay. It's what I do. Please come slap me and train me!
Ingredients
- Variable!
- Bananas
- Coconut
- Coconut Sugar
- Graham Crumbs
- Oreo Crumbs
- Crushed Peanuts
- Chocolate I used Icy Squares melted
Instructions
- Peel and slice your bananas into bite sized pieces.
- Melt your chocolate in a double boiler.
- Get all your toppings set up in little bowls to make it easier and faster when ready to dip.
- Line a cookie sheet with parchment while the chocolate melts.
- Once the chocolate melts, take toothpicks and dunk each piece into the chocolate.
- Then dunk it in the topping of your choice.
- Place it on the parchment lined cookie sheet.
- Continue until everything is dipped and dunked.
- Pop the cookie sheet in the freezer for about 15 to 30 minutes.
- Remove and plate.
- Serve with a big old chocolately smile!
