These chicken fajita roll ups are tiny in size but big on flavour! These are perfect to pack in lunches or to use as appetizers for parties.

I cannot believe it's time to start thinking about back to school recipes. I'm a summer loving gal so I am always in denial about the impending school year starting.
This year is monumental for me. For those of you who don't know, my kids are older. Both of them are in their 20's. I know, right. It seems impossible. Time just flies by.
The reason this year is monumental for me is it's the very first year neither of my kids will be going back to school in September. I've been doing the back to school routine for about 25 years.
Honestly, it feels so weird to think that neither of the hooligans will be attending classes this September. My kids are all grown up and I'm not going to lie. It feels so flipping weird.
K is done university and has 2 degrees now. She's actually considering going back for more schooling but she's taking a year off to save up and take a bit of a break.
B is still technically a student. He's finishing his PHD in Toronto so while he doesn't attend classes any more he's still working towards his goal. Hopefully he finishes up this year.
As you can imagine after 25 years of doing the Mom thing I've packed a bajillion lunches in my day. Honestly, I feel like I could pack lunches for living at this point.
One of my favourite things to pack in lunches in easy tortilla wraps and roll ups. Kids love them and they are super easy to make. Plus the variety in limitless. You can use just about anything.
You can make huge versions or small versions. You can stick fun little skewers and picks through them. You can add dips for the kids to help mix it up a bit. Honestly, limitless possibilities.
I've been on a serious chicken fajita kick lately so I knew I wanted to make chicken fajita roll ups. Roll ups or pinwheels are so much fun to make. You can toss just about anything in them.
For these mini roll ups you can either cook your own chicken to use inside them or you can use rotisserie chicken. It's completely up to you. I grilled chicken breasts for this particular recipe.
The filling can be done one of two ways:
- Layer the ingredients one at a time then roll the tortillas up.
- Or mix everything in a large bowl and spread it on the tortillas before rolling them up.
- Either way is totally acceptable!
Whatever you do make sure you don't overpack the filling. If you put too much in it will just push out the sides as you roll them up. So go easy on the filling so you don't make a mess.
You can cut them thick or thin. Whatever works for you. If you really want to be lazy you could even just leave them rolled up and the kids can just eat them that way. No stress.
I used Nordica Plain Smooth Cottage Cheese for this recipe. Gay Lea is my favourite brand for butter and SO many other things. They have such high quality products.
This cottage cheese is unlike other cottage cheeses. The texture is smooth as silk. I love that! I've never loved the texture of most cottage cheese. Smooth works for me.

Chicken Fajita Mini Roll Ups
Ingredients
- 1 pound boneless skinless chicken, cooked and shredded
- 2 ¼ cups Nordica Smooth Cottage Cheese
- 1 ½ cups tex-mex cheese
- 1 red pepper, diced finely
- 1 yellow pepper, diced finely
- 1 orange pepper, diced finely
- 1 green pepper, diced finely
- 1 jalapeno pepper, diced finely
- 1 tsp chili powder
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cayenne pepper
- ¼ tsp cumin
- ½ tsp salt
- ½ tsp white pepper
- 1 bunch fresh parsley to taste
- 1 package small tortillas
Instructions
- Grill or bake chicken breasts for 3 to 4 minutes per side. You could also use rotisserie chicken if you. Shred it so it's a fine texture.
Pour cottage cheese into a large mixing bowl. Add cheese, red pepper, yellow pepper, orange pepper, green pepper, jalapeno peppers, chili powder, smoked paprika, garlic powder, onion powder, cayenne pepper, cumin, salt, white pepper, and fresh parsley to the mixing bowl. Mix unti well combined.
Spread the mixture in a thin layer on one side of the tortilla. Roll up. Place in the fridge for about 15 to 30 minutes, depending on how firm you want them. Slice them into rounds. Place on platter. Serve with a big old roll up loving smile!
