Okay, okay so I already posted brownies today. Today you get a two for one special.
Why?
Because it's Pie Day!
Yup, you heard me.
People are celebrating today by attending Pie Party 2012.
There's still time folks. Bake a pie, post a pic on a blog, or twitter or facebook. Then celebrate till you need to undo the top the bottom of your pants. Now that's a party!
Cookie Crisp Ice Box Pie for Pie Day
Ingredients
For the Crust:
- 2 cups Oreo Crumbs
- 4-5 tablespoons butter melted
For the Filling:
- 1 box of vanilla pudding
- 2 cup milk
- 1 teaspoon vanilla
- ½ tub of Cool Whip 1L size
- ¾ cup crushed Cookie Crisp cereal
- ½ cup chocolate chips
For the Topping:
- ½ tub of Cool Whip 1L size
- ¾ cup of Cookie Crisp cereal
Instructions
- Spray a pie plate with non stick spray.
- In a bowl combine the oreo crumbs and melted butter. Stir until combined. Press into your pie plate. Baking the crust is optional. If you do just pop it in a 350 degree oven for about 5 to 8 minutes. But if you want this to be completely no bake don’t bother. It will still set up nice in the freezer.
- Now in a mixer combine the vanilla pudding crystals, the milk, and the vanilla and whip until thick.
- Now add the cool whip and whip again.
- Now add the crushed cookies and chocolate chips. Fold them in with a spatula.
- Pour the mixture into the pie plate and set in freezer for at least an hour.
- Remove and pour the remaining cool whip over top.
- Place cookies on top.
- Freeze for at least a couple of hours.
- Remove and serve with a big old childish smile!

I know right. I have a serious thing for baking with cereal. Especially for a chick who doesn't eat cereal. It's just so much fun. How can you go wrong with a great no bake cereal pie. It's pure magic.
I apologize the photos are sort of lackluster. I joined in the fun sort of last-minute and basically dreamed it up today, then whipped it up and photographed it. Sort of rushed through the process this time. But hey, it's pie and who cares about photos when you're shoving pie in your pie hole right.
For other cereal madness feel free to click on the photos below to get the recipe for any of my other cereal goodies. I swear it's like a sickness at this point. I am constantly trying to come up with idea to use cereal. I need help. Or a cereal sponsor. Whatevs!
Yup, like I said, it's a sickness. I have a serious love of baking with cereal. Hope you enjoy the pie and all the other treats. Make sure you bop around the internet to see other great pie recipes. You should stop by and share your pie with everyone at Pie Party 2012. Make sure to thank Garrett McCord, Justin Swartz, Shauna Ahern and Ashley Baron Rodriguez for hosting.
Toodles and smoochies! xx

What a fun pie party you have here! Is it a Pie Day? No wander my teenager was baking pies for two days in the row! 🙂
Kim Bee
Thanks. Lol, it totally was. I had pie like crazy here. Which is never a bad thing.
Maureen @ Orgasmic Chef
We have something similar to cocoa pebbles but no cookie crisp. Cute pie!
Kim Bee
Ah, bummer. Cookie Crisp is awesome. We have to get it in the states. Luckily we're 20 minutes from the border. I had so much fun with this one.
Ali B
Your cereal recipes are amazing!! I love all of these!!
Kim Bee
Awe, thanks. I adore playing with my cereal.
DB-The Foodie Stuntman
So what I want to know is what do you do with the leftover cereal if you don't eat it for breakfast?
Kim Bee
I do things like this. Lol. I snack on froot loops and corn pops. My family are cereal junkies though. I swear I need to buy stock in the cereal companies.
Emily @ Life on Food
These are the pies I like, pudding, chocolate, sweetness. None of that fruit stuff for me.
Kim Bee
So refreshing on a hot day. Love this kind too.
Meghan
I love your cereal desserts! Ice box pie sounds perfect right about now, and now I want cookie crisp!! I don't know how I missed your cocoa pebbles cheesecakes, but they look fantastic Kim!
Kim Bee
Thanks. I love a good no bake dessert when it's this hot out. So light and refreshing. Lol, those cheesecakes were so cute and yummy. I really had a bit too much fun with my cocoa pebbles.
Jennie @themessybakerblog
I am bowing down to you right now, Kim. All of these cereal treats look amazing, and I need some of that pie in my mouth ASAP! Thanks for sharing, my friend.
Kim Bee
Awe, thanks. And lol, this pie is fab. So light and yummy!
Susan
I haven't touched a box of cereal since college but looking at all these glorious treats makes me want to go buy one right now!
Kim Bee
Oh I am so happy I've pushed you off the edge of the cliff. Go buy some now Susan. Come to the dark side.
Dara
Pie!!!! With unhealthy breakfast cereal! Woo hoo. I just imaginary ate the entire thing.
Kim Bee
Ah so that's the secret to staying thin...imaginary eating. This explains so much. Love sugar cereal. Not for eating of course, just for baking. Lol!
Jersey Girl Cooks
You had me at ice cream! It's almost 100 degrees today so this made my eyes light up. Love all the other ideas too.
Kim Bee
Lol! So glad to perk you up. I love me some cereal. Way too much.
Hester @ Alchemy in the Kitchen
Drat! Missed Pie Day once again. This looks like an excellent representative from the asylum though 🙂
Kim Bee
There's always next year. Or just make one and pretend it's Pie Day. I did go a little nuts. Like usual.
Juliana
Awesome pie Kim...you are sure very creative! Like the idea of using cereal for treats...
Thanks for this recipe and hope you are enjoying your week 🙂
Kim Bee
Thanks so much. I have such a weakness for cereal. And pie. So seemed logical to combine them in my brain. Lol.
Colleen, The Smart Cookie Cook
Ohhh I used to love this cereal! I'm not sure why; they tasted nothing like cookies. But they're so darn cute! This pie is like...my dream come true. I just wanna plant my face in it.
Kim Bee
Lol, you crack me up. They are a cool snack. I've been munching them this week. Feel free to plant away. There should be room for both of us.
Dee at Deelicious Sweets
Could you just adopt me now?
Kim Bee
Yeppers, sending paper work now. It's okay that it's smeared with ice cream right.
Kayle (The Cooking Actress)
How cool! Cookie Crisp pie!!!
Kim Bee
I got a little crazy up here in the asylum this week.
Ericka@ChefPickyKid
Oh man!! These look so amazing!!! I wish I had Cookie Crisp in my pantry right now. 🙂
Kim Bee
You must go buy some now. It's worth the trip I tell ya.
Erin @ Dinners, Dishes, and Desserts
That was my favorite, and one of the only sugar cereals as a kid! Still buy it every once in awhile for a treat. I love this pie! I so wish I had it in my fridge right now!
Kim Bee
It's just so good. I never ate cereal as a kid cuz I hate milk. So I'm reliving my youth through cereal pies and ice creams. Lol!
kita
I freakin love your addiction to cereals. The good cereals too - not those adult healthy ones. This pie looks great. 😀
Kim Bee
It's like I'm 8 years old and reliving my childhood or something. I'm starting to think I need therapy. I looked at healthy cereal then I did one of those evil villain laughs and grabbed the sugar stuff.
