    A simple recipe for Cookie Dough Ice Cream that lets you cheat a little bit. Or a lot. This is a recipe anyone can make. Mostly because of all the cheating. Hope you get to make this! Then you can cheat on your diet just like you cheated on the recipe!

    Cookie Dough Ice Cream Sandwiches #IceCreamWeek

    A simple recipe for Cookie Dough Ice Cream that lets you cheat a little bit. Or a lot. This is a recipe anyone can make. Mostly because of all the cheating. Hope you get to make this and cheat on your diet just like you cheated on the recipe!

    Ingredients

    • 1 cup whole milk
    • 1 cup sugar
    • 1 teaspoon vanilla
    • 2 cups heavy cream
    • Pinch of salt
    • 1 package of refrigerated cookie dough egg free, broken into bits
    • Store bought chocolate chips cookies

    Instructions

    • In a stand mixer combine the whole milk and sugar. Whisk on high speed until sugar dissolves. (always start slow so you don't splash liquid all over the place)
    • Add vanilla. Give it a quick whir.
    • Add the heavy cream and salt to the mixer. Whisk until it becomes fluffy and almost whipped cream in texture.
    • Cover the bowl and pop in the fridge for at least an hour, or overnight.
    • Remove and transfer to an ice cream maker.
    • Turn on and churn for about 10 minutes, just until it starts to thicken and harden a bit.
    • Now toss in the broken bits of cookie dough. Keep whisking until they mix into the ice cream.
    • Stop the machine and remove the bowl. Cover and pop in the freezer until ready for it. I find it takes about 2 to 4 hours to harden.
    • If you want to make it easier to form the ice cream sandwiches you can forgo freezing it in the machine. Instead pop it in a shallow 9 x 13 inch casserole dish lined with parchment. Smooth it out and pop in the freezer overnight.
    • Now when you take it out you can cut the ice cream with a biscuit cutter or a glass that's the same size of the cookies you're using.
    • Cut your ice cream and place it between two cookies. Press together.
    • Eat right away or wrap in plastic wrap till you need them.
    • Serve with a big old cookie dough smile!

    Aren't these adorable ice cream sandwiches? I had fun with this one. I mean who doesn't love cookie dough. I may have eaten half the package before it went into the ice cream so you may want to adjust the amount you use since my measurement on that one may be off a bit.

    I was suppose to make homemade cookies but it's summer, it's hot in the house most days so turning on the oven just isn't appealing. Once it cools down a bit I want to tweak these and use homemade cookies. For now they are cheater ice cream sandwiches and I'm totally cool with that.

      Sometimes we need quick and easy recipes and I don't mind to cheat if the end result is awesome. No doubt, your cookie dough ice cream sandwiches would be the star in my house. I ll give it to try to the fussy mister, I bet he will enjoy it!

      Sounds like a fun recipe! We just kick the AC into a higher gear when we bake in the summer, so the kitchen stays cool. 😉 But the cheater version is terrific when you absolutely have to have cookie dough ice cream sandwiches right now, and can't wait to bake cookies. Or even mix the cookie dough! Good stuff - thanks.

        Our a/c is so horrible. We need a new one. Even if I don't bake it get over 85 degrees in here, even when it's set to 73/74. It's sad. I loved my old house cuz our a/c was amazing. I baked all summer. Lol.

        These made me happy. I think the key is trying to find egg free dough. Which is difficult. I'm a raw egg worry wart.

        That's actually tile. It's our flooring through our entire upstairs, even bedrooms, the bathroom and living room. We had some extra so you see those ones in almost all my photos. I need to go buy more. Lol. I believe their porcelain tiles. I want to hit up a tile store and see if they have some cast offs or broken ones they'd give up.

      I always appreciate a good shortcut and all the cheating here certainly looks scrumptious!! I don't feel cheated at all. In fact, I feel like I want to lick my screen right now. But that would probably be in bad form and my co-workers would look at me strangely. Plan B: Make these at home ASAP!

      I've never made ice cream this way before. When I'm whipping the cream with the milk and sugar, do I want it whipped to the point where it's no longer a liquid and it's a whipped cream consistency?

        Yeppers, whip till it's thick. Start with whole milk and sugar. Let the sugar dissolve. Then add heavy cream. Works like a charm and no eggs or turning on the stove to heat the house up. It's heaven.
