No Bake Meyer Lemon Cheesecake Shots {Two Ways}

These no bake cheesecake shots are super simple to make. There are two versions of this recipe. One is made with meyer lemon and blueberry. The other is made with only meyer lemon. Both are equally delicious!

I just love no bake desserts.

They make me happy.

I think it’s the fact that you can fool people into thinking you spent all day making cute little desserts…

when you really spent all day watching things like The Real Housewives of Everywhere and Anywhere.

So apparently I’m admitting to getting a kick out of tricking folks.

Not sure what that says about me.

Not sure I really care.

I’ve got a full belly and I caught up on all The Real Housewives this week.

So life is good.

And when life is good you celebrate with not one, but two desserts.

It’s how us lunatics roll.

This week’s Sunday Supper theme is April Showers. Baby showers, bridal showers, we all need recipes that will feed a crowd for these types of events. So when I heard the theme for this week’s Sunday Supper I knew little shot glass desserts was the way to go. Feeds lots of folks and they have that cute factor. Function and cuteness, that’s a perfect combo.

Speaking of perfect combos, I have to say lemon and blueberry is wicked good. It goes together perfectly. The flavours compliment each other so well. If you’ve never tried this flavour combination you need to run into your kitchen immediately and make these. It will change your life. No lie!

No Bake Meyer Lemon Cheesecake Shots {Two Ways}

Simple way to whip up no bake cheesecakes.

Total Time 20 minutes

Ingredients

For the Base:

  • 1 cup graham crumbs
  • 2 tablespoons butter melted

For the Lemon Filling:

  • 1/2 brick cream cheese softened
  • 2 cups cool whip
  • 1 teaspoon meyer lemon juice

For the Blueberry Filling:

  • 1/4 brick cream cheese softened
  • 1 cup cool whip
  • 1/4 cup fresh blueberries crushed

For the Topping:

  • 1 cup cool whip

For the Garnish:

  • Blueberries
  • Meyer Lemon Zest

Instructions

Remember you can get creative with this one. Combine them and mix them up in multiple layers. You can do some plain lemon, some plain blueberry and some with blueberry and lemon.

    For the Base:

    • In a medium sized bowl combine the crumbs and melted butter. Mix well. Press into the bottoms of mini shot glasses.

    For the Lemon Filling:

    • Combine ingredients in a stand mixer and whisk till fluffy.
    • Transfer to a piping bag if you want to fill the shot glasses easily. Fill glasses in any fashion you like.

    For the Blueberry Filling:

    • Combine ingredients in a stand mixer and whisk till fluffy.
    • Transfer to a piping bag if you want to fill the shot glasses easily. Fill glasses in any fashion you like.

    For the Topping:

    • Pop the cool whip in a piping bag with a large tip. Pipe over top of the filling.

    For the Garnish:

    • Top with blueberries or lemon zest.
    • Pop the glasses in the fridge till you are ready to serve them.
    • Serve with a big old lemony blueberry smile.

    Notes

    Mix them up any way you like!
    Standard bricks of cream cheese are 8 ounces. So if you half one it would be 4 ounces. Just a little FYI.

        Awe you are too kind. I use a massive tip so I can pretend I know what I’m doing. I really don’t. I actually suck at it. Lol. Aren’t those spoons cool, my son bought them for me for Christmas. He paid a fortune for them too. I know that cuz he is in his 20’s and doesn’t wrap well, or remove stickers. Ha! They are my fave spoons, so freaking adorable. And thanks so much, love that combo.

      I still have yet to find meyer lemons in my neck of the woods (I’ve haunted all the local groceries) and it’s killing me. Every time I see one of these recipes, I’m howling at the moon in frustration. This one is especially hard. You know how much I love cheesecake. And citrus. I want, I want, I want.

        I wish I could send you some. I still have about 20 or so. I’m going to freeze some slices and curd this week while they’re still fresh. We lucked out cuz they are usually hard to find. Hubs finds them more readily where he works which is a couple hours away. Funny how geography plays into it. Just make it with regular lemons, works just as well. The meyers are just a touch sweeter.

      Blueberry and lemon goes so well together- you’re right! I make this blueberry loaf with lemon frosting and about pee my pants in excitement when it’s ready. But, I would probably get the same excitement from your desserts and don’t have to wait for them to be done nearly as long!!

        Thanks Suzanne. Cool Whip is just a pre-made whipping cream. I use it whenever I feel lazy. Or some days I just grab a spoon and eat it out of the tub for fun. It’s flipping fantastic. You likely can’t have it with your tummy issues though.

      Kim, everything is better in a shot glass, including this cheesecake! I can’t tell you how much I love these – I’d be so thrilled if I saw them at a party. I’d hover around those babies and growl at people who foolishly tried to grab one 😉 Lemon and blueberry is one of my favourite flavour combinations. I’ve never tried meyer lemon before though – I really need to get on that!

      I totoally agree about the blueberry lemon combo! How fantastic is it!!!!! I really should source a meyer lemon tree. I have a mean recipe for bluberry cupcakes with creamy lemon frosting that you may like.
