    This easy recipe for farro with dried cherries and pistachios is super simple to make. Plus, it's healthy, nutritious and filling.

    For me, I love throwing in fun additions when making Farro. It has such a cool texture on it's own but adding some crunch and some chew to it just takes me to my happy place.

    Not going to lie, this girl loves pistachios. I eat them almost every day. Typically, I try to avoid most nuts because they agitate my tummy but pistachios do not. Lucky for me since I would have a hard time giving them up.

    I also loved dried cherries. The combo of pistachios and cherries is one I use often. Honestly, I toss them in rice, Farro, and baked goods. Any day where I get to combine the two is a good day in my book.

    We've been trying to eat healthier these days. I've been having some health issues, and we just decided to make some small changes.

    You may notice there's been a few more salads on the blog. We still bake and eat like 8 years old kids on weekends, but during the week we try to eat a little healthier. It's a good thing, and hopefully these little changes have a positive impact on my health.

    It's not too shabby to be eating healthy when you get to eat pretty dishes like this one. I mean, who could resist this Farro with Dried Cherries and Pistachios.

    What is farro

    • Farro is a high protein and high fibre ancient grain that looks very similar to barley or brown rice.
    • It has a nutty flavour and chewy texture.
    • Farro is very nutritious and packs a serious flavour punch.
    • If you do not have farro on hand you can substitute barley.

    Ingredients

    • farro
    • olive oil
    • dried cherries
    • pistachios
    • dried parsley
    • salt
    • pepper

    Directions

    1. Start by rinsing the farro before cooking.
    2. Then, add the farro to a large saucepan, add water and salt liberally. Bring to a boil, stirring occasionally until cooked.
    3. Next, drain and rinse the farro with cold water.
    4. Place a large skillet on the stove over medium heat, add the olive oil and toss in the pistachios. Turn them so they brown on all sides.
    5. After that, add the cherries and continue cooking.
    6. Next, toss the rinsed farro in the skillet and cook until everything comes together.
    7. Then, add salt and pepper.
    8. Serve.

    Farro with Dried Cherries and Pistachios

    This Farro with Dried Cherries and Pistachios recipe is the perfect healthy side dish. You can also eat this as an easy dinner recipe!

    Ingredients

    • 1.5 cups farro
    • 1 tbsp olive oil
    • ¾ cup dried cherries chopped roughly
    • ¾ cup pistachios chopped roughly
    • 2 tbsp dried parsley you can use fresh if it's handy
    • salt and pepper to taste

    Instructions

    • Rinse your farro before cooking.
    • Add farro to a large saucepan, add water so it covers the farro by about 1 and ½ to 2 inches, add salt, and bring to a boil, cook for about 18 to 22 minutes. Stir occasionally. You can cook it in broth for more flavour if you like, but I did this one plain.
    • Drain and rinse with cold water. Let the water completely drain off.
    • Place a large skillet on the stove over medium heat, add the olive oil and let the oil start to shimmer a bit. Toss in the pistachios, cook for about 3 to 5 minutes, turning them to brown them on all sides. Add the cherries, continue cooking for about 2 minutes. Add a touch more oil if needed.
    • Now toss the rinsed and dried farro in the skillet and cook until it warms back up and everything mixes together perfectly. Add some salt and pepper to taste.
    • You can eat this as a side dish, or a light lunch, or you can toss it with greens for an amazing salad.
    • Serve with a big old healthy smile!

        Me too. I realized I'd never posted a recipe with it. I think most of us reach for rice or quinoa. Easy to forget there's other options. I tend to shy away from anything "grain" because of my tummy. But this wasn't so bad for t.

      Never had Farro~what is it?
      The most healthy thing I like and make is broccoli salad with
      raisins mandarin oranges a little bacon.
      I have celiacs so i pretty much eat breads,pizza,anything good. 🙂

        I have trouble with most whole wheat products. And I can't seem to tolerate quinoa. This seemed more tolerable to my stomach than the quinoa. About the same effect as eating pasta for me.

        I know it's hard to eat a lot of healthy stuff when you can't have wheat or things that rub as they go down. My system is highly responsive to any texture, and stimuli. It's always a gamble trying new things.

        We eat a lot of white rice so I wanted to mix it up a bit. I love quinoa so am trying to find something similar that's not as painful.
