    Fish N Chips

Hey folks. This may be my quickest post ever. It's 3 am and I need to go to bed as my brother is blowing into town tomorrow for a visit. So if you don't see me commenting on your lovely blogs for a few days, never fear, it's temporary. He's only here a short time so want to fit in some quality time when we can. I will try and visit but won't be as stalky as I usually am.

So here it is. Right to the point. Anyone can make this. Super easy and so good even Kiana liked it. She went back for seconds and has already asked me to make it again. So huge hit here tonight when mini-me likes it.

Kim's Home Made Fish N Chips:

    Fish First:

    Ingredients:

1 x 400 gram package of haddock, cut into pieces
    2 tablespoons flour
    Salt
    Pepper
Pancake batter mixed with Perrier fizzy water (carbonated spring water)  instead of regular water or milk

    Directions:

Preheat your oil, I used a deep fryer at highest temp. Any oil is fine.

Mix up your pancake batter ahead of time. I used 1 cup of dry pancake mix to ¾ cup perrier water. Set aside.

Cut up haddock into pieces. Set aside.

In a bowl mix flour, salt and pepper.

Dredge your fish in the flour mixture.

Dip fish in pancake mix and shake off excess.

Drop in oil and cook until golden brown. Should take about 4 to 6 minutes.

    Drain and serve.

    Chips:

    Ingredients:

    5 to 6 russet potatoes
Oil, you could use canola, vegetable or corn

    Directions:

    Preheat oil in fryer.

You can soak potatoes for 30 minutes in water. I usually don't.

Peel and cut up your fries.

Cook them in fryer for about 3 to 4 minutes.

Pull them up and drain them and let sit for at least 2 minutes. (I usually put my second load in and let the first load sit, you are not cooking them fully, this is a double fry method.)

Dunk them back down and cook for another 3 or so minutes until they are golden brown.

    Remove, drain and serve.

So ya, I realize I suppose to be trying to watch what I eat and lose weight. But it was holiday today so I was a little bit bad. Enjoyed it immensely.

    Tip:

Clean your oil in between dishes. I didn't clean it up and ended up with bits of fry pieces on the fish. No big deal unless you like your food pretty and less barnacle-y looking.

    Toodles and smoochies. xx

ps- there will be apple crisp soon. Scott loves it and I didn't get a chance to make it last time he was here cuz Ginger (horse) was pretty sick. So if you like apple crisp be sure to check back in a couple days.

Photos missing due to a G+ incident. Will be restored soon.

It took me about 2 years to drop 40 lbs. I did it with calorie counting and doing my best to get workouts in. Slow and steady. I know not ideal for most. I would eat a dish like this but just account for it. Do you use calorie counting at all? If you do, you should check out Livestrong's MyPlate feature. Really helpful. Okay... back to the food... I want a plate of this. I know my guy would love this too. Better share a plate with him instead. Yummy!

What a handy dany tip to use pancake mix for the batter. I use that a lot to dredge chicken and fish. How clever to mix it with sparkling water. Hope you enjoy your brother's visit.

@ Dzoli- My kids are weenies, they hate the smell of vinegar. I just used some for a reduction and they're walking around holding their noses. They're 17 and 22 so it's really funny actually. Lol! I wanna be a kiwi. Where I live is so ugly!

@ Pretend Chef- This blog is the reason my weight loss blog exists. Lol! I am down 10 which is astounding given the food I eat. I'm just snacking less and moving more. I was on livestrong's site, they do training and weight monitoring as well. I need to go back and sign up properly. This was so good. Even my picky 17 year old who eats nothing had 2 plates and wanted more. lol

Amy and Tiffanie- Thanks. You are welcome any time. This is the bomb. Next time it needs some spice though. Best I've had is in a place called Coal Shed Willie's in Wiarton. That's where the ground hog predicts spring here in Ontario. He lives in a hut outside the restaurant. So weird but true.lol

Russell- Thanks. I love to share.

Cheryl and Adam- Thanks. It was so good and worth the calories. lol

The Culinary Lens- It is so yummy, we have trouble finding good fish places here. There is one. Sad pickings here.

Kelly- Thanks my dear.I bet you could lighten this one up for me.

savoryandsavage- So worth it. I don't even feel bad. lol

      IndieTea- Thanks and thanks.

OnSugarMountain- Thanks, hope you do and come back to tell me unbelievably awesome I am. *giggles*

Adora- Thanks. I was suppose to use beer but we never have any. I can't drink so the house is a wasteland when I go looking for alcohol for a recipe. Sad really.

foodieinnewengland- I mean who doesn't right!

@ Kurt- Oh you lucky, lucky man! I have never been there and would love to go one day. To eat fish n chips in England would be such perfection. Have fun visiting your daughter and think of me (I have no problem with self esteem do I?) while you're eating them. Lol!
