    Ice Cream Sundays- Strawberry Shortcake Ice Cream

    Hi folks. Hope you all had a fabulous weekend. Our weekend will continue as tomorrow is a holiday. So yah for us. Three day weekends are always fun. Kids both have to work but it's all good, they get holiday pay. So another woot woot for the kids.

    So another sunday is upon us. Almost over actually. Got a phone call from a friend tonight which sidetracked me a bit. Was lovely to hear from her though. I adore my gf's so much. I love my hubs and kids but every girl needs her friends sometimes. I have some pretty amazing friends. Really lucky in the friend department if you ask me.

    So I made ice cream for ice cream sunday as always. This week I did strawberry shortcake. I cannot help myself, every time I say strawberry shortcake I see this:

    I cannot help it. It just happens. I say it and the picture just pops into my head. Like magic, she just appears to me.

    Anyhow I wanted to make something different and I had picked up angel food mini cakes at the market as well as strawberries so it just seemed to make sense. Hope you enjoy and try this one out for yourself. So good, who could resist strawberry shortcake ice cream??? Not me that's for sure.

    Strawberry Shortcake Ice cream:


    2 cups strawberries, cut up
    2 cups angel food cake, cut up
    ¾ cup whole milk
    ⅔ cup sugar
    Pinch of salt
    1 ½ cups heavy cream, if you are a fellow Canuck this means whipping cream
    1 ½ teaspoon vanilla

    Directions:

    Hull your strawberries. Put them in a food processor and pulse until they are chopped finely. Set aside.

    Cut up your angel food and set aside.

    With a hand mixer or a stand mixer combine the whole milk, sugar and salt and blend well.

    Stir in cream and vanilla and mix well.

    Add your strawberries and angel food cake and stir by hand.

    Cover and store in fridge for 1 to 2 hours.

    Remove and pour into the bowl of your ice cream maker.

    *MAKE SURE YOU BOWL IS FROZEN COMPLETELY BEFORE THIS. I KEEP MINE IN THE FREEZER ALL THE TIME TO AVOID THIS PROBLEM*

    Turn on and mix for 15 to 20 minutes.

    You can serve immediately or stick in the freezer until you're ready to serve it. If you put it in the freezer keep in mind you need to take it out 10 or so minutes before serving.

    Serve with a smile and enjoy!

    Yup, I have been playing with my camera again. Lol! Are they at all better? It's such a learning experience. Now if I can just learn to get on to manual settings and figure out iso and all that jazz I'd be all set.

      Aww this post made me smile. I used to love strawberry shortcake. I had strawberry shortcake shoes that smelt like strawberries when I was little and apparently I used to put up my feet to smell them. Yes- I was always a classy lady. LOL

      @ Becky Jane- I used to colour her in my colouring books. Had all the stickers. So silly but she brings back good memories. So does Holly Hobbie. Lol! I love ice cream with stuff mixed in. It speaks to me.

      @ Ann- Lol, funny. Now that song is going to play in my head all night long. Lol. I wish the light had been better for those mason jar pics. I need to get a light box or something. I need serious help with photos. I keep getting composition critiques now. Arg! I love my gf's, I am pretty lucky. I have one friend I have had for 39 years,only 1 argument that entire time. I have made oodles of life long friends through the horse world too. I have a great circle of friends and am thankful for it. And now you and other foodie friends. It's so nice when a common interest brings people together.

      @ Lindsey- Rofl, I am now picturing you doing that. So funny. I had bionic woman ones and almost ran right through our big picture window thinking I was invincible when I was little. Lol! I join you in the classy woman department. Dress us up in cartoon runners and can't take us anywhere. xx

      Yum. I used to be obsessed with Strawberry Shortcake dolls when I was little too. I had Huckleberry Finn too. He was cool!!!!
      I wanna make The ice cream. What are angel cakes? What's in em so I can find a substitute? Thanks Kim. Keep up the ice cream recipes. I'm getting my borrowed maker in 2 weeks. Now to decide what flavour to make first.....!

      I loved Strawberry Shortcake (and Blueberry Muffin) as a kid.
      Your ice cream looks wonderful and I love the addition of cake bits.
      The photo with the ice cream in the mason jar is my favorite because really everything looks good in a mason jar.
