    Mini-me's Flatbread BBQ Pizza

    Hey folks. Long time no post. Bah, ya right. I swear I cook WAY  too much and WAY too often. Hopefully you don't get sick of little ol' me. I mean I cannot see how anyone could get sick of me. I am pretty awesome. How could you not love me. I mean I love me. And like I previously stated I am awesome so there you go. Case closed, no getting sick of me cuz me thinks I'm awesome. Wait, does that even make any sense? Okay don't leave thinking I am an egomaniac. I mean at least read the post first. Then you'll see I'm pretty lovable, and silly. So to recap, I'm lovable, silly and awesome, and you are not sick of me cuz me thinks I am awesome. That about sums it up. It makes no sense but it sums it up. So okay, moving on.Tonight was suppose to be Ima Burgers from the Shiksa but I was crazed today. I only slept about 3 or 4 hours last night. Then got up and got mini-me ready for soccer, had her bro drive her so I could go cat and house sit for my brother who lives nearby. Then back for a photo shoot of epic proportions. Then rushed around and had 15 minutes to shower and head off to a movie. We saw "Planet of the Apes" which rocked. Then we went to the bookstore, grabbed a late lunch, headed back to town and started cleaning and blogging. During all this the normal laundry every day, and whatnot. We were going to go to the barn but mini-me wasn't feeling too hot so we stayed home. Mini-me actually made dinner, the only thing I did was throw the cheese in the food processor. She works at a pizza joint in town so she is pretty handy with pizza. So she put it together and I grilled it. Turned out lovely. But mini-me is messier than real-me. And I am flipping messy like crazy. There was food everywhere. Needless to say the cats enjoyed it. So here is tonight's recipe courtesy of mini-me. Hope you enjoy. Prepare yourself for the mess, it is NOT pretty!
    Mini-me's Flatbread BBQ Pizza:


    Ingredients:


    1 package of store bought flatbread (we use fabulous flats from costco 3 pack, they are stone baked)
    3 tablespoons garlic oil 
    2 cans pizza sauce (7.5 fl oz size)
    2 tablespoons sugar
    1 pepperoni, shredded
    2 cups mozzarella cheese, shredded
    Parmesan cheese, optionalDirections:


    Preheat your BBQ.

    Put your flatbreads on cutting boards to make it easier to transport out to your BBQ.

    In a bowl mix sugar and pizza sauce.

    Generously brush garlic oil over flatbreads.

    Generously spread the pizza sauce over the flatbreads.

    Spread your parmesan if you are using it.

    Spread your mozzarella cheese generously over the pizzas.

    Add your pepperoni over top.

    Turn off half your grill burner so you get indirect heat on one side only.

    Take outside and place on indirect heat on your grill.

    Cook for about 5 to 8 minutes depending on your grill and how much stuff you piled on your pizzas.

    Remove and slide onto a cutting board to bring inside easily.

    Cut into pieces.

    Serve with a smile.

    So yup that is our dinner, mess and all. I was going to edit the mess out but wanted you to see it's not all pretty here all the time. This is a real family, cooking real food, in a real messy house. I tend to be ocd about it especially the kitchen, but it's probably our last summer all living together so I am trying to just go with it more and enjoy this time with the kids. Soon enough they'll be grown and gone. And I'll wish I hadn't spazzed so much about the little things and enjoyed my time with them more. I am one of those Moms who can drop everything to spend time with family. It's just how I am. Losing my folks has probably made me realize life is short so live it with no regrets. And eat pizza, lots and lots of pizza.

      I really like today's post, Kim. It's very honest and came from your heart. I agree - life is short and I often think about the same thing, if I'm spending enough time with my family. After blogging for more than half year, I started to understand how things work and how endless blogging can be. So I just drop everything and spend time with my two little kids when they are awake, and shut the computer off (minus iphone). I love your pizza!

      Love the bbq pizza and yes, I agree no one can get sick of you, coz you thinks you are awesome (totally get that!). And lucky you, watching planet of the Apes. Our small town has just one theater and they have been screening Cowboys and Aliens for the second week now!!!

      I have an empty nest now....so trust me...meals and cosy moments like this do create fond memories....enjoy!! nice pizza and time spent with children:)

      @Nami- Thanks. I think it's so easy to get caught up with things so sometimes you just have to step back and remember what's important. I have days I'm online a ton and others I barely check in. Kids are only young once so it's good to make memories. Now that mine are older I know we're coming to an end to all of us being under one roof. I must make good use of this last year with everyone here.

      @Pretend Chef- Glad I could help. We all get distracted by life, it's so easy these days. But after being home with my kids for a staggering 23 years I can honestly say I have never regretted time spent with them. I am so glad I have those memories. I think even people working can benefit from just realizing that being present and in the moment with kids is priceless.

      @kristy- Sure, she is great with pizza and kids. But she will eat you out of house and home. Eats like a dude. lol

      @Shumi- Hey you. Glad you popped by. I am good at thinking I is awesome. lol! I heard cowboys and aliens was a bit out there. Haven't seen it yet. Apes was so good. Hope it gets to you soon. We have to drive to the city for ours. But it's only about a 20-30 minutes drive. And the bookstore is next door so score.

      @malli- I am closing in on an empty nest I think. Maybe one more year. I want them to stay forever but they are not in agreement on that. lol

      @Ann- Thanks. I am, I love summer. Being a stay at home mom means summer rocks for me. Love every minute of it.
