    I cannot believe another week has flown by. Where does the time go? I feel like time is just racing by right now. I have to admit I'm barely keeping up with blogging and life in general lately.

    For the first time in 24 years I am no longer a stay at home mom. I am working part time. It's not a lot of hours but it's hard work. I work at a farm with horses, so every day is an adventure.

    This week with the crazy weather the horses had to stay inside. If you know horses they don't like being cooped up. They are like people that way. Too much time chilling out and they start to bounce off the walls and act a little crazy.

    The other day it had dried up enough that they could go outside in the sand ring to stretch their legs a bit. After being stuck inside all week let's just say it was total chaos. Each pair kicked up their heels and  gave a bucking bronco performance worthy of a horsey Oscar.

    The last pair managed to open a gate that was chained and go prancing off into the field for grass. Mini-me had finished riding our horse, Ginger, and when she peeked out to see how the boys were outside they were gone.

    I could not for the life of me figure out where they went. The gates were freaking locked. I thought maybe they were frisky enough to jump the fence. But no, they somehow managed to push the gate open and jimmy the chain system. Little hooligans.

    Mini-me went one way, I went the other. I heard her yell she found them. As I came around the corner one was in the ring and the other one saw me and bolted. I couldn't help but laugh, it was so funny.

    He must have thought, oh crap there's the strict one and I'm in SO much trouble. He took one look at me and ran for the hills. After I finished laughing, mini-me tried to reason with him but he wasn't having any of it.

    I grabbed a bucket of grain and walked out. Took two shakes of the bucket to get him to come over, put his head down and let himself be captured. I handed him off to mini-me cuz I was still mad at him and she led him back to his boring stall.

    I cannot tell you how panicked I was when we thought they were actually lost. Can you imagine losing other people's horses? Not my finest moment.

    There are days I love them, and there are days I'd like to send them to their stalls in frustration. Most of them are wildly funny and keep me smiling from the time I get there till the time I leave. Being around horses most days is good for the soul!

    This week I've also been freezing my butt off outside. It is quite cold in Ontario this week. So this week's theme for Sunday Supper was perfect for me. "Dishes to keep you warm, a soul warming #SundaySupper" was our theme.

    I am all for that when I come home shaking. This soup is perfect for cold weather. You need to make this. You need to make this asap. You really NEED this soup in your life. Like right NOW. Trust me, you'll thank me later.

    I used Paula Deen's Lasagna Soup recipe on The Food Network as a guide. I changed a couple of minor things to suit our tastes. Paula nailed this one. It's incredible.

    Lasagna Soup

    Lasagna Soup is a packed with flavour yet super simple to make. You can jazz it up with spices any way you like. Add a little cheese or a lot. Your call!

    Ingredients

    • 1 pound ground beef
    • 1 medium sweet onion chopped
    • 1 medium green pepper chopped
    • 3 cloves garlic minced
    • 1 tablespoon brown sugar
    • 32 oz beef broth
    • 28 fl oz can whole peeled tomatoes pulsed in blender
    • 24 oz pasta sauce
    • 1 teaspoon dried basil
    • 1 teaspoon dried oregano
    • ½ teaspoon salt
    • 2 cups lasagna noodles broken
    • 5 oz grated parmesan cheese
    • 2 cups mozzarella
    US Customary - Metric

    Instructions

    • Brown the ground beef, onion, and pepper in a large dutch oven. It should be broken into fine particles and cooked till juices run clear.
    • Add the garlic to the dutch oven during the last minute or two of cooking.
    • Now add your brown sugar, beef broth, tomatoes, pasta sauce, oregano, basil and salt. Bring to a boil. Reduce heat and simmer for about 20 minutes.
    • Add the noodles and simmer until they are tender.
    • Stir in the parmesan cheese.
    • Turn on your broiler. Allow it to preheat properly.
    • Transfer soup into ovenproof soup bowls. Top with oodles of cheese. Place the bowls in the oven and broil for 3 to 5 minutes, or until cheese is golden and bubbly.
    • Remove from the oven and serve.

    Notes

    Beef Broth Notes: You can mix 4 cups boiling water with 1 to 2 tablespoons of better than bouillon beef base if you don't have a liquid broth. 
    Tomatoes Notes: I recommend using San Marzano tomatoes if you can find them. 
    Pasta Sauce Notes: I used Ragu Sauteed Onion and Garlic but any pasta sauce you love will work. Rao is tasty, and homemade is always amazing. 
    Cheese Notes: I highly recommend pizza mozzarella but any mozzarella will work for this recipe.

      Funny story, Kim! Those horses sound like rebellious teenagers! lol! My father had a few horses when I was younger. I always knew they were these magnificent beasts that had personality. I was always terrified of them though. They were huge to me 🙂 Lasagna soup sounds so comforting. And the cheese on top ~ total yum.

        Thanks Lyn. I've got so many crazy horse stories. They are never boring to spend time with. I have some that terrify me too. Depends on the horse. Luckily ours is a total sweetheart so she makes up for all the ones that aren't.

      This was the first thing in my inbox and I can't believe how hungry it made me at 7am. It looks like pure comfort, which is something you definitely needed after your equine troubles. I have a friend whose horse was lost by the person caring for it and it was never found. Bad, bad situation.

        Lol lady. It is such a cool recipe. I don't usually like most soups but this rocked my world.

        Oh man that is awful. I know of people who lost one near a highway. I mean it is seriously scary. Luckily most horses go 5 feet to grass and stand still. I swear if I had my own place I'd be tempted to either gate the whole property or only put one horse out in each paddock to make it easier to take them in and out.

      I could not imagine losing someone else's horses. I can almost see the look on your face because I've seen it when people have let my dogs escape. (They are quite sneaky too and run so very fast). Good thing we have our ways to entice them back.
      Lasagna soups sounds great to me. Something different than the usual pan of lasagna. It's on my to-make list.

        Omg Renee, I honestly could not breathe. I've heard horror stories about such things. Luckily these two guys were fairly mellow and sorta not too smart so they were just eating grass nearby. It's the smart ones you gotta watch out for. I swear I it's so funny when you see people trying to fight with them or coax the horses back. Once you rattle a grain bucket almost any horse is going to come running. Works like a charm when I remember to do it.

        This recipe is killer good. I'm remaking it for the slow cooker. It's just that good that I want to make sure I have a slow cooker option.

        Thanks Isabel. Most days it's fun. It's also super physical so at my age it's wearing me out. But I love being around the barn. The adjustment is about doing me in. Having a hard time keeping up with life. I'm sure I'll get the hang of it. Or win the lottery. Whatever comes first.

      This soup is pretty mind-blowing! At first I was like 'huh?' but the pictures totally sold me. Looks delicious!

        It's a pretty cool thing, but can be dangerous. Two days ago 3 almost ran me down in a showdown for who gets out the gate first. It has it's pluses and minuses. They all get nuts when the weather cools down. Just life with horses.
