    I cannot believe another week has flown by. Where does the time go? I feel like time is just racing by right now. I have to admit I'm barely keeping up with blogging and life in general lately.

    For the first time in 24 years I am no longer a stay at home mom. I am working part time. It's not a lot of hours but it's hard work. I work at a farm with horses, so every day is an adventure.

    This week with the crazy weather the horses had to stay inside. If you know horses they don't like being cooped up. They are like people that way. Too much time chilling out and they start to bounce off the walls and act a little crazy.

    The other day it had dried up enough that they could go outside in the sand ring to stretch their legs a bit. After being stuck inside all week let's just say it was total chaos. Each pair kicked up their heels and  gave a bucking bronco performance worthy of a horsey Oscar.

    The last pair managed to open a gate that was chained and go prancing off into the field for grass. Mini-me had finished riding our horse, Ginger, and when she peeked out to see how the boys were outside they were gone.

    I could not for the life of me figure out where they went. The gates were freaking locked. I thought maybe they were frisky enough to jump the fence. But no, they somehow managed to push the gate open and jimmy the chain system. Little hooligans.

    Mini-me went one way, I went the other. I heard her yell she found them. As I came around the corner one was in the ring and the other one saw me and bolted. I couldn't help but laugh, it was so funny.

    He must have thought, oh crap there's the strict one and I'm in SO much trouble. He took one look at me and ran for the hills. After I finished laughing, mini-me tried to reason with him but he wasn't having any of it.

    I grabbed a bucket of grain and walked out. Took two shakes of the bucket to get him to come over, put his head down and let himself be captured. I handed him off to mini-me cuz I was still mad at him and she led him back to his boring stall.

    I cannot tell you how panicked I was when we thought they were actually lost. Can you imagine losing other people's horses? Not my finest moment.

    There are days I love them, and there are days I'd like to send them to their stalls in frustration. Most of them are wildly funny and keep me smiling from the time I get there till the time I leave. Being around horses most days is good for the soul!

    This week I've also been freezing my butt off outside. It is quite cold in Ontario this week. So this week's theme for Sunday Supper was perfect for me. "Dishes to keep you warm, a soul warming #SundaySupper" was our theme.

    I am all for that when I come home shaking. This soup is perfect for cold weather. You need to make this. You need to make this asap. You really NEED this soup in your life. Like right NOW. Trust me, you'll thank me later.

    I used Paula Deen's Lasagna Soup recipe on The Food Network as a guide. I changed a couple of minor things to suit our tastes. Paula nailed this one. It's incredible.

    Lasagna Soup

    Lasagna Soup is a packed with flavour yet super simple to make. You can jazz it up with spices any way you like. Add a little cheese or a lot. Your call!

    Ingredients

    • 1 pound ground beef
    • 1 medium sweet onion chopped
    • 1 medium green pepper chopped
    • 3 cloves garlic minced
    • 1 tablespoon brown sugar
    • 32 oz beef broth
    • 28 fl oz can whole peeled tomatoes pulsed in blender
    • 24 oz pasta sauce
    • 1 teaspoon dried basil
    • 1 teaspoon dried oregano
    • ½ teaspoon salt
    • 2 cups lasagna noodles broken
    • 5 oz grated parmesan cheese
    • 2 cups mozzarella
    US Customary - Metric

    Instructions

    • Brown the ground beef, onion, and pepper in a large dutch oven. It should be broken into fine particles and cooked till juices run clear.
    • Add the garlic to the dutch oven during the last minute or two of cooking.
    • Now add your brown sugar, beef broth, tomatoes, pasta sauce, oregano, basil and salt. Bring to a boil. Reduce heat and simmer for about 20 minutes.
    • Add the noodles and simmer until they are tender.
    • Stir in the parmesan cheese.
    • Turn on your broiler. Allow it to preheat properly.
    • Transfer soup into ovenproof soup bowls. Top with oodles of cheese. Place the bowls in the oven and broil for 3 to 5 minutes, or until cheese is golden and bubbly.
    • Remove from the oven and serve.

    Notes

    Beef Broth Notes: You can mix 4 cups boiling water with 1 to 2 tablespoons of better than bouillon beef base if you don't have a liquid broth. 
    Tomatoes Notes: I recommend using San Marzano tomatoes if you can find them. 
    Pasta Sauce Notes: I used Ragu Sauteed Onion and Garlic but any pasta sauce you love will work. Rao is tasty, and homemade is always amazing. 
    Cheese Notes: I highly recommend pizza mozzarella but any mozzarella will work for this recipe.

        There is just no way you can control a horse whose brain has turned off. Once the lights go out there really is no one home. I was there 2 days ago and 3 mares, including mine, went spastic in a game of who gets out the gate first. There is usually a pecking order. But the old mare got it in her head she was changing it up and went after mine with teeth bared, then the young mare came up and joined in, mine was running around charging them all up. There was kicking and biting and rearing. And me standing there trying not to get killed. Fun times.

        I am making the slow cooker version for slow cooker saturday. I just had to keep playing with this one.

      Your story with the horses was so charming. I've always wanted to be around horses. When I had the chance to take lessons, I was so overwhelmed by them. So, I admire people who can find that connections with these beautiful creatures.

        I get overwhelmed too trust me. Our mare is tiny, a little arabian so I'm used to petite horses. They have a new Friesian who is massive. I swear he's probably 1400 pounds or more. When he gets edgy with his head in the air it's a frightening thing, but gorgeous. I think you just have to be hyper aware of where they are and always give yourself enough space to pivot around if they get scared and bolt or jump. Now saying that I'll probably get knocked down today. lol

      So comforting and cheesy/gooey! I love the photo with the spoon being lifted out of the bowl and all that 'gooey cheese' pulling up with the 'tomatoey' beef. I am dying for a bowl, now!

      Such fun with the horses! I got bitten badly on the thigh by one several years ago and I still have a large lump on my leg. I was not impressed, to put it mildly. It put me out of action for quite some time. I haven't ridden since but I still like them. But I like your soup better. It's almost a stew.

        Suzanne, did you ever read about the one who almost removed two of my fingers once? I feel for you cuz it hurts when they bite. A friend's horse, actually one of the ones I care for now, was on stall rest. I went to throw him grain in his bucket but the bucket was missing so I sort of paused mid air then he ran and grabbed my hand thinking it was food. He had two of fingers and had me pressed right up against the bars. He let go and I looked and the fingers were there so I just walked it off like no big whoop. Got maybe five or ten feet then felt this throbbing pain. When I looked down one finger was completely swollen and the other seemed half gone. He took about half the flesh from one, it was masticated so badly they couldn't stitch it. Took more than 6 weeks to heal. I couldn't do dishes or cook or anything. Freaking roughest 6 weeks of my life. I now refer to him as my blood brother or the shark. We have a love/hate relationship. Luckily most don't do that stuff. Ours is a sweetheart thank goodness. But some of the others I keep one eye on them every second I'm with them. I love them but have a healthy respect for them. They are big and prey animals so sometimes their brains go into fight or flight and you just gotta beware. When I ride I fall off alot. I have zero balance so me hitting the ground is a regular thing. But then again me walking and falling down is a regular thing.

        It is a heck of a soup/stew. I freaking loved this recipe. This will be made over and over again.

        I freaking love lasagna in any form. It's pure comfort food to me. It's the first thing I learned how to make. I was sceptical of the soup version but holy smokes it's good. You must try it.

        I was the same way. I still pinch myself I own one. It's been hard to keep her since hubs lost his job but we make it work. She's part of the family now. I never told mini-me I loved them and when she was just 3 1/2 she picked riding as her sport of choice. I was floored. I think it took me till she was maybe 6 or 8 to start riding myself. Then it just snowballed. Lessons became half leasing, half leasing became full leasing, leasing became buying. If I had my way we'd have two, one for me and one for mini-me. You should take lessons. *evil laugh*

        I am losing weight daily thanks to the hooligans. It's 10 acres so just walking to the paddocks is a workout.

      I have been looking forward to your recipe ever since I saw your title. Lasagna soup sounds AMAZING. So much simpler then making lasagna and it looks just as gooey and tasty. Thanks for sharing such an amazing recipe. And good luck with adjusting to working part time. It is so hard when you have a full time job(being a mum) and a part time one.

        Yah, I hope it lived up to the title. It is so good. And it gets better the next day.

        I like being home. If I had my way I would still just be home. I mean I love the horses but my heart is at home still. 24 years is a long time, I got sort of used to it so it's been a rough adjustment.

      Welcome back to the work force! What an adventure every day must be for you, working with the horses. And this lasagna soup looks phenomenal, with that bubbly cheese on top and those slices of buttered bread to sop up all the goodness. I love lasagna and I'd gladly devour it in soup form!
