    Mint Chocolate Chip Ice Cream

    Mint Chocolate Chip Ice Cream by Cravings of a Lunatic

    Hi folks. Been awhile since I posted a recipe. For those of you who aren't aware my brother was visiting this past week. For those of you who are aware you can just tune out for a moment. Maybe go grab a snack until I get to the recipe. So anyway, my brother flew in with his lovely girlfriend Donna. I adore Donna, only get to see her once a year. Scott I see about 3 times a year. We try to drop as much as we can while they come down. Hubby couldn't this time as he just started a new job. But the rest of us tried to maneuver as much as we could. We had a blast during the visit. If you haven't checked out my previous post you really should. It shows a day of fun in pictures, and let me tell ya, those were some priceless pics. Mini-me hates her photo taken and does not approve many to go on the blog. But she approved these ones so you'll actually get to see her. There's pictures of B too who loves to have his pic taken and never cares what I put up of him on the blog or facebook. You can clearly see he has no shame when it comes to photos. There's some of the two of them that are priceless. So was very happy mini-me gave the nod to share them with you guys. And you can see why I just don't understand why this girl hates having her pic taken. She's gorgeous, I'd be having mine taken non-stop if I looked like that. In fact I'd hire paparazzi to follow me everywhere if I looked like that. But mini-me is shy and reserved and not into trying to impress people. Gotta love it.

    So I shall try to catch up on my recipes over the course of the next few days. I'll probably double or triple up my posts for a few days until I get them done. I also have a couple posts from a challenge I need to put up. You'll have to excuse the increased frequency for a few days. Hopefully you will be so blown away by the food you won't care how often I post. I will post two of the ice cream recipes solo. Then I'll place the third in with my ice cream sunday post coming to you very late. But it is coming. As is my linky love list. So hang on to your hats folks. You are going to be all kinds of jealous and hungry soon. Nothing makes me happier than making you hungry. So let's get the ball rolling.So we ate A TON of food while Scott and Donna were here. Thursday we went out for chinese food at a buffet in town. Was very good. Friday we had pizza from where mini-me works, it's Scott's fave pizza place and we always have to order from there when he's here. Saturday night we had smoked meat sandwiches, Aerosmith potatoes, and salad. Sunday we had a picnic for lunch with sandwiches and salads. Lots of fruit and chips to snack on. Then we had a late dinner of lasagna and garlic bread. My nephew and niece love my lasagna, as do Scott and Donna. So it's a required meal during visits. Monday I made french toast with flavoured butter, sausages, eggs and fruit. Hubs did pancakes. During the visit Donna picked up apple pie and a cake. I also made mint chocolate chip ice cream, pistachio ice cream, triple chocolate/ cherry/ walnut ice cream as well as 2 kinds of bark. So yah, we all gained 20 pounds but were happy as clams. We didn't eat clams though,  mini-me is allergic.

    Mint Chocolate Chip Ice Cream:


    Ingredients:


    15-20 mint leaves, pulsed in food processor
    1 cup whole milk
    ¾ cup sugar
    Pinch salt
    2 cups heavy cream
    1 tablespoon vanilla extract (you could use mint if you don't have fresh mint to use)
    2-4 drops green food colouring
    1 cup milk chocolate chips

    Directions:


    Pulse you mint leaves in your food processor until they are teeny tiny, set aside for them to dry a bit

    In a mixer add your whole milk, sugar and salt. Whisk until smooth and sugar is dissolved.

    Stir in heavy cream, vanilla extract and mint.

    Cover and stick in the fridge for 1-2 hours.

    Remove bowl from fridge and transfer the mixture to ice cream freezer bowl.

    Add your chocolate chips.

    Add your food colouring.

    Turn on and mix for 15-20 minutes.

    You can either serve immediately or put it in the freezer until you are ready to serve it. Make sure you pull it out 10-15 minutes before serving if you put it in the freezer.

    Serve with a smile.

    *Makes 5 cups*

      What a wonderful weekend! We had out-of-town family as well! Don't you just love it when family comes to visit? Food, food, and more food! Your menus sound awesome and your dessert - well - not much to say except "I WANT SOME!" Love the mint chocolate chip! Can't wait to see the others.

      That is my pick out of all the 31 flavors at baskin robbins-so I know homemade would be awesome. This recipe has been bookmarked. Glad you got to spend some fun time with family!

      I was lunching with Ann (from cooking healthy for me) and she was raving about your site (calling you Kim, not Kim Bee) and I had to come over. Then it was like wait...I know her! So after admitting that I am insane...I must say that I love the ice cream.

      @Tina- I love when people bookmark stuff. Makes me smile. You can't see me but I'm grinning from ear to ear right now. Love it. This is so good. I tend to go for chocolate at the ice cream stores. And if they have good old twist soft serve it's always my first choice.

      @Kristen- That is so sweet of Ann to rave about me. I am pretty rave worthy sometimes. Comes with the big head. Lol! I wish I lived close enough to go out with you gals. Did you go spice shopping? I am happy to hear you are already a fan and already insane. It makes the transition for reading me easier if you start out that way. *big grin*
