    No Bake Cake in Jars

    No bake cake in jars is a fun dessert recipe that you make in little mason jars. This layered no bake cake is sure to impress your guests.

    Happy 19th Birthday Mini-me!

    Here's a stupid poem that doesn't rhyme or make sense to anyone but us:

    You are awesome...

    and gorgeous...

    I'm grateful for you...

    and to you...

    even though you poke me in my weirdly sensitive arm incessantly...

    just to annoy me...

    I forgive you...

    but only because...

    it's the end of the world today too...

    which I think might be all your fault...

    for poking me in the arm...

    incessantly...

    you've angered the gods...

    or whatever...

    but I still love you...

    incessantly!

    So, today is mini-me's big old 19th birthday. Yup, she's legal drinking age in Canada.

    Scary, I know. But it's okay. Mom will still kick her ass if she shows up hammered. It's part of the mom oath. We will embarrass you, love you, and kick your ass when needed.

    Speaking of embarrassing, mini-me tends to be a private sort of gal. I have to get photo approval for any picture of her I post on the site. I have to ask her permission before writing about her on the site.

    Basically she is my editor. So, I have to be careful what I say and how much information I share. She's private, and sensitive and really strong. So you don't want to chuff her off.

    Case in point, recently something sort of exciting happened. It happened while I was away at Mixed.

    It happened on her and boytoy's 1 year dating anniversary. I didn't find out about it till I got home.

    A few days after I got the news I asked her if I could write about it. She said no, it was weird and she didn't want everyone to know every little detail about her life.

    So I "promised" I would not tell you guys. I "promised" I would keep the news under my hat and I "promised" not to spill the beans. Also, I "promised" to keep her secret and I "promised" to keep boytoy's secret. That "promise" "rings" true.

    I am far too diplomatic to get all creative to try to tell you about a "promise" or find ways to hint about things like "rings".

    Honestly, I would never. It's just not in me. *starts bubble wrapping her weirdly sensitive arm in preparation for the incessant poking*

    Mini-me and Ginger

    Here's some things I can share about mini-me:

    • She can tune out anyone at any time under any circumstances.
    • Would be the safest person to be stuck in a zombie apocalypse with.
    • She can make better pizza than her mom, but don't tell her that.
    • Has the coolest tattoo in the world, which I went with her to get.
    • She is good at everything she does.
    • Eats way too many sour patch kids.
    • She can consume more chocolate and stay thin than any human on the planet.
    • Never makes her bed.
    • She will give up her bedroom to let her mom use it for a studio and sincerely not care she got the little room.
    • Fearless, sarcastic and has a twisted sense of humour. Just like her mama!

    Mini-me and B-Dude in Fargo

    That is mini-me. She is awesome, weird, hilarious, odd, amazing, dorky, cool and a giant nerd. I am proud to be her mom.

    Mini-me is a low maintenance kind of gal when it comes to food. She likes simple, super easy recipes and she likes junk.

    Luckily I like all those things too so I can cook for her easily. This week I made her favourite cake. Her favourite cake is the easiest, simplest, coolest cake you'll ever make.

    So, to mix it up since I've already posted a version of it I decided to change-up the way I presented it. I give you "No Bake Cake in Jars".

    It's basically zebra cake or wafer cake stacked in little jars. Which is adorable and perfect for Christmas or Birthdays or any holidays really.

    Everyone gets their own little cake. And no one else's germy little fingers get on my piece of cake. Score!

    Win 1 for mom. And germaphobes everywhere. You're welcome!

    No Bake Cake in Jars

    No bake cake in jars is a fun dessert recipe that you make in little mason jars. This layered no bake cake is sure to impress your guests.

    Equipment

    • 8-ounce Mason Jars

    Ingredients

    • 9 ounce chocolate wafer cookies
    • 4 cups cool whip or whipped cream more or less if desired
    US Customary - Metric

    Instructions

    • Use either a spoon to drop, or piping bag to pipe, cool whip into small mason jars. You want a thin layer on the bottom of each jar.
    • Place a cookie to the jar.
    • Then, add another layer of cool whip.
    • Place another cookie in the jar.
    • Keep layering until you reach the top of the jar.
    • Swirl a little extra cool whip on top.
    • Place in the fridge for 12 to 24 hours. The longer you let it set the softer the wafers become. They soften to the point of a cake like texture.
    • Remove from fridge.
    • Serve with a big old cake loving smile

      Happy, Happy Birthday to Mini-Me!! She sounds awesome. But the world did NOT end, so you're going to have to do something about that arm poking! lol

      Hooray for things that happen while you're away at Mixed, especially when it's not that One Thing... 😉

      I love Zebra cake. I love it. I use those wafer cookies and whipped cream. Sometimes I dunk the cookies in milk as I assemble it, for maximum gooey-cakey goodness. And just now, I'm thinking that it might not be a bad idea to dip them in Bailey's first. I mean, only if you're of drinking age.

      Which brings me back around to your daughter's birthday! I hope she has the best!

        I love chocolate too. Mine is always Black Forest. No ones else in the family loves it like I do so I torture them on my birthday. Okay total lie, we get two cakes that day. Lol.

        Thank you. She really is. And low maintenance too, no makeup or anything. I keep offering and she refuses to wear it. Kudos to her, I am too dependent on mine.

        Falls down laughing. I think I stayed out all night cuz my dad always said I could do what I wanted once I was 19. So I was determined to see if it was true. He never said a word, just gave me a look. Worse than yelling I swear.

      My 19th birthday was TEN YEARS AGO. You think I can remember that far back? I barely remember what I did this morning. I barely remember what pair of underwear I put on in the morning...five minutes after putting it on.

      My 19th birthday was the first birthday I spent w. Nate. And we could not legally drink. But there might have been beer anyway.
