No Bake Strawberry Cheesecake

No Bake Strawberry Cheesecake by Cravings of a Lunatic

This may be one of the easiest cheesecakes you will ever make. I love cheesecakes that are baked in the oven, but some days I just do not have time to mess around. When I have days like that I do things like this. That way I get an amazing dessert without sacrificing hours in the kitchen.

Whipping Cream Week continues. This one uses it in the filling. It’s a great way to use up spare heavy cream you may have around the house.

Today is our last day together before B-Dude heads back. We’ll spend about half a day together before we make the trek to Toronto. This is all hinging on the weather since we seem to be having yet another winter storm. It’s also contingent on puppy being okay. I am heading out with her in about an hour to the vet. Hopefully it’s nothing serious. If all goes well I’ll spend the night in Toronto with B-Dude, then drive him to the airport early in the morning. After that my plan is to hang out with Izzy from Crumb. So let’s all cross fingers the weather mellows out and the puppy is okay. Otherwise I’ll be seeing Izzy in the spring. Have I mentioned how much I hate winter lately?

Winter blows!

Since today’s theme seems to be rushing and doing things quickly I am just going to cut to the chase today. Here’s some pics, the recipe, followed by a giveaway. How’s that for speedy delivery?

No Bake Strawberry Cheesecake by Cravings of a Lunatic

No Bake Strawberry Cheesecake

Easy no bake strawberry cheesecake that uses real cream.
Prep Time 15 minutes
Total Time 15 minutes
Servings 1 large Cheesecake

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs
  • 6 tablespoons butter melted
  • 2 tablespoon sugar

For the Cheesecake Filling:

  • 3 packages of cream cheese 8 oz size, softened
  • 1/2 cup sugar
  • 2 cups strawberries frozen or fresh, divided
  • 1/2 tub cool whip 8 oz
  • 1/2 cup heavy cream

For the Garnish:

  • Whipped cream either homemade or store bought
  • Strawberries

Instructions

For the Crust:

  • In a medium sized bowl combine the graham crumbs and butter. Mix until well combined. Pour into parchment lined 9 x 13 pan. Press down firmly.

For the Cheesecake Filling:

  • In a stand mixer combine the cream cheese and sugar, beat until well combined and fluffy.
  • Add 1 1/2 cups of the strawberries and the cool whip. Beat until well combined.
  • In a blender or magic bullet combine 1/2 cup of the strawberries and the heavy cream. Mix until thick and creamy. Add this to the stand mixer and beat again until incorporated really well.
  • Pour over the graham crust and smooth out.
  • Place in the fridge for at least 4 hours.
  • Garnish with whipping cream and strawberries.
  • Serve with a big old strawberry smile!

Notes

You can use any fruit in this one.
This is a no bake cheesecake so it's not as thick when you slice into it. Make sure you let it set up for at least 4 hours.

    I would love to win this pan! My brother loves cheesecake- it’s his favorite dessert. However, he has a hard time with portion control! Making the individual ones means I could freeze them for him!

    Yum!! I love quick, easy recipes and if I don’t even have to turn on the oven? Even better!! Hope the weather holds off so B-Dude can make his flight and definitely hope the puppy is alright 🙁 As for that cute cheesecake pan, I think I would make a banana cheesecake. I’ve been on a banana kick lately and thought to myself just yesterday that I’ve never had bananas in cheesecake and then you post this adorable mini cheesecake pan. Must be fate 🙂 I don’t even own a mini cheesecake pan. Only the big ones so I think either way I need to buy one! Thanks for the wonderful recipe and giveaway.

      B did in fact make his flight, we hit some black ice on the way but we coped.

      Puppy is a-ok for now. She has a kneecap issue. Nothing urgent but as she gets older she may need surgery.

      You totally have me craving banana cheesecake now.

    Well isn’t that a pretty pink cheesecake! Nice about the no-bake part.
    If I won the cheesecake pan the first cheesecake I would make is either a chocolate or possibly a chocolate peanut butter one. Or perhaps one with coconut. Hmmm… decisions, decisions.

    Before I say anything else, I just want you to know how much I like it that you stress everything in pink font.

    That pan is cool. I am sure that my fam would like boring old cherry topped NY style cheesecake. I would have to make something full of sugar and gluten because 12 little cheesecakes would be way too dangerous if they were gf.

      I love plain old boring cherry. It’s my absolute fave. Next to chocolate cherry that is.

    Your cheesecake looks delish!!. Since it is a 12 serving I would make 12 individual being different cheesecakes. This is a tough one but I would have to do 12 different fruits or Kaluha,Baileys,Creme De’Menthe & so on. Something fun,freeze them for a nice warm summer day & then enjoy!

      Abso-freaking-lutely. Just use a hand mixer. Or mix by hand with a whisk if needed.

    I’d probably make a light cheesecake of whipping cream and cream cheese mixture with a layer of melted chocolate on the bottom, layered with a dark chocolate ganache and topped with a toasted pistachio sprinkling.
