    Pink Lemonade Ice Cream Pie

    This Pink Lemonade Ice Cream Pie is a great option for anyone who loves a delicious dessert without a lot of effort. It's quick, easy and so delicious!

    Anyone who knows me will tell you I love frozen treats. Honestly, I make a lot of homemade ice cream recipes because I'm so obsessed with playing with different flavours.

    You can also find a collection of ice cream floats on my blog. I can never get enough of them. There's something so fun about making ice cream floats. They remind me of childhood and I dig nostalgic treats so much.

    I'm also a big fan of homemade milkshakes, in all flavours. When I was a teenager I worked in a restaurant that had milkshakes on their menu. I quickly became the one to ask if you wanted a customized flavour. Whipping up fun over the top milkshakes was a perk of the job.

    One of my favourite flavours is pink lemonade. It's such a fun twist and you can do so much with it. The possibilities are endless.

    Today I whipped up an easy pink lemonade ice cream pie and it was outstanding. I highly recommend making this yummy dessert during the warmer weather!

    Pink Lemonade Ice Cream Pie

    This Pink Lemonade Ice Cream Pie is an incredibly easy dessert that is perfect for parties. If you like Pink this pie is for YOU!

    Ingredients

    • 2 cups nilla wafers crushed
    • 2 tablespoons butter melted
    • 2 quarts vanilla ice cream softened slightly
    • 2 cups whipped cream, homemade or store bought divided
    • 1 individual packet crystal light pink lemonade
    • 1 to 2 cups shredded coconut or to taste
    • 1 to 2 drops red food colouring.
    US Customary - Metric

    Instructions

    • Crush the nilla wafers in a food processor by pulsing until they resemble fine crumbs. Add the melted butter, pulse again.
    • Press into a pie plate.
    • In a stand mixer combine the ice cream, ½ of the whipped cream and crystal light packet. Whisk on high until well combined. If you want it to be a darker pink you can add some food colouring. Pour into the pie plate and smooth out. Place in the freezer for about 4 hours, or preferably overnight.
    • Pull out the pie about 10 minutes before serving and top with the remaining ½ of the whipped cream. If desired top with the pink coconut.
    • Pink Coconut Optional topping:
    • You can make the coconut pink fairly easily. Start with a small amount of coconut on a glass bowl. Add 1 drop of food colouring and mix thoroughly, then add more coconut until you get the colour you want to achieve. Toss over top of the pie just before serving.
    • Serve with a big old pretty in pink smile!

      My two favorite flavors are pistachio and vanilla fudge swirl...or anything with coconut..or nuts..or mocha...;) so difficult to pick a favorite!

      My mother used to make Pink Lemonade Pie for me (I wanted that instead of B-day cake growing up!) when I was young. It used frozen pink lemonade and cool whip (along with evaporated milk and a few other things). I'm going to give this a try just to see if it brings back memories! Thanks for posting!

        Hey Ayngelina. Actually both the thing under the food and behind it are tiles. I go to home depot or lowes and buy cheap tiles for photo backdrops. The one under it is marble. But what you can't see is it's broken. We bought an irregular, broken piece and paid half. We'll cut the broken end off and it's good as new. Any tile with a chip or imperfection they will usually discount. So it's a really inexpensive option.
