So I decided I wanted to make a nice lunch today. It was just me and B-Dude home so I can be adventurous when he’s here. He tends to be pretty easy going with food. He will eat just about anything, and likes almost everything. He does NOT get this from me. I am picky like Mini-me. I do find as I get older I am a little more willing to try new things. B-Dude is always game for new recipes or experiments. So it can be quite fun to cook when he’s around.
So I took the leftovers from the roast and whipped up a nice pita. I just winged it and added what I felt like adding. Turned out pretty good. I like to use up leftovers. We are on a bit of a budget these days so I like to stretch things when I can. Personally I cannot wait until my hubby is done school and gets a good job again. Been a trying couple of years here. No good cuts of meat in this household these days. LOL!
I hope you try this one. It was quite yummy. A bit messy as pitas tend to be but that’s half the fun. So the finished version looks like this:
Leftover Roast (or small steak)
1/4 Red Onion
1/4 White Onion
1/4 Green Pepper
1/4 Red Pepper
2 tbsps VH General Tao’s Stir Fry Sauce
1/3 cup Beef Broth
Tzatziki Sauce (I bought this at Costco, you can get it just about anywhere these days)
4 pitas (I used white Lebanese style pitas, I like the flatter versions, do not care for thick Greek style)
Cut up lettuce. Set aside.
Cut up onions and peppers into thin strips. Set aside.
Cut up leftover roast or steak into thin strips.
In a saute pan over medium heat heat up a little olive oil and then add in the meat. If you are using leftover roast it won’t take long to cook. If you use steak it will take a bit longer. You want it to just start to brown.
Then add the onions and continue cooking until they start to go golden.
Add the peppers and continue cooking for a few minutes
Now add the Stir Fry Sauce and broth and continue cooking until the liquid absorbs. It should only take a few minutes over medium heat. Stir well while it cooks.
Heat the pitas for a few seconds in the microwave. Place on plate.
Top with a few generous spoonfuls of the meat mixture.
Add lettuce generously.
Spoon over the tzatziki sauce to taste. I used about 2 tablespoons per pita. If you don’t love it less is okay.
Fold over the pita and you can wrap it with waxed paper to hold it in place or use toothpicks.
Let me know if you try this one out. Always enjoy good feedback. I would love to try making gyros one day but I would think it’s quite hard. One day maybe I’ll find the nerve to tackle it. For now I’ll experiment with other meats.
No idea what’s for dinner at the moment. Was considering pita pizzas but we’ll see how I feel when the time comes. Was hoping to make some brownies as well. Have some strawberries I thought would be nice with the brownie. Again we’ll see how the day goes. Some days I plan ahead, some days not so much.
