Comfort food means different things to different people. For me comfort food means recipes that make me think of my childhood. Comfort food to me is recipes I grew up with, those old family favourites that take me back to being a kid. Life was simple back then, so was the food we all ate.
There are some recipes that just bring me right back to that place, this is one of them. I was a picky eater when I was a kid. I still tend to be a bit of picky eater. My mom had such a hard time feeding me. My father was one of those parents who made you eat whatever was on your plate, and every darn bite of it.
My Mom was completely different. She just wanted us to enjoy our time at the table and love the food we ate. Her expectations were simple, she just wanted us all to be happy. So when my Dad wasn’t around she went out of her way to make sure we loved what we ate. That eating wasn’t always a battle.
Mom loved simple recipes, mostly because she didn’t really love to cook. She was a riot and loved many things in life, but cooking wasn’t one of those things. If a recipe was complicated she hated it. If a recipe was simple she loved it. It was just that black and white to my mom. She had a thing for easy recipes.
We grew up eating a lot of things that were breaded. She loved fried food but my Dad wasn’t a fan of it. So my Mom learned pretty quick that you simulate fried food pretty well by baking it with breading on it. You would get moist, tender meat on the inside and crispy crunch on the outside. Mom loved that.
Pork chops, and chicken were her go to meats for baking with breading on them. We ate a lot of breaded pork chops and breaded chicken. I’m not going to lie, I loved both of them. She cooked them to perfection. The inside was always tender, and the outside always had the perfect crispiness.
When I think back on my childhood I have so many happy memories that involve food and cooking. The kitchen is the heart of the household. It’s where memories are made and lifetime bonds are formed. Most of my favourite memories happened in my childhood home, in the kitchen.
Now I make those same memories with my own hooligans. We cook up great recipes with products we love. One of those products is Progresso™ Bread Crumbs. Back in the day my Mom used prepackaged mixes. This girl makes her own. I love whipping up breading for chicken, pork and fish.
We swung by Walmart to pick up a few containers of Progresso™ Bread Crumbs so I could work on recipe development for this post. As I usually do, I fell back on a recipe I’ve made time and time again for my own hooligans. Tried and true recipes that are hooligan approved. Those are my favourite!
My daughter is a picky eater like I was. She’s now in her 20’s and while she still tends to be pickier than my son, she is definitely more adventurous than she used to be. She loves chicken strips. She tried them at a restaurant when she was out with her friends and fell in love with them.
This is my spin on the recipe she loves. She’s a plain jane kind of girl when it comes to food. The plainer the recipe, the better. She has simple tastes and she’s not afraid to let you know it. This is my spin on her plain jane recipe for breaded chicken. Mom always has to amp it up a little bit.

- 6 boneless skinless chicken breasts
- 3/4 cup greek yogurt
- 1 cup slivered almonds crushed
- 1 cup Progresso™ Bread Crumbs
- 1/4 cup fresh parmesan cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoons dried parsley
- 1 cup greek yogurt
- 1 teaspoon almond extract
- Salt and pepper to taste
Preheat oven to 400 degrees F. Line a large rimmed cookie sheet with parchment paper. Set aside.
Cut the chicken in thin strips. This is finger food so keep that in mind when cutting pieces. You want people to be able to pick them up easily and dunk them.
Scoop 3/4 cup of greek yogurt into a shallow dish so you can dredge the chicken in it easily.
Place your almonds in a food processor and pulse until they resemble fine crumbs. If you don't have a food processor you can use a rolling pin and ziploc bag.
Pour the crushed almonds in a large shallow bowl. Add the bread crumbs, parmesan cheese, salt, pepper, and dried parsley, then mix well.
Now dredge each chicken strip in the yogurt, be sure to coat all sides well. Then dunk each chicken strip into the crumb mixture. Shake excess off lightly and place each piece on the cookie sheet. Repeat until all pieces are coated and on the cookie sheet.
Place the cookie sheet in the preheated oven and bake for about 15 to 20 minutes. You want the breading to be golden brown and crisp. I like mine well done but if you like yours lighter in colour just adjust the time down a minute or two.
While the chicken cooks you can whip up the easy dipping sauce.
Combine 1 cup greek yogurt, almond extract, salt and pepper in a small bowl and mix until thoroughly combined. Pour into a nice serving bowl and chill until needed. We like ours cold, not room temperature.
Remove the chicken strips from the oven and place on a platter. Place the dipping sauce on the same platter.
Serve with a big old chicken strip loving smile!
