Breakfast Toast Recipes. 4 Ways to make quick, easy and healthy breakfast toast that the whole family will love!

I'm a sucker for fresh fruit, especially for breakfast. This goes back to when I was a kid. When I was younger I was a very picky eater.
Breakfast was always the hardest meal for me to find something I liked to eat. Fruit became my go-to in the morning.
My all time favourite fruit for breakfast has always been cantaloupe. As long as I can remember cantaloupe has graced my breakfast plate.
While it may be my favourite, I'm an equal opportunity fruit eater. Raspberries, blueberries, apples, watermelon, oranges, and every other sweet fruit on the planet are enjoyed year round in our household.
My regular readers know we've been battling the flu at our house the past few weeks. My daughter was hospitalized for pneumonia. She is okay now, thank goodness. They ran I.V. fluids, antibiotics, and pain meds while she was there.
As we have all started to slowly recuperate our cravings have all leaned towards fresh fruit. Lots of vitamin C and healthy antioxidants are a must.
I decided to whip up some breakfast toast for all of us. I was not satisfied to only make one kind so I decided to make 4 different varieties. It's just how I roll, even when I'm sick.
My goal was to make a recipe anyone could make in a few minutes. We all need more quick and easy recipes in our lives.
I used cream cheese for this recipe but you can swap that out for goat cheese, ricotta, mascarpone, or even almond butter. Be creative and think outside the box.
Breakfast Toast
The first recipe is uses Apples, Pecans, and Honey. Apples are chock full of fiber and they are also known to boost your immune system. Which was super important to us right now. I added pecans and honey for an extra boost of flavour.
The second recipe uses Blueberries, Coconut Chips, and Honey. Blueberries are high in antioxidants and are incredibly heart healthy. I paired them with coconut and honey for a serious crunch with a hint of sweetness.
The third recipe is Breakfast Toast with Cantaloupe, Pistachios, and Honey. Cantaloupe is amazing for people like me who have IBS. It aids in digestion and hydration, plus it helps with inflammation. I paired it with pistachios and honey.
And the fourth recipe uses Raspberries, Coconut, and Honey. Raspberries are rich in antioxidants, plus high in fiber and rich in vitamin C. I paired them with toasted coconut and honey for added flavour.
We enjoyed every last bite of these Breakfast Toast Recipes. After 4 weeks of the flu and pneumonia running rampant, it was so nice to get back in the kitchen and create something for my readers.

Breakfast Toast: 4 Ways
Ingredients
- 16 slices of bread lightly toasted
- 1 granny smith apple cut into thin wedges
- 1 gala apple cut into thin wedges
- 1 cup blueberries whole or sliced if desired
- ½ cantaloupe use a peeler to cut thin strips
- 1 cup raspberries whole or sliced if desired
- 8 ounces of light cream cheese more if desired
- ¼ cup chopped pecans
- ¼ cup coconut chips chopped
- ¼ cup chopped pistachios
- ¼ cup toasted coconut
- ¼ cup honey for drizzling
Instructions
Breakfast Toast with Apples, Pecans, and Honey:
- Lightly toast 4 slices of your favourite bread.
- Spread on a light layer of cream cheese on each slice.
- Spread cut apples on each slice.
- Sprinkle the top of each slice with chopped pecans.
- Drizzle each slice with honey.
Breakfast Toast with Blueberries, Coconut Chips, and Honey:
- Lightly toast 4 slices of your favourite bread.
- Spread on a light layer of cream cheese on each slice.
- Spread blueberries on each slice.
- Sprinkle the top of each slice with chopped coconut chips.
- Drizzle each slice with honey.
Breakfast Toast with Cantaloupe, Pistachios, and Honey:
- Lightly toast 4 slices of your favourite bread.
- Spread on a light layer of cream cheese on each slice.
- Spread cantaloupe pieces on each slice.
- Sprinkle the top of each slice with chopped pistachios.
- Drizzle each slice with honey.
Breakfast Toast with Raspberries, Coconut, and Honey:
- Lightly toast 4 slices of your favourite bread.
- Spread on a light layer of cream cheese on each slice.
- Spread raspberries evenly on each slice.
- Sprinkle the top of each slice with toasted coconut.
- Drizzle each slice with honey.
Serve with a big old fruit loving smile!
