    Easy Mini Meyer Lemon Tiramisu

    More Meyer Lemon Madness. This is the last recipe in a 2 week themed event I wanted to share with my readers, called Meyer Lemon Madness.

    Well....

    I hate to disappoint you but there's more Meyer Lemon goodness coming your way. There's a Meyer Lemon Madness finale called Meyer Lemon Recipe Round-Up. I'll share my Meyer Lemon recipes with you, as well as some by other bloggers. It's quite a collection of Meyer Lemon recipes, and I look forward to sharing that with you. I also decided to do some Meyer Lemon Desserts for Sunday Supper this week as well. I mean I do still have boatloads of Meyer Lemons people. So there's still more to come. I still need to share my Meyer Lemon Pasta, and my Meyer Lemon Bake. It's Meyer Lemon mayhem folks.

    After tomorrow's post I'll give a week reprieve though. No lemon recipes for a week. How's that?

    Instead I'll be sharing Grilled Cheese Week with you. Since it's the month of the classic sammie, I decided to whip up a few to share with you over the course of a week. There will be a classic, a not so classic, a spicy version and even a dessert version. So make sure you tune in next week for Grilled Cheese Week. It's sure to be a blast.

    I'll also be sharing some subscriber news with you next week. I've put together a post explaining why some of you are getting duplicates and what you can do to fix it. I decided since I was doing that I would also make the shift to Feedblitz and share that info in the post as well. And just to really take it over the top I've done some fun graphics to help those who aren't sure how to navigate the site learn to do it more effectively. Cuz I love you all and want to make your visits as pleasant as possible. It's how I roll.

    Easy Mini Meyer Lemon Tiramisu

    Easy Mini Meyer Lemon Tiramisu

    Easy recipe to make a light, fluffy dessert that will wow your guests.
    Prep Time 15 minutes
    Total Time 15 minutes
    Servings 4 Mini Trifle Bowls

    Ingredients

    For the Base Layer:

    • 8 ladyfinger cookies broken into pieces
    • ½ cup Meyer Lemon juice
    • 1 tablespoon sugar

    For the Lemon Layer:

    • ½ brick of cream cheese 4 oz, softened
    • 4 cups of cool whip
    • 1 teaspoon lemon extract use lemon juice if you don't have extract

    For the Top Layer:

    • 2 cups cool whip
    • Zest of 1 Meyer Lemon

    Instructions

    For the Base Layer:

    • Break cookies into pieces and lay in bottoms of mini trifle bowls.
    • In a small bowl combine the meyer lemon juice and sugar, mix until sugar dissolves. Pour over top of the cookies in the trifles bowls.

    For the Lemon Layer:

    • Mix the ingredients in a stand mixer, or hand mixer and bowl, until well combined and fluffy.
    • Pour over the cookie portion. Smooth out.

    For the Top Layer:

    • Pipe whipped cream over top of the lemon layer.
    • Place in fridge for about 3 to 4 hours to let the liquid absorb into the cookies.
    • Remove from fridge and garnish with lemon zest.
    • Serve with a big old Meyer Lemon smile!

    Notes

    You can use regular lemons in this.
    I had to take the photo before the liquid absorbed into the cookies. If you let this set up for about 2 to 4 hours the liquid will soften the cookies.
    You could also use nilla wafers in this recipe for the base.

    This is so zesty and tangy it will knock your socks off. Plus it's such a simple recipe. Any one can make this dessert. I love recipes like that. Quick and easy is my fave way to roll.

    I'd like to thank all my readers for allowing me to drive you mad with Meyer Lemon Madness these past two weeks. It's been a blast and I've enjoyed delving into the depths of Meyer Lemon Madness. For me it's not over, I still have about 30 Meyer Lemons hanging around the house. Luckily I love Meyers so they will not go to waste at all. I'm thinking Meyer Lemon and Coconut Layer Cake. I'm thinking Meyer Lemon Marmalade. I'm thinking Meyer Lemon Vinaigrette for Salad. Okay is it sad that as Meyer Lemon Madness winds down I really don't want it to end. I'm already thinking of a new theme, Meyer Lemon Mayhem folks. One woman's struggle with her meyer lemon addiction. If this is wrong, I don't want to be right.

      OK, you're now officially double royalty: both the Turtle Queen and the Meyer Lemon Queen! I love lemons, but even I'm going into overload. But of course now I get to overload on grilled cheese sandwiches next week! Really good stuff - thanks;.

        I am not sick of them yet at all. Isn't that crazy. I can't wait till hubs gets home so I can do a new lemon chicken bake. The downside to him being gone is it's hard to cook cuz it's just me and mini-me. She doesn't eat much meat, and no chicken so I find my cooking takes a hit when he's gone.

      I finally found Meyer lemons at my local grocery store. I hate to make you drool but a bag was only 2.99! Can't wait to try these!

        Lol, yup that's the usual price. Was it 4 in a bag? That's what we get here. Sometimes they go $3.99 but mostly $2.99. You are going to have so much fun with them.

      Oh I definitely must try this. I made the Meyer Lemon Parfaits for a potluck lunch for 12 and everybody loved them. Two wanted the recipe as they were having a dinner later that week and they even borrowed my little mugs. I used the mini beer mugs instead of the shot glasses. Thank you.

      You must have gotten a truckload of meyer lemons this year! ALL of your recipes are fabulous! Wish they weren't so expensive here, I'd love to test out lots and lots of your recipes!

        I really did. Hubs just kept showing up with more and more. He works out of town so while they are hard to find here, he found tons a couple of hours out of town. Weird how that happens. I think we paid about $2.99 for a bag of 4 on most occasions. Definitely not as cheap as regular lemons.

        Ha, I'm so surprised you haven't tried them. Hopefully you can find them easily where you live. They are SO hard to come by here. We usually have to drive 45 minutes away to find them. They are sweeter than regular lemons. You have to try them Megan. They will rock your world. xx
