    Red Velvet Hot Chocolate

    This easy red velvet hot chocolate recipe is simply delightful to sip on a cold day. Curl up with a mug of this, a good book, a cozy blanket and roaring fire nearby.

    Equipment

    • 4-Quart Saucepan
    • Whisk
    • Mugs

    Ingredients

    For the Red Velvet Hot Chocolate:

    • ¼ cup cocoa powder
    • ¼ cup hot water doesn't have to be boiling, just hot
    • 4 cups milk my preference for hot chocolate is 2%
    • ¼ cup brown sugar
    • ¼ cup corn syrup
    • Red food colouring use the gel as it gives the deeper red hue you want

    For topping:

    • Mini Marshmallows
    • Whipped cream
    • Sprinkles for the rims of mugs

    Instructions

    For the rims:

    • Before you begin you need to decide if you want to decorate the rims of the mugs. If you do this step needs to be done before making the hot chocolate. You basically take corn syrup and rub it around the rim of the mugs. Then put your sprinkles on a plate or in a large bowl and dunk the rim in it. Roll it around so you get them everywhere. Set aside while you start the hot chocolate.

    For the Red Velvet Hot Chocolate:

    • In a saucepan whisk together the cocoa powder and hot water. This just ensures the cocoa powder breaks up and you don't get bits of it floating after you cook this. Works like a charm when using powder. It basically looks like a thick sludge but trust me it's worth it. Once you get it all mixed with no powdery bits left you can turn the stovetop on to a medium-low heat. Quickly add your milk, and brown sugar. You need to continue to mix it while it heats up. The key with hot chocolate in my opinion is heating it but not letting it boil. You want to heat it up gently so you don't scorch it.
    • Once it's hot enough to serve remove from the heat. Add the corn syrup and red gel food colouring. Mix carefully so you don't splash red dye everywhere. The gel mixed with the cocoa powder is what gives red velvet a nice deep red colour.
    • Pour into mugs.
    • Top with mini marshmallows or whipped cream.
    • Serve with a big old happy and grateful smile!

    Notes

    You can swap out the cocoa powder for chocolate pieces. Or mix both in this.
     
    You can hit the hot chocolate with a touch of heavy cream right at the end to thicken it up a bit if desired. It's a good tip for a nice hearty hot chocolate.
     
    Mixing the water and cocoa powder is something I learned back in the day from my mom. It works like a charm so you never get those crazy little flecks of powder while drinking hot chocolate. You basically use a tiny bit of water and mix it with the cocoa powder till it's a sludgy mixture. Doesn't sound appealing I know but it's the best way to describe it. Then when you add the milk and heat it all up you will not have lumps.
     
    Corn syrup rules in hot chocolate. If you are anti-corn syrup use honey.
     
    You can also do the rims with water but I find it makes the sprinkle colours bleed. So I use corn syrup.

      I am grateful for my husband and two daughters, Through this past awful year, with poverty (and no end in sight), not being able to give Christmas gifts, being in daily pain that's increased since an unsuccessful brain surgery, they still hug me, give me tons of kisses and keep my hope alive for a better 2014.

        I love family traditions. We have oodles. The tree ranks high. We usually do a second tree with all homemade ornaments, usually we make a ton of gingerbread people and animals and use those. If you poke the tops with straws you have a hole to tie ribbons through to hang them on the tree. So much fun. Enjoy them while they are young. They grow up way to fast.
