    Steak Saturdays

    Hi folks. So we slept in yesterday which was a lovely treat. I even turned off my phone so no one could bug call me. Sometimes you just have to shut the world off. The quickest way to do that is to shut off the phones. You should try it some time. Very liberating. Since my phone doubles as my alarm clock I just woke up when I felt like it. Again, you should try this. It is amazing. Your body gets you up when it's ready to get up. What a concept. Of course it meant I got up at 11 am but hey, it's what my body wanted. Who am I to argue?!

    So this meant the whole day got shifted around. We usually eat late but this was really late. We ate lunch at dinnertime. Crazy! We had to run out for my daughter to hand in a resume at a local grocery store. So we picked hubby up and headed into an even smaller town than we live in to get some corn. Yes LOCAL SWEET CORN IS FINALLY OUT! Sorry but I am so excited. I could eat it every single day. And I pretty much do during corn season. It does not last long here so you want to enjoy it. Especially at the start of the season when they are little and the taste is to die for. They did not have the corn I prefer. Peaches and cream always hits us first then after much anticipation "GOLDEN NUGGET" finally arrives. I cannot wait. I also like others, there is a white one that I love called Silver Queen. Seneca is another goodies as is super sweet which can mean many varieties here. It's a mystery which one you'll get, they just call them super sweet and hope you don't know there are more than one kind. I love me some corn, far too much. I am actually not suppose to eat it. It is a stimulant for my IBS. Doc says no, Kim says bite me! What's a little pain and discomfort in the bigger picture. I love it, I eat and I pay for it later. But it's worth it. I just try not to eat it if I am going somewhere special. So I try never to plan anything special during corn season. Easy peasy solution if you ask me.
    Anyhow I digress. This was lunch. And it was so good! Ever tried Chipotle Pepper Olive Oil???
    Chipotle n BBQ Sauce Steaks:
    Ingredients:
    3 strip loin steaks
    Salt
    Pepper
    Chipotle Pepper Olive Oil
    BBQ sauce of your choosing, I use Bulls Eye as it is my daughter's fave
    Directions:
    It's best if you take steaks out about 30 minutes before grilling. They should not be cold when you cook.
    Rub them generously with salt and pepper.
    Brush on the chipotle pepper olive oil to taste.
    Place on a preheated grill for about 7 to 8 minutes each side depending how thick they are and how you like them done. I like well done so adjust your time if you like rare.
    Now add BBQ sauce on each side and flip them so the sauce sizzles right into it. Messy but a step I like for taste. Makes the edges just a bit crispy. Cook only for a minute or two each side.
    Remove from grill and let stand for about 5 minutes so juices redistribute. I know it's tempting to just eat immediately but don't do it.
    Serve with a smile. (and some corn)
    Corn on the Cob:
    Ingredients:
    Dozen ears of corn, peeled
    Salt
    Butter, use the real stuff. This is no time for dieting!
    Directions:
    Buy local corn. Local always better.
    Peel corn.
    Put a giant pot of water on stove or BBQ and bring to a boil.
    Once at a boil, drop corn in and cook for 7 to 8 minutes.
    Remove with tongs.
    Slather with REAL BUTTER and sprinkle on some salt.
    Try not to smile and make yummy noises as you eat it, I dare ya!!!
    I also bought some garlic toast at the store and just slapped it on the grill for a few minutes on each side. I can make my own but did not feel like it today. Lol.
    This is our meal. Try not to hate us!
    Wait until you see what I am up to today. It will require two posts and you will need Kleenex cuz you will be crying from jealousy. Just remember I warned ya. I was going to workout and follow the diet today but I am throwing caution to the wind and declaring today my FREE DAY! Bolt down your baked goods people. I've barely snacked or misbehaved all week. It's CHEAT DAY  and nothing is off limits. The possibilities are endless. The tummy ache is imminent.

      Tori- Lol, I am, It's averaging between 90-100 degrees here and our humidity is killer. There's warnings not to go outside today. I cannot turn my oven on and it's killing me. But if I do it gets too hot in here. I have to use the oven today as I have to do my daring kitchen recipe I am late on. Thanks, the steaks were good. Got a deal and bought a cart load to freeze for the summer.rofl
