    Steak Stir Fry, Yes I Ate Veggies Again!

    Okay so we had stir fry for dinner. I had to whip up a fast recipe as I got home late from the barn tonight. Luckily I had marinated some steak and it was already cooked, we had leftovers from a BBQ night. So I experimented with a new balsamic I had bought. Very unusual flavour for beef, normally I would do it on chicken or pork. But I felt adventurous so I just winged it. I mean if it was bad we could just order pizza. So why not get a little crazy. I had bought this last week:

    It is a wild cherry balsamic vinegar. Again, I would not normally go cherry on beef but I was feeling crazy. So this is what I did with it.

    Yup, I know you are drooling right now. Jealous even. And shocked the Lunatic is eating veggies again. Here is the recipe and I hope you enjoy it. I sure did. Almost went back for seconds. Almost!

    Steak Stir Fry a la Lunatic:

    Ingredients:

    For the Meat Marinade:
    2 small sirloin steaks
    1 cup kraft zesty italian dressing
    ½ cup wild cherry balsamic vinegar

    For the Basmati Rice:
    4 cups water
    2 cups basmati rice
    1 tablespoon vegetable bouillon
    Dash of salt

    For the Meat n Veggie Stir Fry:
    Same sirloin steaks post marinade, cut into strips
    ½ cup red onion, sliced
    ½ cup white onion, sliced
    ¼ cup shallot, sliced
    1 cup red pepper, cut into strips
    1 cup green pepper, cut into strips
    1 cup orange pepper, cut into strips
    1 cup yellow pepper, cut into strips
    Olive oil as needed, start with about 2 tablespoons

    Directions:

    For the Meat Marinade: (do this step ahead of time, it takes time to marinate.)
    Whisk the dressing and oil together well.
    Add steak and marinate overnight. You could do it for less time if you want. Even 30 minutes is fine for marinade.

    For the Basmati Rice:

    Bring water to a boil.

    Add bouillon.

    Add a dash of salt.

    Add basmati rice, cooking at a boil for 5 minutes.

    Lower temperature to a simmer and cook for about 15 to 20 minutes.

    Fluff with a fork.

    Optional- you can add some butter to it to but I did not.

    Set aside until needed.

    For the Meat n Veggie Stir Fry:

    Spray a saute pan with non stick spray.

    Add olive oil and turn pan on medium heat.

    Cut up your onions and shallots

    Add onions and shallots when pan is hot, turn down heat a little bit and continue to stir them until they start to caramelize. Should take about 15 to 20 minutes to go a nice light golden colour.

    Meanwhile cut up you your peppers.

    Once the onions are almost caramelized, add your peppers and continue cooking. Continue cooking for a few minutes.

    While that is happening cut up your steak into small strips.

    Add the steak into the pan and cook until meat is cooked, it should be browned and juices running clear. Should only take a few minutes, probably about 5 to 6 minutes. If you are not comfortable cooking it with the veggies just do it in a separate pan then add it to veggies.

    Putting it all together:

    Lay your rice on a plate or in bowl.

    Add your veggie and meat stir fry over top.

    Enjoy!

    Tips and hints:

    As you are cooking feel free to add more olive oil if things start to dry up. I do this during the process. Every oven cooks a little different. I have a gas top so you can also try tweaking the temp down or up a bit if you have an electric stove top.

    Feel free to add spices. I did not simply as with the balsamic being such a strong taste I did not want to tinker with it. I wanted to taste the cherry and see it works with the beef. Which it did oddly.

    Yes sir-ie bob this is one lovely meal. And it had veggies. I came, I rocked, I scored!

      Absolutely you can. That is why cooking is so much fun. You can see a recipe you like but then tweak it to suit your tastes. Let me know if you try it.

      Stir fry is one of those meals that does not take a lot of time yet is really satisfying. Great choice for dinner and lovely mix of veggies!
