Summer is not complete until you indulge in plenty of stone fruit stir fry. This recipe combines sweet cherries, rainier cherries, peaches, plums and apricots. Walnuts add a little crunch. This is the perfect topping for ice cream and shortcakes.

There are just some recipes that make my heart skip a beat. Some that are timeless and perfect in every way. This recipe is one of them.
If you are a regular reader you know I love over the top desserts. This one is over the top in taste, yet it is so simple to make.
We love stone fruit season in our house. Each member of the family has their favourite stone fruit. Rainier cherries are my absolute favourite.
When Circulon invited me to participate in The Summer of Stir Fry I knew right away I wanted to pick the dessert category for my recipe submission.
We love easy desserts and we also love stir fry so it was an easy leap to combine them. This is simple to make, and cooks in a flash.
You can add any type of fruit that you dig, or is in season. You can mix up by adding different spices like cinnamon and nutmeg. Or lots of nuts.
You can use the base recipe over ice cream, or turn it into sundaes by adding some jam into the stir fry during the last few minutes of cooking. Or use it over a basic shortcake with whipped cream.
The photo shown at the very top of this post is this stone fruit stir fry over top of mini shortcakes, then topped with whipped cream, and ice cream. I have to admit that one was spectacular.

Stone Fruit Stir Fry
Ingredients
- 2 tbsp walnut oil
- 2 cups peaches pitted and cut into wedges
- 1 ½ cups plums pitted and cut into wedges
- 2 cups sweet cherries pitted and halved
- 2 cups Rainier cherries pitted and halved
- 1 cup apricot pitted and cut into wedges
- 2 tsp light brown sugar
- 1 cup chopped walnuts
Instructions
- Lightly grease wok, stir-fry pan or large skillet.
- Pour walnut oil in wok, and turn stovetop to medium heat. Let the walnut oil heat up – it will start to glisten when it is ready for the fruit.
- Drop the firmest of the fruit in first. Add peaches and plums first, allow those to cook for 8 to 10 minutes. The fruit should start to soften.
- Add the sweet cherries and Rainier cherries next. Continue to cook for about 2 to 3 minutes.
- Add apricots and brown sugar. Cook for 2 to 4 minutes more. Cook just long enough to soften the fruit slightly, and allow the sugar to caramelize
- Turn off the heat and toss the walnuts over top. Stir until everything combines perfectly
- Remove from wok and transfer to serving bowl.
- This recipe can be eaten plain, over you can serve it over over ice cream or shortcakes with whipped cream.
- Serve with a big old stone fruit loving smile!
