Get your booze and veggies too with this deliciously refreshing Strawberry Ginger Kale Daiquiri
Welcome to Day 2 of Booze Week. I'm off pulling a fun prank on my kids today. My son flew in for vacation, so I'm off work for 10 days. Today I'm forcing the entire family to go see Teenage Mutant Ninja Turtles against their will. My son was such an obsessed, avid fan when he was little. So as payback for all the hours I've put in watching it when he was younger I made them all go see it, even though they didn't want to. I'm cool like that. I'm be laughing my head off while they cringe in their seats. Yes, I'm Kim, and I have a weird sense of humour.

Hello Cravings of a Lunatic readers! My name is Davida and I blog over at The Healthy Maven. It may seem weird that I write a healthy food blog but jumped at the opportunity to create a boozy drink recipe for Kim, but soon you’ll see why…
As much as I preach ALL THE KALE, I also think a healthy lifestyle requires a hefty dose of alcohol. If it doesn’t work for ya, more power to you but I know for a fact that I am a better person after a glass (or three) of wine.
But sometimes wine isn’t gonna cut it and you need the hard stuff. However, I am only 24 and do not feel mature enough to be drinking any type of alcohol straight up. I consider myself in the life-phase where sugary, bright-coloured drinks are still socially acceptable. Or so I tell myself.
But just because I drink like an 18 year old on the beach in Mexico, doesn’t mean I need to put myself into a sugar coma. I’d also like to make it through my 20s without developing scurvy so I figured it’s a win-win scenario if I mix some kale with my booze.
You see, I consider hiding vegetables in your food/drinks a real hobby of mine. Some of you play a sport, or knit or binge-watch the Kardashians. I sneak kale into your daiquiris. Different strokes for different folks, ya know?
Now before you get your panties in a bunch, I promise you cannot taste the kale. You can thank the ginger for that. It also managed to mask the rum, which then led to me drinking both servings of this recipe. At 2:00 PM. But hey, at least I ate my veggies!

Strawberry Ginger Kale Daiquiris
Ingredients
- 2 cups frozen strawberries
- 1 cup ice
- 1 T honey
- 2 tsp dried ginger divided (1 tsp for daiquiri mix and 1 tsp for rim)
- juice 1 lime
- 3 ounces rum 2 single shots
- 1 cup kale de-stemmed and chopped
Instructions
- Add all ingredients to a blender and blend until smooth.
- To make ginger “rim” on glass, take squeezed lime and run over the rim of two cups. Roll cups in dried ginger until coated.
- Pour daiquiris equally into two glasses.
- Serve immediately.
