Sweet and Sour Cipolline Onions:
Ingredients:
1 and ½ cups red wine vinegar (recipe calls for 2 but I had to adjust as I was short on red)
1 and ½ cups white wine vinegar (recipe calls for 2)
3 tablespoons granulated sugar
3 tablespoons firmly packed brown sugar
¼ teaspoon salt
1 pound/500 g cipolline onions
Directions:
Use a non reactive saucepan and combine both vinegars, both sugars and salt in it.
Bring to a boil over medium-high heat, stir to dissolve sugars.
Add the onions and cook until softened. Recipe says 2 to 3 minutes but it took mine double that. So cook for 5-6 minutes. They are done when soft when you pierce them with the tip of a knife.
Let cool for 1 hour.
Transfer onions to a non reactive container and make sure the onions are fully submerged in the liquid.
Cover and let stand for 1 week at room temperature, this allows the onions to mellow and become more flavourful.
You can serve these with cheese or sliced meats.
Are these not the coolest things. I would suggest going with more red wine vinegar so the colours pop more. So gorgeous. Enjoy.
As always, toodles and smoochies. xx
Photos missing due to a G+ incident. They will be replace soon.Â

They look delicious. I love pickled onions. My dad used to make the vinegar himself for these ... I have never tried so far but keep telling myself I need to try to make them.
Kelly
Mmm I love onions and this is such a great idea, fantastic! 🙂

Chris- Thanks so much. I just popped over to check out your blog and was so jealous you have a cherry tree of your very own.

Cipolinne onions are my favorite! Never pickled them though. I bet they're good! I know my vinegar lovin' hubby would enjoy them. 🙂 Thanks for the great use on cipolinnes!

Thanks Andrea. I was so excited to share this one. It was just fun to do. I am not a big vinegar person but I am making an exception for these.
Mr. Pineapple Man- I have not laughed that hard in awhile. I stopped by your blog and was in hysterics over the pics. My daughter was a bit worried when we saw the first one but we cruised through and had a blast. Very entertaining.

What a cool idea! I'm trying to remember if I've ever had these types of onions before. But if you say they go well with wine and cheese... I'm sold!
Juanita
Very cool...home made and all!
When I was little (as in, like, 8 years old), I remember that my mom could give me a fork and a jar of pickled mini onions and I would finish the whole thing.
Weird taste buds for a child in retrospect.
Kim Bee
Lindsey- Thanks. I may try them cooked up with steak too. Will keep everyone posted.
Juanita- Was a fun thing to try. That is hilarious you liked those as a kid. Most kids like sweet stuff. Funny!

I dunno...they sound great! I love onions and pickled onions in particular! Well done! The fact that they'll keep? That's BONUS! Great post...buzzed it!
Kim Bee
I was shocked to read they last up to 6 months. Gotta love the pickling power of vinegar. I want to try them with something this weekend. Just trying to decide what to mix them in. Thanks for the buzz. I got you on that guest post. You did an amazing job. Really enjoyed reading it.
Anne
I love to saute sweet cipolline onions. And I could also drink vinegar or pickle juice straight from the jar. So I think this is the recipe for me!!! (And can I come visit at your villa when you get one?) : )
Kim Bee
Anne- I think I may saute them with some steak this weekend. You can totally come visit me when I get a villa. I'll make sure to stock up on vinegar before you come.
Sarah
Pretty! I have lots of plans for these little onions already!
Kim Bee
@ Sarah- I'm so glad you like them. They are just so cool. Hopefully they taste as good as they look.
