Amazing and simple hash recipe that's perfect for any brunch or breakfast plans!
Serves: A lot of bacony goodness. Oh ya, there\\
  • 1 pound of bacon, cut into cubes
  • 3 large russet potatoes, cut into cubes
  • Salt to taste
  1. In a large cast iron skillet cook the bacon over medium low heat. Stir quite often to keep it from sticking. Cook until browned the way you like it.
  2. Spoon out the bacon and set aside. Do not get rid of bacon drippings. You want that.
  3. Pop the potatoes in the skillet in the bacon drippings and cook potatoes until they are golden brown. Mine took about 15/20 minutes. It will vary depending on your pan, stove and size of your cubes.
  4. Pop the bacon back in the pan and stir until well combined.
  5. Transfer to a plate lined with paper towels to drain off excess fat.
  6. Transfer to a serving bowl.
  7. Serve with a big old bacon loving smile!

Ha, I always forget to say add pepper and salt to taste cuz I freaking hate pepper. You can have my share of pepper. xx

omm nom nom nom I love that you call for an entire pound of bacon. That’s my girl, I’m hungry and I want this now! Walked by the deli on the way to work and smelled bacon. I suffered through yogurt for breakfast. BAAAACOOON!!!!

    • Kim Beaulieu says

I know right. I should have weighed the cooked portion to be accurate cuz some of it was lost to noshing while cooking. Oh you poor dear, I ate a pound of bacon and had yogurt. I’ll balance it out tomorrow and eat a yogurt in your honour. Oh wait, I’m having Turtles French Bread for breakfast tomorrow. *evil laugh*

Bacon does indeed rule! I’d probably cook some onions along with the potatoes but that’s just me. And maybe just a touch of garlic. But otherwise I’d make it exactly the same way you do (and actually have, often, in the past!). Good stuff – wonderful for breakfast or even as a dinner side.

I did a batch with some jazz for a future post, ha. I had to do it. You know me with shallots and onions. This is such a great standby right. Perfect for any brunch get together.

    • Kim Beaulieu says

You’re welcome for brunch any day lady. I’ll even candy the bacon for you. Make it extra special.

Dee-lish! Sounds like bacon and potato heaven! If I could, I’d have my friend over for breakfast…..her name is Fiona!

    Hugs always girlfriend!

Thanks Kim. All nice recipes. In particular I love the potatoes and bacon as well as the Chipotle Skillet dish.
