Super easy to make and absolutely delicious. Perfect for strawberry season, or use frozen berries all year round. Enjoy!
Hello from Miami. I'm just getting ready to leave this hot inferno today. Been a blast. Nothing is more fun than hanging out with fellow foodies all weekend.
Speaking of fellow foodies, today you can find me guest posting over at my friend Kayle's. She is the genius behind The Cooking Actress. I adore this gal so very much. Kayle is just the sweetest lady in the world. She's so upbeat and hilarious. I love her outlook on life.
Kayle is moving so she asked some of her blogging peeps to help her out. I jumped at the chance to hang in her 'hood for the day. I always get supremely nervous when I guest post for people. Then I write these ultra conservative posts for them because I'm never quite sure if they really mean it when they say "just be yourself". Being myself means dropping f-bombs, raiding your fridge, drinking all your pepsi and talking non-stop when I know I should stop. So being myself never seems like a good option. Except here. Barring the f-bombs of course. On the blog, not so much in life.
So I was getting ready to attend blogher food last week. You know you have to do all the errands and appointments that lead up to the big day of travel. So I basically booked everything in one day. On Wednesday I took my daughter to the dentist, took myself to the dentist and then scooted over to my doctor. Only the day did not go that smoothly. I woke up sick, likely the stress of knowing I was going to be travelling. So I had to reschedule my daughter's appointment because all 5 attempts to leave the house failed. I came home and decided to make good use of my time. I popped something that was due soon for the blog on the grill. Then I popped something else in the oven, also due soon. A few minutes later we hear this crackling sound, then a large pop, then we look over and the oven is on fire. Literally. So we got everything under control, I'll have to get it fixed after the conference. So I took the chicken that was in the oven out to the grill. Well, the grill ran out of propane. So I started using my toaster oven. Nice right. Living the food blogger's dream.
The day gets better though *dripping with sarcasm*. Or more amusing might be the right word. When I was done cooking I ran to brush my teeth before going to the dentist. When I was done I whacked the toothbrush on the side of the sink to get the water off, something I do every day. Well this day the water shot up into my eye, and there must have been toothpaste still on it. You would think I poured acid in my eye, it was that painful. My eye swelled up, couldn't open it for a few minutes, then lots of watering and pain. Who gets toothpaste in their eye? I mean seriously? My life is beyond weird.
We ran off to the dentist, everything went great and no cavities for me. Mini-me is being referred to have her wisdom teeth removed. Productive appointment. Everything was going great. Until I left. Hubs had met us so he could take mini-me home and I could go to my doctor's appointment, then go pick up a new shirt or dress for the trip. They drive off, I waved goodbye, life is good. Until I pulled away, pulled up to an intersection and I had no brakes. I'm not even kidding. None. No brakes at all. I looked over and there's a semi truck coming down the road. Luckily I was going slow and managed to put in park without ruining our transmission. The driver checked on me, I think he thought we were both goners. Scary stuff.
So the SUV had to be towed home, the oven is broken, the grill has no fuel and I'm leaving for a trip. Seems like a good time to go home. Only to have the cat and the dog go running out the door to play in the yard. Um, indoor cat. Not sure what he was thinking. Puppy and kitty are now safe and sound. Their mom is super annoyed with them both though. No dessert for the pets tonight on account of their bad behaviour.
So needless to say life is never boring at the Beaulieu compound. Getting away is just what the doctor ordered. Well, not literally. She actually ordered Ativan so I could remain calm for my trip. Yah for calming drugs.
Okay, so enough rambling endlessly. Make sure you swing on by Kayle's blog, The Cooking Actress to get the recipe for this Strawberry Cobbler. While you're there poke about and check out all her amazing recipes. You will love Kayle as much as I do. Make sure you follow her Facebook, Twitter, Pinterest and Instagram.
Toodles and smoochies! xx
Kayle (The Cooking Actress)
oh my GOSH-Kim!! You poor thing! Agh the insanity! I'm so glad you're ok at least!
*phew* and also you're adorable and I love you and cmon....who are you talking to? Sans the pepsi that stuff totally relates to me too (including f-bombs in life but not on blog lol). Yourself is awesome sauce 😛 Thank you so much for guest posting for meeee!
Kim Beaulieu
I know right. I still can't believe how much happened before I left.
I am so happy I was able to guest post. You know I adore you woman. Hope the move went okay.
John@Kitchen Riffs
Wow! You pack more into one day than most of us do in a year! We had to replace our stove recently -- the element in the oven just wouldn't turn off. Had to turn off the stove at the circuit box. Convenient, right? We had some other appliances that were getting on in age, so we basically replaced everything (except for the refrigerator, which is pretty new). Then of course we didn't like the way the new appliances looked with our counter tops (which we never liked anyway -- a former owner of the house put them in, and because they were in perfect condition we couldn't bring ourselves to replace them). So we ended up replacing those, too. Anyway, off to read your guest post . . .
Kim Beaulieu
Ha, I really do. I should learn to slow down at some point.
Ack, that's awful. I can't believe you had to go through that to cook. But at least you got new appliances which is always fun. I am dying to get new counters. Ours are still the original of the house. Sort of hideous.

I've never had strawberry cobbler so I'm off to check out the recipe. I'm glad you had a good time in Miami. 🙂
Kim Beaulieu
Thanks.
Miami was a blast.
Jen
So jealous of all my foodie friends! Hope you had fun and can't wait to hear all about it!
Kim Beaulieu
It was so much fun. Wish you were there.
Choc Chip Uru
I already love Kayle, and you Kim, so it makes sense you too guest posting together would fill me with love 😀
Now if only I had strawberry cobbler in my stomach!
Cheers
Choc Chip Uru
Kim Beaulieu
Thanks lady. Feel the same way about you. xx
You need to make it. It's so good.
Anna (Hidden Ponies)
Oh man, sounds like Miami WAS just what the doctor ordered...hot sunny Ativan 🙂 Can't wait to hear about the trip, and I love this cobbler!
Kim Beaulieu
Ha, ativan is a trip. I took one on the way home and went loco. It was so embarrassing.
Thanks. Cobbler is so amazing. Can never get enough of it during the summer.
Nancy @ gottagetbaked
Holy fuck, Kim, that's insane! Worst day ever! Thank GOD you were able to stop before being crushed by the truck. I can't imagine anything more terrifying (and I'm always imagining dying from a fiery, horrific death. For example, every time I drive over a bridge, my mind starts conjuring up images of me going over the bridge into water and wondering how in the hell I'll escape from the sinking car. I don't know what's wrong with me!). I hope that your weekend in Miami made up for that day from hell. Btw, fabulous cobbler.
Kim Beaulieu
Right. I had the worst day ever. Thank goodness I wasn't on a freeway when it happened. Scary.
Miami was a hoot. I had so much fun.
Cobbler rules the world.
Lauren Kelly Nutrition
First off, this recipe looks AMAZING!! Secondly, I am so happy I had the pleasure of meeting you and hanging out with you at BlogHer!! I am sorry you had such an awful day leading up to the conference. I need to make this cobbler soon! XO
Kim Beaulieu
Thanks Lauren. I love a good cobbler.
I had a blast meeting you. My cohort for taking too much swag. So hilarious.
Kim (Feed Me, Seymour)
I swear, it is feast or famine when it comes to being busy and having crazy things happen. Either way, this strawberry cobbler looks great so I'll take it! 🙂
Kim Beaulieu
It really is. I had such a nutty day. I kept thinking it was a sign not to go on the trip.
Thanks, I love cobblers, they are so summery.
Marjory @ Dinner-Mom
Heading over to check out the recipe. It looks delish! Sounds like BlogHer was a big success!
Kim Beaulieu
Thanks. Hope you like it.
Blogher was a riot, so busy though. Never been to one where they try to jam in too much stuff.
Julie
Looks great for spring! It was so nice to meet you!
Kim Beaulieu
Thanks Julie.
It was, I had so much fun. It was a wild conference though right. There was just too much going on. Hard to fit it all in.
Ginny McMeans
What a story! I was afraid to finish it. My eyes just kept getting bigger and bigger. You are a stronger person than me, for sure! The coobler looks fantastic by the way.
Kim Beaulieu
Ha, it sounds like a Seinfeld episode. I still can't get over how much went wrong.
Thanks so much Ginny.
Brenda@SugarFreeMom
I believe insanity and craziness comes with having children and trying to blog, and keep everyone happy and day to day, ai yi yi I know exactly how it all goes down as well. Hope you were able to enjoy yourself at BlogHerFood. I was there too but I don't think we ran into each other, hope to meet you next time!
Kim Beaulieu
So true. Never enough to go around right. We stretch ourselves too thin.
I think we met at the closing party briefly. It was such a blur, so much going on and no sleep.
Paula - bell'alimento
Aw this reminds me of making dessert with my Grandma! Love it.
Kim Beaulieu
Thanks Paula. xx
Ashley @ Wishes & Dishes
I love this cobbler! It looks amazing!
Kim Beaulieu
Thanks Ashley. xx
Lauren @ Healthy Delicious
omg you've been on a roll with the bad days lately! 🙁 This cobbler is totally inspired though. I'll take a big bowl with a scoop of vanilla bean ice cream, please.
Kim Beaulieu
Right, it was like signs pointing not to go to blogher. Luckily I'm stubborn and went anyway.
Love this with ice cream on top.
The Mom Chef ~ Taking on Magazines One Recipe at a Time
Seriously? All in one day? Dude, I'd have crawled in bed and put the covers up over my head. Wow.
Kim Beaulieu
Yeppers, nuts right. I was ready to call the trip off by midday. But I'm a stubborn mule and pushed through.
Jessica (Savory Experiments)
This looks AH-mazing!
Kim Beaulieu
Thanks Jessica.
Nutmeg Nanny
This looks amazing! It's the perfect use for sweet summer strawberries. So sorry to hear about your bad day. It almost sounds like something from a TV show...eek! I'm glad to hear you could throw your car into park. The whole no breaks things always freaks me out. Just remember, you can always use your emergency break in a pinch too.
Kim Beaulieu
I felt like I was caught in a Seinfeld episode. Such a weird day. I don't get rattled very easily but the brakes definitely rattled me.
Thanks, I love cobbler season. Never met a berry I didn't want to throw in a cobbler.
Angie | Big Bear's Wife
You had one crazy adventure!! I glad you made it down ok though!! hugs! I love cobblers! I can't wait to make this!
