Almond Macaroon Cherry Pie

This lovely recipe was the bomb. I mean this little pie rocked my world. It’s easy to make, it’s delish, and it has cherry and coconut in it which in my book is like heaven. I had eyed this recipe awhile back. I stumbled upon it on a food site. So kudos and acknowledgement go to the Pillsbury site. This was the bake off winner in 1986 and the winner’s name is Rose LeMon. I just had to snag this and make it. I only made one change to it. I added coconut extract to it. If I make it again I’d be inclined to lose the almonds. Not sure my hubby would be on board with that though. He’s an almond lover. I just loved it but there’s alot going on with this recipe. Maybe 2 tastes on your buds would pop more. So try the original or try it without almonds or try it without coconut but try it. Trust me, you will not be disappointed.

Almond Macaroon Cherry Pie:

Ingredients for the crust:

1 box of pillsbury ready made pie crust

Ingredients for the filling:

1 can (21 oz) of cherry pie filling
1/4 to 1/2 teaspoon cinnamon
1/8 teaspoon salt, if desired
1 teaspoon lemon juice

Ingredients for the topping:

1 cup coconut
1/2 cup slice almonds
1/4 cup sugar
1/8 teaspoon salt, if desired
1/4 cup milk
1 tablespoon butter, melted
1/4 teaspoon almond extract
1/4 teaspoon coconut extract
1 egg, beaten


Preheat oven to 400 degrees.

Place pie crust (1) in a pie plate.

In a large bowl mix all the filling ingredients together. 

Spoon this into the pie shell.

Cook in oven for 20 minutes.

In a medium bowl mix all the topping ingredients.

Now spread this topping evenly over the pie.

Return pie to oven and continue cooking for 20 to 30 minutes, top should be golden brown when done.

Serve with a smile!

    Thanks Nami. I loved it. I may do a different take on it on the weekend. Love cherries, I could just eat a pound a day. It's the perfect fruit.
