Welcome to #IceCreamWeek! Myself and Jen of Juanita’s Cocina have teamed up with more than 20 of their blog friends to bring you a week full of ice cream treats, including a special ice cream giveaway! It got a little crazy and lazy up here in the B household this week. So due to some time sucking nonsense instead of making each layer from scratch I used some store items, then focused on the one thing I wanted to be homemade. The sauce. Let me just say it’s wildly decadent and worth every darn calorie.

Brownie Explosion Ice Cream Sundae

Total Time: 15 minutes

Brownie Explosion Ice Cream Sundae

Wildly decadent Brownie Explosion Sunday with bits of brownie in every layer! Your tastebuds are going to owe you one! This is chocolate brownie heaven!

Ingredients

  • Chocolate Fudge Brownie Ice Cream- store bought or you can make your own with my recipe!
  • Brownies- store bought or you can make your own with my recipe!
  • Sprinkles
  • Brownie Hot Fudge Sauce:
  • 2 ounces of unsweetened chocolate
  • 4 ounces of semi sweet chocolate
  • 3 tablespoons unsalted butter
  • 1/3 cup heavy cream
  • 1/3 cup corn syrup
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1 heaping tablespoon of dry brownie mix

Instructions

  • Melt your chocolate in a double boiler with the butter, this gives a nice texture to the chocolate. Very smooth. Stir until it's melted completely.
  • In the meantime heat the cream in a small saucepan over medium low heat. You don't want to over-cook it or boil it. You're just heating it up till it bubbles around the edge of the pot.
  • Add the corn syrup, sugar and vanilla, remove from heat, and whisk till smooth, and the sugar dissolves. Now add the brownie mix. Whisk again.
  • Remove the chocolate from the heat and add the creamy mixture to it. Whisk until smooth.
  • Pop in a mason jar and allow to cool just slightly.
  • Putting it all together:
  • Slice your brownie into individual portions.
  • Top with ice cream.
  • Pour brownie hot fudge sauce over top.
  • Toss on some sprinkles.
  • Serve with a big old brownie loving smile!

      This week has been a store bought extravaganza. When bloggers go bad. It could be a new tv show. Ha.

    Brownie sundaes are a family favorite. If we go out to eat… we always get a brownie sundae to share for dessert. It’s usually a battle of the spoons to see who can eat the most and someone always gets a little brain freeze.

      Us too. There’s a restaurant locally where they do bite sized ones. They are amazing. Brain freeze is weirdly exciting.

      Just leave it out. It’ll still be spectacular. It’s really good.

        I am on my second batch in 3 days. I had some leftover from Friday but needed more, so made a new batch today. I kept the leftover sauce in the refrigerator and have added some of it back in to the new warm sauce. If I have leftovers again – which I suspect I will – what is the best way to keep them? I assume they have to be refrigerated. What is the best method to reheat it?

          I store in an airtight container in the fridge for most things, this included. They should keep for about 3 to 5 days. I heat my brownies up in the microwave and also my fudge sauces too. Just keep an eye on the sauce. I swear sauces go from 0 to scorching hot with no indication. I usually stir it every 15 seconds after the first minute or it gets hot spots. Hope that helps. xx
