So have you ever wondered about the private lives of bloggers? Ever wonder what daily conversations are like for serious foodies who are completely obsessed with coming up with off the wall recipes?

No.

Well I’m going to share with you anyway. Deal.

So in the midst of ice cream week and all the chaos that ensues with events like this, I was swamped and asked hubs to go to the store for me. This is the basic idea of how conversations go with foodies and non-foodies.

Me: I need you to run to the store for me.

Hubs: Again?

Me: Yes again. *mutters something along the lines of ungrateful so and so*

Hubs: Okay, what do you need?

Me: I wrote it all down but we need to go over cuz it’s pretty specific.

Hubs: It always is.

Me: Well that was uncalled for.

Hubs: Kidding (I know he’s lying). So this list doesn’t make any sense.

Me: Um, yes it does. It makes perfect sense.

Hubs: You need butter to make homemade brownies, but it also says you need store bought brownies and brownie mix.

Me: Exactly!

Hubs: That doesn’t make any sense. Just use the brownie mix for everything you need to make brownies for.

Me: *Gasps in horror* Dude, seriously, that’s just not cool. I always make homemade brownies.

Hubs: Then why do you need store bought brownies and brownie mix?

Me: *epic sigh* The store bought ones are for breaking into ice cream and the mix is to make hot fudge sauce that tastes like brownies.

Hubs: Why is it okay to use store bought brownies in ice cream, and why do we need hot fudge sauce that tastes like brownies?

Me: It’s like you don’t even know me at all.

Yup, only foodies will get this conversation. The rest of you are wondering why I have so many weird food rules.

It’s like you don’t even know me at all.

Mint Chocolate Chip Brownie Ice Cream Cake

This is an amazing and easy recipe to make a layered ice cream cake that will make your taste buds and tummy happy! Layers of brownie and mint chocolate chip ice cream with Brownie Hot Fudge Sauce in the middle for an added bonus. Your going to love this!

Ingredients

  • Brownie Mix, prepared (I used homemade and you can find the link to the recipe below)
  • Brownie Hot Fudge Sauce (I used homemade and you can find the link to the recipe below)
  • For the Mint Chocolate Chip Ice Cream:
  • 1 cup whole milk
  • 1 cup sugar
  • Pinch of salt
  • 2 cups heavy cream
  • 1 teaspoon mint extract
  • 1 cup chocolate chips

Instructions

  • Cook your brownies according to your mix or according to your recipe.
  • Remove from oven and pop in the fridge to harden a bit.
  • Pour warm hot fudge sauce over the brownies (store bought or homemade) and pop back in the fridge.
  • For the Mint Chocolate Chip Ice Cream:
  • In a stand mixer combine whole milk, sugar and salt. Whisk on high till sugar dissolves.
  • Add cream and mint extract, whisk on high (start slow and build to avoid splatter) until the mixture is creamy and fluffy like whipped cream.
  • Cover and stick in the fridge for an hour.
  • Remove from fridge and transfer to your ice cream maker. Churn for about 15 minutes. Then add chocolate chips. Churn for a few more minutes.
  • If fairly firm you can pour right over the brownie/hot fudge mixture, then cover and pop in the freezer for about an hour.
  • If it's not hard enough enough, pop it in the freezer for an hour or so till it's hard enough to spread over the brownie/hot fudge mix without leaking all over the place and down the sides.
  • Freeze for at least an hour or overnight.
  • Take out about 10 or so minutes before serving so the brownie/hot fudge portion thaws enough to spoon through. Otherwise you'll break your teeth!
  • Serve with a big old minty smile!

It’s like you know me inside and out. I just turned to my wife and said, “I think someone loves me more than you.” ;)

      Kim Beaulieu says:

Ha, I’m fairly confident that she knows you inside out woman. You’re a match made in heaven. I can’t wait till I get to meet you gals in person one day. I hope you have the happiest day on the face of the planet. xx

  2. 3

    Okay, I lol’d.

That’s a pretty ice cream birthday cake. :)

*Winks* So you know what I’m dealing with here then.

It was so much fun to make, and eat this one. On Jen’s behalf of course.

  3. 5

Oh, we know you! And that’s a good thing! Fun conversation, great cake. Just good stuff! Thanks.

  4. 7

Well this looks crazy, insane good! Sometimes it’s so hard to explain what we need and why. My hub has finally just learned to trust and go with it, LOL!

      Kim Beaulieu says:

Thanks so much Cathy. I had a blast making this. Now to remember to take it out ahead of time so I don’t break my teeth.

Ha, I keep telling my brood not to question things. They just like to stir up trouble. Trouble makers I tell ya. Especially the big one.

I have given up on my husband going to the store. It is never right when he comes back. It is just going to be one of the things that is on my list only. If I were to come back to this lovely dessert though I would be a happy camper.

      Kim Beaulieu says:

I know right. Every time I send him I feel like I’m planning some summit meeting or something. I’m going to just start going to the store in my cooking jammies. lol

It’s so good. I like the mint with the brownie. It’s fab.

  6. 11

Oh this sounds sooooo good!! I’m all about the brownies and mint chocolate chip ice cream. This sounds amazing.

  7. 13

This is too amazing – I have to come and live with you. Your husband’s confusion would be shared by mine in the same circumstances. They don’t understand anything!

  8. 15

    Oooh happy birthday Jen!!! :)
This ice cream cake looks like perfection, loving the green colour of the mint!
Looks like I have a lot of ice cream catching up to do :)

    Cheers
    Choc Chip Uru

  9. 17

Bahahahaaaaaa I love your convo with your hubby. It sounds SO familiar :P

I also LOVE this! Mint, chocolate, ice cream, and brownies belong together like food blogging and friends :D

  10. 19

Beautiful color and I bet the taste is beyond! Thank you for sharing the conversation between you and Mr. Kim B…Very much appreciate the recipe, too!

    =)

  11. 21

What a fabulous treat to celebrate Jen’s bday!! I had to laugh at you and your hubby.. you sound like a modern day Lucy and Ricky.. Fred and Ethel… Burns and Allen. :)

  12. 23

This was such a fun week…culminating with Jen’s birthday! Your ice cream cake looks amazing…and I had to giggle at your conversation with the hubby. When I send Bill to the grocery, I get at least one phone call…even when I show him the packaging of exactly what I want at home. But I am grateful that he still goes!

    • 24
      Kim Beaulieu says:

Thanks Liz. I think you’ve seen our conversations in person. Ha.

I swear it’s easier to just go myself some days. But I have to be grateful he’s willing to run up there a zillion times a day.

  13. 25

I’m not a fan of mint ice ceam but I would love to make this with another kind of ice cream, so fun! Thanks so much for asking me to be a part of this week, it was a lot of fun.

    • 26
      Kim Beaulieu says:

I made it with the cookie dough ice cream for mini-me. She’s not a mint fan so I did more than one version of this cake. Thanks so much for joining us. It was such a pleasure to have you.

  14. 27

Ok, wow, I had no idea. I am so impressed w you, Kimmy!
    And a li’l jealous of Jen. ;)

  15. 29

Don’t you just hate explaining yourself? Great recipe. My daughter is in love with anything mint.

  16. 31

O-M-G! Not only do I love mint chocolate chip and brownies, you make brownie hot fudge sauce. Get. out (and leave the cake behind).

    • 32
      Kim Beaulieu says:

Ha, thanks Carla. I got a little nuts during ice cream week. I’m just coming down from the sugar high now.

  17. 33

Oh my gosh, I am so guilty of giving my husband super long, painstakingly detailed grocery lists. He’s very well-trained and doesn’t ask so many questions these days, but it was a long breaking-in process! :) At least your husband gets to eat the ice cream as a reward, right?

Thanks again for organizing this week! I know it was crazy work for you and Jen, but it was so much fun and please know that I’m so appreciative. It’s been a blast getting to know fellow bloggers better and seeing everyone’s amazing creations!

    Kim Beaulieu says:

Ha, my hubs has been going to the store for over 20 years now. I think maybe he’s rebelling. Lol!

Thanks so much for joining us for it. It was such a pleasure to have you.
