This recipe for Easy Chili Cornbread Casserole is absolutely amazing and super quick to make. Use your favourite Chili recipe, toss your favourite cheese on top, then top it with Martha White’s Buttermilk Cornbread and Muffin Mix.

Okay, I need to just put this out there right now. I’m going to let all you busy moms and dads in on a little secret. In fact this goes out to everyone out there. It’s okay to prioritize it life and make semi-homemade dinners. I know right. I’m a food blogger. I’m suppose to tell you that you should make every single thing from scratch every single day.
Here’s the thing. I do not believe that. Not one little bit. I never have, and I never will. We’re all busy in life, and it’s okay to prioritize. My thought is if you only have so many hours in the day you need to make choices. For me I would rather make a quick dinner that tastes amazing than spend all the live long day glued to my stove.
Don’t get me wrong. I love days when I can spend all day smoking a chicken, or simmering my own pizza sauce in the crock pot. But I also love days where I can whip up a recipe like this is 30 minutes. That means I can spend more time with my kids doing things we love. That’s the stuff that makes my heart happy.
This recipe uses Martha White Cornbread and Muffin Mix. Oh my goodness, this stuff is AMAZING! I ended up making this Chili Cornbread Casserole, and I also whipped up a Pulled Pork Cornbread Casserole as well. If I had bought more cornbread mixes I would have made cornbread recipes after cornbread recipe.
This meal is filling and utterly scrumptious. You’re going to want to double batch this one. You’re going to want to triple batch this one. Heck, I say quadruple this one and call it a day. You’ll have leftovers for the week and you can eat Chili Cornbread Casserole every single day.
You can use homemade chili. Let’s face it, we all have our favourite chili recipes. Some of us like beans in ours, other do not. It’s all good. No matter what kind of chili you favour it’s all good with me. You can even open a can of chili if you like. I’m not above opening a can of my favourite chili.
I didn’t include the chili recipe with this one. Mostly because I figured if you’re taking the quick route for the topping then you’re likely taking the quick route for the chili. I’m guessing most people will either open up a can of their favourite chili, or they will pull their favourite chili out of the freezer.
For this recipe I pulled my favourite chili recipe out of the freezer. That’s the way we roll up here in the Beaulieu compound. If I’m picking the quick route I’m going all in. I routinely make big batches of things like chili, spaghetti sauce and pizza sauce so I can freeze them for busy days. It’s a time saver.
We purchased a bundle of Martha White® Baking Mixes at Kroger. We headed over to the states for a big shopping trip and stocked up on these baking mixes. I bought the cornbread, chocolate chip, banana nut, blueberry, and strawberry mixes. We grabbed multiple packages of each.
I’m telling you when we head out to shop Kroger is always on my list. It’s a great store and unlike anything we have locally in our small town. The selection is amazing and I get wide eyed going down all the aisles. I can stock up for weeks at a time at one store which for me is a huge deal. It saves me so much time!
You can find your local Kroger store on their website by visiting their store locater. It’s super easy to use and will point you in the right direction. I love when websites have those handy store locaters. It makes life easy and you don’t spend all your time driving around in circles. Another time saver! Score!
Whip up a batch of this Chili Cornbread Casserole today. Thank me tomorrow!

- 4½ cups prepared Chili
- 1½ cups mozzarella cheese
- 1 package of Martha White Cornbread and Muffin Mix
- ½ cup milk
- Preheat oven to 425 degrees F.
- Spray a casserole pan with non-stick spray. Set aside.
- Pour the chili into the casserole dish. Spread out evenly.
- Toss the mozzarella cheese on top of the chili.
- In a medium size bowl combine the Martha White Cornbread and Muffin Mix with ½ cup milk. Stir well. Pour over top of the casserole. You don't have to be overly careful. It will seem like it's not enough liquid but trust me, it fluffs right up so have faith. Spread the mixture out a bit.
- Place the casserole dish in the preheated oven and cook for 15 to 20 minutes, or until the top turns golden brown.
- Remove from oven and slice.
- Serve with a big old comfort food loving smile!
