These Monster Bites are brownie cake pops made into fun little monsters for Halloween. Whip up a batch for spooky season!

Seriously, apologies are in order.
You're wondering why apologies are needed, aren't you?
Apologies for what you've already seen!
I can explain. Really, I can.
Here's my explanation..
I suck at making cake pops.
So, there you have it. Honesty at its finest!
This is my first go at them. I was so excited to try making them.
Of course, I made them by hand. No fancy machine here. That's a story for another day.
I mixed them up and coated them with the first coat of candy melts. Then, put on the second coat. After that I realized that it was appropriate that these are called monster bites because this is, for sure, a horror show.
A cautionary tale for anyone wanting to make cake pops. I, my friends, am a cake pop catastrophe story.
It's okay. No tears. Honestly, I'll be okay.
Luckily I'm good at making Turtle Caramel Chocolate Apples and Monster Fudge!
That knowledge helps cushion the blow to my ego. There is nothing like candy to soothe a fragile ego.

Tips for Making Monster Bites Cake Pops:
- Take your time. Cake pops cannot be rushed. You need to give yourself time to form them, then give them time to set up before decorating them.
- Do not make huge cake balls. Seriously, who wants to bite into a cake pop the size of their head. Keep them bite sized!
- Melt your candy properly. Personally, I like melting them in the microwave but they melt incredibly quick so be sure to check them often, every 30 seconds to start, then every 15 seconds or so after that.
- You can add a little coconut oil or shortening if your candy melts are too thick. I find working in smaller batches helps. Working quickly also helps.
- Plan ahead by having a container or tray ready so you can stash the cake pops in the fridge or freezer at various stages of making them. That way you can work in batches if you want to.
- Go easy on the frosting or candy melts you use to adhere the sticks to the cake pops.
- When dunking the cake pops in the candy melts be sure the bowl or cup is deep enough to coat them evenly. You can swirl them around to make sure they coat evenly on all side as well. Tap them after to get off any excess candy melts.
- Be sure to let them set up in the fridge or freezer so the melts are dry before decorating them.
- You can use tweezers to help place the googly eyes if your hands aren't steady.
- Let someone else make the dang things. Or blame the messy ones on the kids.

- ½ can store bought icing
- White candy melts
- Edible eyeballs
- Confetti candies
- Black gel icing

Instructions
- Take your brownies and crumble them into bits.
- Take about ½ the amount of icing and start mashing it into the brownies with a spoon. Add more icing till you get the desired consistency to form a ball.
- Form a ball with your hands. Just roll until you like the shape.
- Stick a cake pop stick into it. It sometimes helps if you add a little candy melt on the edge of the stick you. Repeat with as many cake pops as you want to make.
- Pop cake pops in the freezer for about 10 to 20 minutes to set.
- Take the cake pops out of the freezer.
- Melt about ¼ of your candy melts in a microwave safe bowl. Check every 30 seconds so you don't over do it. Stir until smooth.
- Dunk each cake pop about ⅓ of the way into it.
- Pop back in fridge or freezer to set. This should not take long.
- Remove the cake pop again.
- Melt the rest of your candy melts in the microwave for about 1 minute or so, check every 30 seconds because they melt quick. Stir until smooth.
- Dunk the rest of the cake pop into it and swirl.
- Tap the excess gently.

- Take out and decorate. Make them as ugly or cute as you wish.

These are hilarious - so ugly they are beautiful. You have a great imagination and perfectly round ones wouldn't have worked so well. Geat job!
Kim Bee
Thank you so much Suzanne. I do think the jagged edges work for the monsters. Had these of been princesses this would have gone badly!
Ramona
These a fantastic! You have a steady hand my friend... I would never have been able to get those monster faces done right!! Well done. 🙂
Kim Bee
Thanks Ramona. It was so much fun to do. I think I'll invest in a cake pop maker for next time. They sure are fun to make.
Katherine Martinelli
I love these! And don't know what you're talking about - they look amazing! Hope you'll link them up at my Halloween blog hop I've got going on right now 🙂
Kim Bee
Hey gorgeous. Thanks so much. I am very critical of myself when it comes to baking. I've decided to take a class, starts this week. It's the Wilton decorating series. Hopefully it helps, lol. I am just running out to see a flick but I will hop over tonight and link up.
Hope you are well my dear. We need to catch up. xx
Choc Chip Uru
The only scary thing I see in these cake pops are their freaky design 😀
You are much too hard on yourself!
Cheers
Choc Chip Uru
Kim Bee
Thanks Uru. I wanted perfection but I'll settle for these. It definitely works for monsters. xx
anne

Kim Bee

Renee
These are so not ugly - they are adorable!!! I love that they are fun and not perfect. They would be the hit of any Halloween party.
Kim Bee
Awe thanks Renee. You are always so sweet. I had fun with them even though they are a tad frustrating to make. They taste amazing. I mean brownies and icing covered in candy, how can you go wrong right.
Kayle (The Cooking Actress)
Awww I like your lil monster cake pops! It totally all works since they're monsters 😛
But making them sounds terrifying. I don't need to make cake pops, nahhh
Kim Bee
Lol, thanks Kayle. I recommend buying the machine. I think I'm going to. But there is something seriously fun about making them with your hands and getting all dirty. I can't believe it took me this long to make cake pops. They aren't popular where I live. Never see them anywhere.
Jen @ Juanita's Cocina
Dear Sister from another Mister,
I made cookie dough pops without faces and I cannot live up to your prowess.
Love, Jen
P.S.~ These. are. AWESOME.
Kim Bee
Hey Sistah:
I saw the sneaky peek of yours and they were way nicer than mine. They're all perfect like. And you even took the time to style. I need to up my game to keep up with your cake pop skillz.
Love, Moi
ps you are awesomer!
Tara Noland
I think these are adorable, because they are not perfect makes them even better. Pass one over please I would love to have a bite!!

Chung-Ah | Damn Delicious
Awwww, this is too cute! And thanks for all the tips - they'll come in handy when I try to make these!
Kim Bee
Thanks so much. I think investing in a cake pop maker would be good. I think they're like $20 and my hunch is they work way better.
Wendy (The Weekend Gourmet)
These are monsters...not super models...so I think you did a great job decorating! Plus, I'm betting that they tasted fabulous!
Kim Bee
Omg Wendy your comment had me in stitches. I can't stop laughing. Thank you. xx
kitchenriffs
I dunno - I think they look kinda cute! And very Halloween appropriate! These look like fun, and really I do rather like the way they look. I've never made these, and trust me, you don't want to see what I'd come up with. I don't have the decorating gene. Fun post - thanks.
Kim Bee
You are too funny. I do not have the decorating gene. I want to have the decorating gene. But it just doesn't exist in this dojo. I am taking the plunge this week and taking some classes through Wilton. I am going to a conference where we get to meet and decorate with Duff so I need to up my game so I don't look like a total spaz. It's bad enough I act like a total spaz!
Thank you!
sunithi
