These Monster Bites are brownie cake pops made into fun little monsters for Halloween. Whip up a batch for spooky season!

You're wondering why apologies are needed, aren't you?
Apologies for what you've already seen!
I can explain. Really, I can.
Here's my explanation..
I suck at making cake pops.
So, there you have it. Honesty at its finest!
This is my first go at them. I was so excited to try making them.
Of course, I made them by hand. No fancy machine here. That's a story for another day.
I mixed them up and coated them with the first coat of candy melts. Then, put on the second coat. After that I realized that it was appropriate that these are called monster bites because this is, for sure, a horror show.
A cautionary tale for anyone wanting to make cake pops. I, my friends, am a cake pop catastrophe story.
It's okay. No tears. Honestly, I'll be okay.
Luckily I'm good at making Turtle Caramel Chocolate Apples and Monster Fudge!
That knowledge helps cushion the blow to my ego. There is nothing like candy to soothe a fragile ego.

Tips for Making Monster Bites Cake Pops:
- Take your time. Cake pops cannot be rushed. You need to give yourself time to form them, then give them time to set up before decorating them.
- Do not make huge cake balls. Seriously, who wants to bite into a cake pop the size of their head. Keep them bite sized!
- Melt your candy properly. Personally, I like melting them in the microwave but they melt incredibly quick so be sure to check them often, every 30 seconds to start, then every 15 seconds or so after that.
- You can add a little coconut oil or shortening if your candy melts are too thick. I find working in smaller batches helps. Working quickly also helps.
- Plan ahead by having a container or tray ready so you can stash the cake pops in the fridge or freezer at various stages of making them. That way you can work in batches if you want to.
- Go easy on the frosting or candy melts you use to adhere the sticks to the cake pops.
- When dunking the cake pops in the candy melts be sure the bowl or cup is deep enough to coat them evenly. You can swirl them around to make sure they coat evenly on all side as well. Tap them after to get off any excess candy melts.
- Be sure to let them set up in the fridge or freezer so the melts are dry before decorating them.
- You can use tweezers to help place the googly eyes if your hands aren't steady.
- Let someone else make the dang things. Or blame the messy ones on the kids.

Monster Bites Cake Pops
Ingredients
- ½ batch prepared brownies cooked and crumbled
- ½ can store bought icing
- White candy melts
- Edible eyeballs
- Confetti candies
- Black gel icing
- Red gel icing
Instructions
- Take your brownies and crumble them into bits.
- Take about ½ the amount of icing and start mashing it into the brownies with a spoon. Add more icing till you get the desired consistency to form a ball.
- Form a ball with your hands. Just roll until you like the shape.
- Stick a cake pop stick into it. It sometimes helps if you add a little candy melt on the edge of the stick you. Repeat with as many cake pops as you want to make.
- Pop cake pops in the freezer for about 10 to 20 minutes to set.
- Take the cake pops out of the freezer.
- Melt about ¼ of your candy melts in a microwave safe bowl. Check every 30 seconds so you don't over do it. Stir until smooth.
- Dunk each cake pop about ⅓ of the way into it.
- Pop back in fridge or freezer to set. This should not take long.
- Remove the cake pop again.
- Melt the rest of your candy melts in the microwave for about 1 minute or so, check every 30 seconds because they melt quick. Stir until smooth.
- Dunk the rest of the cake pop into it and swirl.
- Tap the excess gently.
- Pop in the fridge or freezer to set.
- Take out and decorate. Make them as ugly or cute as you wish.
- Serve or store for later!

Ok - first: I actually think these are ADORABLE!
Second: you are NOT alone with cake pop malfunctions. I tried to make cake balls once before, and they absolutely did not turn out well. I followed the instructions perfectly, but did they turn out symmetrical? Nope. Did the chocolate go on smoothly? Nope. My balls were more like shapeless blobs. But they tasted AWESOME, so thankfully no one really cared in the end...but goodness, I don't think I'll ever attempt them again!!!

I think you did an amazing job on these cake pops; they're super cute! I made them one time for a baby shower, and I'll never make them again. They were extremely time consuming. If you do decide to make them again, heat the chocolate over a double boiler and add a bit of shortening (a trick I learned from my grandmother). It helps thin out the chocolate for easy coating.
